CHICKEN FANDANGO
This recipe is so easy to fix. I did not think my kids would eat it, but they loved it. I think it would be really good with lots of onions added too.

Steps:
- Mix all ingredients except 1/2 cup cheese. Place in greased casserole.
- Top with remaining cheese.
- Bake at 350°F for 45 minutes.

Steps:
- Brown beef, add mushrooms, garlic and oregano.
- Stir fry until mushrooms are light browned.
- Add spinach, heat until thawed and almost all juices have cooked away, about 10 minutes.
- Stir in soup, sour cream, salt and pepper.
- Spoon into shallow casserole.
- Scatter cheese over top.
- Bake at 350 degrees for 30 minutes or until bubbly.

MARINATED MOZZARELLA CUBES
Let sit for several days to blend flavors better. Try using Sun Dried tomatoes instead of the red peppers. Serve with baguette slices, tomatoes, on top of a salad, as part of a cheese tray. Time does not include refrigeration time.

Steps:
- In a quart jar with a tight fitting lid, layer a third of the cheese, red peppers, thyme and garlic; repeat layers twice.
- In a small bowl, combine the oil, Rosemary, Italian seasoning and red pepper flakes; mix well.
- Pour into jar; seal and turn upside down.
- Refrigerate overnight, turning several times.
- Store in refrigerator for up to 1 month.

- Put 5 quarts water on to boil for pasta in a large pot. When water is boiling add the 1 tablespoon salt, then add the fettuccine. Cook according to directions on box. Drain well, and set aside. Cover.
- Once temperature is up to 360°F, place the chicken on the grill top and close the cover. Cook 15-20 minutes. Test with a knife to see if it is cooked all the way through. When chicken is done, cut it into thin strips horizontally (long way), then into 1 inch pieces. Set aside.
