GRANDMA'S STUFFED CELERY
My grandma always made stuffed celery at Thanksgiving and Christmas. As kids, we were always so hungry before the holiday meal we would sneak and get a piece of celery to curb our appetite. It was nearly all gone by meal time and we always got fussed at with hint of a grin from Grandma. Now I never have holiday meals without it!

Steps:
- Thoroughly dry each piece of celery with paper towels. Mix the cream cheese, olives, garlic, salt, and black pepper in a bowl. Using a knife, spread a generous amount of cream cheese filling down the center indentation of each celery piece. Serve immediately or refrigerate.

STUFFED CELERY
We have this every year at Thanksgiving and Christmas. I've never seen it made like this anywhere else. The amounts in the recipe are estimates. I usually just add a little until it is the right consistency and taste. It should be about the consistency of cake icing.

Steps:
- Put cream cheese and mayonnaise in a small bowl.
- Mix until well blended, I use a fork.
- Stir in onions and pecans.
- Fill celery with mixture.
- Note: I cut the corner out of a ziplock bag and use a coupler with a #32 cake decorating tip.
- This makes filling the celery easier and it looks pretty.
- The tip is also large enough that the chopped pecans will fit through.

LINDA'S VEGGIE AND CREAM CHEESE STUFFED CELERY
I created this recipe a few Thanksgivings ago, and it is just plain DELISH! Try it on your family for another appetizer to munch on before, during and after Thanksgiving or Christmas dinner!

Steps:
- Wash, and cut the celery. Dry celery stalks with a paper towel (IMPORTANT).
- Cut into 3" pieces, and set aside.
- Put cream cheeses into a glass bowl. Put in microwave for 45 secs., until soft.
- Add milk and cream together. Start with 1 T. and add more, if needed to make a creamy texture.
- Add Vegetable Soup dip mix, and mix well.
- Stuff celery with cream cheese mixture.
- Put in a plastic container or on a serving plate, wrap, and put in refrigerator for at least 1 hours.
- Serve.

OLIVE-STUFFED CELERY

- Finely chop the pickles and olives; set aside. In a small bowl, beat the cream cheese, Miracle Whip, juices and salt until blended. Stir in the pickles, olives and pecans., Pipe or stuff filling into celery sticks. Store in the refrigerator.

- Trim ends of celery and cut each stalk on the diagnal into 2 or 2 inch pieces.
- Combine cream cheese, olives and mayo in mixing bowl.
- Season with salt (go easy olives are salty) and pepper.

- Sprinkle with paprika.

- Add milk, and mix well.
- Add walnuts, and mix well.
- Cut stalks of celery into thirds, and wash and dry well, (very important).
- Stuff celery with cream cheese mixture, and refrigerate.
