LINGUINE WITH LOBSTER AND VODKA CREAM SAUCE



Linguine with Lobster and Vodka Cream Sauce image

2 cups all-purpose flour
2 eggs plus 4 egg yolks
1/3 cup loosely packed tarragon leaves, finely chopped
Kosher salt
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil
1 shallot, minced
Kosher salt
4 cloves garlic, minced
1/2 teaspoon crushed red pepper
1/2 cup vodka
Two 14-ounce cans no-salt-added diced tomatoes
1/4 cup loosely packed tarragon leaves, chopped, plus small leaves for garnish
3 fresh basil leaves, chopped
1 lemon, zested
1/2 cup heavy cream
1 tablespoon extra-virgin olive oil
Two 6-ounce lobster tails, chopped into 1-inch pieces
Kosher salt
1/2 lemon

Steps:

  • For the pasta dough: Create a mound of flour on a clean, flat work surface. Using your fingers, make a well in the center of the mound. Pour the eggs and egg yolks into the well; add the tarragon and 1 tablespoon water. Using a fork, whisk the eggs while incorporating the flour from the inside of the mound, working outward until the flour and eggs are combined. With the palms of your hands, knead the dough. If the dough seems dry and shaggy, dampen your hands with water and knead until the dough is moist but not wet. If it feels wet, add flour, 1 teaspoon at a time. Knead the dough until smooth and elastic, about 10 minutes. Wrap the dough in plastic wrap and allow to rest at room temperature for 30 minutes.
  • For the vodka cream sauce: Meanwhile, heat the butter and oil in a medium saucepan over medium heat until the butter is melted. Add the shallot, sprinkle with salt, and cook until softened, 5 to 7 minutes. Add the garlic and crushed red pepper and cook until fragrant but not burned, 1 to 2 minutes. Remove the pan from the heat before carefully adding the vodka and tomatoes. Then put the pan back over medium-high heat and simmer until the alcohol has evaporated, 5 to 7 minutes. Stir in the tarragon, basil and lemon zest. Then lower the heat to medium-low and add the heavy cream; cook for 3 to 5 minutes, until the sauce thickens. Cover and keep warm over low heat.
  • To make the linguine, remove the dough from the plastic wrap. Cut the dough into equal quarters and roll each into a small, thick log. Use your hands or a rolling pin to flatten the logs of dough. Feed one piece of dough through a pasta roller set to the widest setting. Fold the dough into thirds and continue to rolling, adjusting the setting to achieve desired thickness. Cover with a thin towel and repeat with the remaining dough logs. Cut the sheets into the preferred noodle length.
  • Switch the pasta roller to a linguine cutter. Feed each sheet through the cutter. Flour the noodles and then separate them, or hang them to dry to prevent sticking. Repeat with all of the pasta sheets.
  • Bring a large pot of salted water to a boil over medium-high heat. Add the fresh pasta and cook until al dente, about 3 minutes. Remove the pasta and transfer to the pan with the sauce. Turn off the heat and gently stir just to coat the noodles.
  • For the lobster: Heat the oil in a heavy medium skillet over medium-high heat. Add the lobster pieces, sprinkle with salt and cook until the lobster is cooked through, 3 to 5 minutes. Squeeze the lemon over the lobster.
  • Transfer the pasta to serving bowls, cover with a spoonful of sauce and top with the cooked lobster. Garnish with tarragon leaves and serve.

The quintessential three ingredients which make a killer tasty Vodka Sauce are 1) Vodka, 2) A good quality Tomato Sauce, 3) Cream. You can pull a delicious family pasta dinner of Penne All Vodka if you have penne pasta and above three. Vodka Tomato Sauce:To make Tomato Sauce, I start by sauteing onion and garlic until onions are just soft. I use mixture of olive oil and butter for more flavor and rich creamy sauce. 28 Oz Tomatoes, Good quality San Marzano Tomatoes, pureed, no salt added
1/2 Cup Heavy Cream, use more as per taste
1/2 Cup Vodka
2 tbsp Olive Oil, and 1 tbsp butter
1 tbsp Italian Seasoning, or mix equal part of oregano, basil, and thyme
1/2 tbsp Garlic, 2-3 cloves, small diced
1/2 Cup Yellow Onion, small diced
1/4 tsp Chili Flakes
1 tsp Salt and Black Pepper, 1 tsp salt, 1/4 tsp black pepper, adjust per taste
1 lbs Pasta, Bow Tie Or Penne Pasta
1/2 Cup Parmesan Cheese, grated
few tbsp Basil, fresh basil leaves, chopped

Steps:

  • Cook Pasta: To boil pasta, bring pot of water to full boil and add generous amount of salt (approx. 1 tbsp). Boil pasta in this water until al-dente or cook pasta as per package directions (regular penne pasta takes about 11-12 minutes).
  • In a wide, deep, heavy bottom pan, heat 2 tbsp oil and 1 tbsp of butter. When butter melts, add diced onion, and garlic. Sweat onions in oil until they are just soft. (2 minutes. Don't let garlic/onion burn.) Add herbs, and chili flakes and continue cooking for 1 minute. Now add vodka and cook for 3 minutes so that alcohol evaporates leaving behind the flavor only. Add pureed tomatoes, with 1/2 tsp of salt. Cook covered for 7-8 minutes or until oil shows on top.
  • To make Vodka Cream Sauce, add 1/2 cup heavy cream, and crushed black pepper. Mix well, taste and adjust salt. If sauce feels tart/need more creaminess, add few more tbsp heavy cream, cook with cream for 1-2 minute and then remove from heat.
  • Add in cooked/drained pasta, all but 2 tbsp of Parmesan cheese (leave 2 tbsp for garnish) and couple of tbsps of pasta water to sauce. Toss everything very gently. Garnish with fresh basil leaves and some remaining grated Parmesan Cheese. Serve immediately and enjoy easy Italian at home!!

2 stalks celery, chopped
3 cloves garlic, minced
¼ cup olive oil
¼ pound thinly sliced prosciutto
¾ cup vodka
1 (28 ounce) can crushed tomatoes
¼ teaspoon dried oregano
2 tablespoons chopped fresh parsley
1 tablespoon dried basil
¼ teaspoon cayenne pepper
1 cup half-and-half cream
1 pound penne pasta

Steps:

  • In a large skillet, heat oil over medium heat. Cook onion, celery, and garlic in oil; stir until soft. Add prosciutto and vodka. Simmer until almost all liquid is gone.
  • Add tomatoes, cayenne, and herbs. Simmer for 10 minutes.
  • Stir in half and half, and heat for 3 minutes.
  • Meanwhile, cook pasta in boiling salted water until done. Drain. Serve sauce over noodles.

One of the best and easiest recipes I have tried. You can find pancetta at any good Italian deli, try not to substitute as it makes the dish. This is also very good with shrimp added in the last few minutes of simmering. If you like spice, add a dash or 2 of red pepper flakes.

1 (16 ounce) package penne pasta
2 tablespoons butter
¼ pound thinly sliced pancetta bacon, chopped
⅓ cup vodka
½ cup heavy whipping cream
1 ½ cups tomato sauce
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Meanwhile, melt butter or margarine in a large skillet over medium heat. Add pancetta, and saute until lightly browned. Add vodka and stir until it is reduced by half, about 4 to 5 minutes. Stir in tomato sauce and cream. Simmer uncovered for 10 to 12 minutes. Stir every few minutes.
  • Stir in pasta, and heat through. Serve with Parmesan cheese.

Please note: this is an adopted recipe: Well I never thought of putting strong liqour into pasta, I have tried this recipe myself now with both Vodka and Gin (seperately of course) and experimented with following the recipe exactly or adding the liquor a minute or two before the cream and cooking it a little. Results: the taste is mellow and softer if you cook it a little so it depends entirely on how much flavour you prefer, all versions were very well received here. 16 ounces linguine, dry or fresh
4 tablespoons extra virgin olive oil
3 cloves garlic, finely chopped
1/2 teaspoon crushed hot red pepper flakes
1/2 cup vodka
19 fluid ounces plum tomatoes, drained,crush tomatoes
1/4 cup grated parmesan cheese
1/4 cup heavy whipping cream
1/4 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Cook dry linguine in a large cooking pot according to package instructions.
  • If using fresh linguine, bring water to a rolling boil, add linguine and boil for about 6 to 8 minutes or until el'dente.
  • In a large frying pan, heat olive oil over medium-high heat.
  • Add garlic and hot red pepper flakes and saute' for 1 minute.
  • Add Vodka and cook until mixture is reduced 25%.
  • Add crushed tomatoes and bring to boil.
  • Reduce heat and simmer for 15 minutes.
  • Add parmesan cheese, heavy cream, salt and pepper, stir to mix well and cook for 1 minute.
  • Drain cooked linguine and add to a large mixing bowl.
  • Pour sauce over, toss to coat well.
  • Serve immediately.

  • Bring a pot of salted water to a boil. Once boiling, cook the pasta according to the directions. Be sure to reserve 1 ½ to 2 cups of pasta water for the sauce!
  • While the water is boiling, heat the butter in a saucepan over medium heat. Once melted, stir in the shallots and garlic with a big pinch of salt and pepper. Cook, stirring often, until the onions soften. Add in the tomato paste and stir, cooking for 5 minutes. The color will darken - this is where the flavor is!
  • Stream in the vodka and stir, scraping the brown bits and flavor from the bottom. Stir in ½ cup of the reserved pasta water. Stir in the heavy cream and parmesan, stirring until the cheese melts. Taste and season the sauce with more salt and pepper if needed.
  • Add the pasta to the sauce and toss well. If needed, you can stream in more of the pasta water until it’s creamy and silky. Top with the rosemary bread crumbs and a sprinkle of parmesan. Serve immediately.
