LINGONBERRY SAUCE RECIPE

Tart lingonberries are simmered with brown sugar, apple cider, allspice, thyme and cinnamon for a sweet fruit relish with savory notes.

2 cups frozen lingonberries
½ cup light brown sugar
½ cup apple cider
5 allspice berries
1 cinnamon stick
1 thyme sprig
Kosher salt, to taste

Steps:

  • In a large skillet, combine all the ingredients over medium-low heat. Bring to a simmer, stirring occasionally, about 25 minutes.
  • Once simmering, cook, stirring occasionally, until slightly thickened, for 10 minutes. Let cool completely, remove the allspice, cinnamon and thyme, then serve.

A sweet but still tart jam with Swedish lingonberries. This goes really well with classic Swedish meatballs or fried herring (Swedish style).

2 ¼ pounds fresh lingonberries
⅞ cup water
1 cup white sugar

Steps:

  • Place lingonberries in a large pot with the water and bring to a boil. Boil for 5 to 10 minutes, and skim off any foam from the surface. Stir in sugar, bring to a rapid boil, and continue boiling for a few more minutes.
  • Ladle jam into sterile jars, leaving 1/4 inch of headspace. Cover with lids, and screw on rings. Process in a hot water bath for 10 minutes to seal. Refrigerate jam once the jar has been opened.

2 tablespoons Dijon mustard
2 tablespoons unsalted butter, melted, divided
2 6-ounce salmon fillets
2 tablespoons chopped shallots
2 tablespoons lingonberry preserves
2 tablespoons raspberry vinegar

Steps:

  • Preheat oven to 450°F. Stir 2 tablespoons mustard and 1 tablespoon melted butter in small dish. Oil small rimmed baking sheet and place salmon on sheet, skin side down. Sprinkle salmon with salt. Spread top of salmon with mustard mixture and season generously with pepper. Bake until salmon is cooked through and mustard browns, about 10 minutes.
  • Meanwhile, heat remaining 1 tablespoon butter in heavy small skillet over medium heat. Add shallots and sauté 2 minutes. Add preserves and vinegar; stir until preserves melt and mixture is smooth. Bring to simmer. Season sauce to taste with salt and pepper.
  • Spoon sauce over fish and serve.

  • Drain berries, wash and pick out any leaves.
  • Place berries in saucepan; add water and heat to boiling.
  • Add sugar; stir to dissolve. Simmer 10 minutes.
  • Remove from heat.
  • Place saucepan in cold water; stir sauce for 1-2 minutes.
  • Serve warm if using for pancakes, chill if serving with meat.
