CHEESY FRIED POTATOES
My family loves these fried potatoes and there are never any leftovers! I have also served this as a main dish for dinner as well.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from pan, drain and crumble; leave grease in pan.
- Heat bacon grease over medium heat and stir in butter. Add onion and potatoes. Cover pan and cook, stirring occasionally, until potatoes are golden brown.
- Crack eggs on top of potatoes and stir gently to combine. Sprinkle with salt, pepper, cheese and bacon. Continue cooking until eggs are firm and cheese is melted.

V'S FRIED MASHED POTATOES

Steps:
- Place potatoes into a large pot and cover with salted water. Season water with garlic powder and bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer potatoes to a large skillet over medium-high heat.
- Mash potatoes in the hot skillet and add butter and garlic powder. Form mashed potatoes into a large patty and coat the edges with olive oil, allowing oil to pour under the patty. Cook until bottom is golden brown, 5 to 10 minutes. Break patty using a wooden spoon and fold crisp bottom through the potatoes. Repeat cooking the bottom and folding into the mashed potatoes.

LINDA'S FRIED CHEESE POTATOES
This is a delicious dish to have along with eggs, and toast for breakfast, or with your favorite meat, as a side dish. I also sometimes add chopped jalapeno peppers to this to give it a little twist.

Steps:
- Peel, and cube potatoes.
- Cook in oil, in covered skillet, turning about every 5 minutes.
- Add onions, garlic, salt and pepper to taste, and continue to cook over low heat, until potatoes are almost cooked, turning often.
- Remove cover, and continue cooking, until well browned, and slightly crisped.
- Add Velveeta cheese slices, put cover back on, and let simmer for about 5 minutes, or until cheese is melted.
- Mix in cheese, and serve.

LINDA'S CHEESY HOMEFRIES
My son wanted homefries the other night with pork chops, but he asked that I try topping them with cheese for something different. He LOVES cheese!! I decided to give it a try and I must say they were delicious!

Steps:
- 1. Prep: wash your potatoes, scrubbing off any dirt. slice in half length wise and slice thick. ( I leave the skins on) dice bacon, onions and red bell pepper
- 2. warm skillet on medium heat, add diced bacon to cook a bit to get some grease in the bottom of the pan. Once you have bacon grease and its sizzling add your diced onion and bell pepper. Reduce heat to medium low and allow to cook stirring occasionally for about 5 minutes. Remove as much bacon grease as you can and put back on the burner.
- 3. Add your butter, sliced potatoes, salt, pepper, garlic granuals, bouquet garni and paprika (i used smoked paprika, but you can choose which to use) and toss well. Cover and allow to cook on medium low for about 30-35 minutes. Turn occasionally to promote browning but dont allow to burn.
- 4. Once potatoes are soft and browned to your liking, uncover, lower the temperature to simmer and liberally spread the Mexican cheese blend on top of the potatoes and allow to melt. Enjoy!!
CHEESY OVEN FRIED POTATOES
Cooking these potatoes at this temp gave them a slight crunch. The seasoning in the oil and the Parmesan sprinkled on top made for a really tasty potato. Adding the cheese sauce only made these fries better! This would make a great side with most any entree.

- 1. Preheat oven to 375 degrees F. Cut potatoes lengthwise into wedges. Place into 2 dishes 13x9".
- 2. Combine oil, salt, garlic, paprika, and pepper. Brush/apply oil mixture to potatoes stirring frequently to prevent settling. Sprinkle with Parmesan cheese.
- 3. Bake 30 minutes, then turn potatoes. Bake another 30 minutes.
- 4. Mix cheddar cheese sauce with 1/2 c milk. Stir well then heat for 1 minute in microwave. Pour over baked potatoes.
FRIED POTATOES WITH CHEESE AND HERBS
I make this for myself on quiet mornings as a treat. It's very simple and very good. Use whatever kind of cheese and herbs you like best.

- Soak the sliced potato in cold water for anywhere up to an hour. Drain and dry well.
- Melt butter in medium saute pan over medium heat. Place potato slices in pan in a single layer as soon as contact with the butter creates a sizzle.
- Cover pan and let potatoes sizzle for about 20 minutes. Check potatoes at this time to make sure they are browning. If they are looking golden and crispy, turn the slices over, cover and sizzle for another 20 to 30 minutes.
- At this point, you should be hearing a sound that is somewhere between a sizzle and a balloon with a leak. This is the water cooking out of the potatoes. It is a good thing. Remove the cover. Turn heat down a bit if it looks like the taters are likely to burn.
- It will take about 15 minutes for the potatoes to get rid of their water content.
- Remove from heat and sprinkle cheese over crispy slices. Turn taters and cheese so they mix up together.
- Turn all out onto a plate, sprinkle with herbs and pepper.
- Serve.
SONORAN-STYLE POTATO, CHEESE, AND TOMATO SOUP
My version of a regional Mexican soup called caldo de queso, featuring potato simmered in tomato-tinted broth, with queso fresco added to each bowl.

- Heat oil in a large Dutch oven or other heavy pot over medium. Cook red onion, chile, and 1 tsp. Diamond Crystal or ½ tsp. Morton kosher salt, stirring with a wooden spoon, until starting to soften, about 3 minutes. Stir in garlic and tomato paste, breaking up paste so it coats vegetables, then add squash, potatoes, and broth. Increase heat to medium-high and bring broth to a simmer. Reduce heat to medium and cook until potatoes are almost falling apart, 15-20 minutes.
- Add cherry tomatoes to pot and cook until warmed through but not bursting, about 3 minutes. Stir in oregano and vinegar and simmer 2 minutes to allow flavors to blend. Remove from heat and stir in milk (if using). Taste soup and season with more salt if needed.
- Divide queso fresco among bowls and ladle soup over, stirring to prevent cheese from clumping.

- Scrubb potatoes, dry, then pierce with fork several times. Arrange on a baking sheet and bake in 375℉ (190℃) oven for about 1 hour or until tender. Let stand until cook enough to handle. Cut potatoes in half lengthwise and scoop out centers, leaving 1/8" potato in shell. Cover. Chill shells up to 2 days until ready to use for the skins. If desired, add the ⅓ cup milk, ¼ cup butter, salt and pepper to use potato centers as mashed potatoes. When ready to prepare skins, melt the ⅓ cup butter. Brush shells with the butter, inside and out. Place, cut side up, on baking sheet. Bake in a 500 degree oven for 20 minutes or until brown and crisp. Distribute some bacon, onion, and cheese in each shell. Bake just until cheese melts. Serve hot. If the potatoes are large, you may want to cut in half crosswise before serving. You may want to double this recipe if you are serving several people, especially if they are hungry!
