SPINACH BALLS
I got this recipe from my mother-in-law, who says these were my veggie-hating husband's favorite childhood snack. They are a great way to get kids to eat spinach!! Prep time includes chill time. This can be a little salty depending on the butter, cheese and bread crumbs you use, if you are concerned about saltiness use unsalted butter and garlic powder in place of the garlic salt. I have also made these with only 1/2 cup of melted butter (1 stick) and they are just as good but you need to spray the cookie sheet because they will stick.

- In a large bowl, combine all ingredients until well mixed.
- Roll into 2 inch, walnut-sized balls.
- Chill in the refrigerator for 2 hours.
- Place on an ungreased cookie sheet and bake at 350ºF for 20 minutes.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl combine spinach, stuffing mix, Parmesan cheese, garlic powder, black pepper, Italian seasoning, melted butter and eggs. Shape into walnut-sized balls and place on a baking sheet.
- Bake in preheated oven for 20 minutes, or until heated through and browned.

- Cook spinach according to package directions; drain well, squeezing out excess liquid. Combine spinach with remaining ingredients in a large bowl. These are wonderful appetizers. My guests rave about them and they disappear fast! You can use prepared breadcrumbs but they don't taste as good as with the homemade ones.

- Place toast in a blender or food processor and blend until finely crumbed.
- Combine all ingredients in a large bowl and chill for at least three hours or overnight.

STOVE TOP SPINACH BALLS
I made these for my family's Christmas party. My family really liked these. We thought they tasted so good. I think they are best when served warm from the oven. When I made this recipe I tried to half the recipe which didn't work out so well. I cut the recipe in half but ended up adding the entire packet of stuffing. I also used canned mushrooms instead of fresh. I got this recipe from Kraft.

- Preheat oven to 400. Mix stuffing mix, hot water and butter in large bowl until well blended.
- Add remaining ingredients; mix lightly. Shape into 60 balls, each about 1-inch in diameter. Place in single layer in 15x10x1-inch baking pan sprayed with cooking spray.
- Bake 15 to 20 minutes or until lightly browned.
