Nut Butter Balls image

Rich and buttery. If you don't have almond extract, you can use 2 teaspoons of vanilla in its place. Any type of nuts can be used in place of the walnuts.

1 cup butter, softened
½ cup confectioners' sugar
½ teaspoon salt
1 teaspoon almond extract
2 cups all-purpose flour
1 ½ cups finely chopped walnuts

Steps:

  • Mix butter or margarine with sugar until creamy. Add salt, almond or vanilla extract, flour, and nuts. Mix WELL.
  • Chill dough until firm enough to handle.
  • Preheat oven to 350 degrees F (180 degrees C).
  • Using fingers, shape dough into 1 inch balls or crescents. Place on ungreased cookie sheet. Bake for 12 to 15 minutes or until light brown. While cookies are still warm, roll in powdered sugar. These keep well.

1 cup butter, softened
3/4 cup sifted powdered sugar (plus extra for rolling)
2 teaspoons vanilla
2 1/3 cups flour
1/4 teaspoon salt
pecan halves
chocolate Hershey chocolate kiss

Steps:

  • Preheat oven to 400ºF.
  • In large bowl, combine butter and powdered sugar and mix well.
  • Add vanilla and beat.
  • Add dry ingredients and mix until a dough forms.
  • Form dough around pecan halves or chocolate kiss, enclosing nut or chocolate completely.
  • Bake on ungreased cookie sheets for 10-12 minutes.
  • Cookies should not brown.
  • Immediately drop into a bowl full of powdered sugar and roll to coat.
  • Let cool on wire racks.
  • When cool, roll in powdered sugar again.
  • NOTE: the number of cookies depends on how big you make them.

Butter nut cookies rolled in balls and then rolled in powder sugar.

1 cup butter
2 egg yolks
½ cup white sugar
2 ⅔ cups all-purpose flour
1 cup chopped walnuts
1 teaspoon vanilla extract
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, cream the butter, sugar and egg yolks until light and fluffy. Stir in the vanilla, then the flour, and finally the walnuts.
  • Roll dough into walnut sized balls, place them 2 inches apart on an unprepared cookie sheet. Bake for 10 to 12 minutes in the preheated oven. Cookies should be slightly brown. Cool and roll cookies in confectioners sugar.

These delicate little cookies have been a part of my Christmas cookie trays for years. I usually use a combo of pecans and walnuts in these. A photo will be added before Christmas.

2 c flour
1/4 c sugar
1/2 tsp salt
1 c unsalted butter, softened
2 tsp vanilla
2 1/2 c finely chopped nuts

Steps:

  • 1. Preheat oven to 350°. Grease cookie sheet.
  • 2. Cream softened butter and vanilla. Sift flour, sugar and salt together and add to butter mixture. Mix well. Add nuts and mix again.
  • 3. Shape into 1/2" balls. Bake for 30-40 minutes until lightly browned on bottom. Roll cooled cookies in confectioner's sugar.

1 1/2 cups pecans, mashed

Steps:

  • Preheat oven to 300.
  • Cream butter thoroughly.
  • Add the rest of the ingredients except confectionary sugar. Mix well.
  • Roll into walnut size balls.
  • Place on ungreased cookie sheet.
  • Bake for 35 minutes.
  • Roll in confectionary sugar immediately, and cool on waxed paper.

This peanut butter balls recipe is delicious for anytime of the year, but a must-have when Christmas season rolls around. Keep this 4-ingredient candy recipe on hand so you can make peanut butter balls (in less than an hour!) for all your holiday gatherings.

1 cup peanut butter
6 tablespoon butter, softened
2 cup powdered sugar
12 ounce chocolate-flavored candy coating (almond bark), cut up

Steps:

  • Line a tray or baking sheet with waxed paper. In a large bowl stir together peanut butter and butter. Gradually add powdered sugar, stirring until combined. If necessary, knead with hands until smooth. Shape peanut butter mixture into 1-inch balls; place on prepared tray.
  • In a 2-qt. heavy saucepan melt candy coating over low heat, stirring constantly, until smooth. Remove from heat; let cool 5 minutes. Using a fork, dip balls, one at a time, into coating, allowing excess coating to drip off. Return to waxed paper; let stand 10 minutes or until set. If desired, after coating has set, drizzle with additional melted candy coating to decorate.
