BAKED SPAGHETTI SQUASH



Baked Spaghetti Squash image

Once baked and scraped into noodle-like strands, spaghetti squash becomes a frequent pasta understudy, tossed with pesto, tomato sauce or roasted vegetables. But it's a versatile ingredient, as its mild flavor and gentle crunch also make it a good base for stews or even curries. For a basic roasted spaghetti squash recipe, follow Step 1, scrape the insides into strands, and be on your way. For a complete side dish, proceed with the rest of the recipe and top with herby breadcrumbs and Parmesan. You can also add mozzarella, which will melt into delicious little pools among the squash strands.

Number Of Ingredients 8

1 large (3- to 4-pound) spaghetti squash, halved lengthwise and seeded
3 tablespoons extra-virgin olive oil
Kosher salt and black pepper
1 cup freshly grated Parmesan
1/2 cup panko
1 garlic clove, grated
1 teaspoon fresh thyme leaves
8 ounces mozzarella, cut into 1/2-inch cubes (optional)

Steps:

  • Heat the oven to 450 degrees. Brush the cut side of each squash half with 1 tablespoon olive oil, then season with salt and pepper. Place squash, cut-sides down, on a parchment-lined baking sheet and roast until the squash is tender when poked with a fork, 35 to 40 minutes.
  • Meanwhile, in a small bowl, stir together the Parmesan, panko, garlic, thyme and the remaining 1 tablespoon olive oil. Season with salt and pepper.
  • Flip the squash and use a fork to scrape the squash into spaghetti strands. Stir in half the mozzarella, if using, then sprinkle the squash with the remaining mozzarella and the panko mixture. Roast until the top is golden brown and mozzarella has melted, 20 to 25 minutes.

1 (16 ounce) package spaghetti
1 pound ground beef
1 onion, chopped
1 (32 ounce) jar meatless spaghetti sauce
½ teaspoon seasoned salt
2 eggs
⅓ cup grated Parmesan cheese
5 tablespoons butter, melted
2 cups small curd cottage cheese, divided
4 cups shredded mozzarella cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13-inch baking dish.
  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in boiling water, stirring occasionally until cooked through but firm to the bite, about 12 minutes. Drain.
  • Heat a large skillet over medium heat; cook and stir beef and onion until meat is browned and onions are soft and translucent, about 7 minutes. Drain. Stir in spaghetti sauce and seasoned salt.
  • Whisk eggs, Parmesan cheese, and butter in a large bowl. Mix in spaghetti to egg mixture and toss to coat. Place half the spaghetti mixture into baking dish. Top with half the cottage cheese, mozzarella, and meat sauce. Repeat layers. Cover with aluminum foil.
  • Bake in preheated oven for 40 minutes. Remove foil and continue to bake until the cheese is melted and lightly browned, 20 to 25 minutes longer.

When my kids were little I always made just "regular" spaghetti with noodles, jarred sauce and ground beef. This new recipe was prompted by my husband's love of Moe's spaghetti (his favorite pizza place in White Oak, Texas). He likes spaghetti that has come hot out of the oven with cheese bubbling on top! Number Of Ingredients 14

12 oz multi-grain spaghetti noodles
1/2 large onion, chopped
1 medium bell pepper, red, chopped
1/2 c chopped carrots
2 tsp olive oil
1 can(s) diced tomatoes
1 clove garlic, minced
1 tsp dry oregano
1 tsp dry basil
12 oz 93% lean ground beef
2 c shredded mozzerella cheese
1 can(s) cream of mushroom soup, light
1/2 c water
1/2 c grated parmesan cheese

Steps:

  • 1. While spaghetti is cooking in boiling,salted water, saute' chopped vegetables in olive oil in large skillet. Stir into the skillet of veggies, the can of undrained diced tomatoes and dry seasonings. Don't overcook the veggies because they will cook more in oven. Add the raw ground beef to the skillet of veggies and tomatoes and cook until no longer pink.
  • 2. When spaghetti is el dente', rinse in cold water.
  • 3. To get ready for the oven, layer your casserole by first placing half the spaghetti in bottom of large glass casserole dish. Scoop half the meat/veggie mixture over the top of spaghetti. Sprinkle 1 cup of the shredded cheese over it. Repeat this layer again - spaghetti, meat mixture, cheese.
  • 4. Mix the can of soup and 1/2 cup of water together until thoroughly blended and the pour it over top of your casserole. Add parmesan cheese to top.
  • 5. Bake in 350 oven, covered for 15 minutes. Uncover and bake another 20 minutes.

1 tablespoon extra-virgin olive oil
3/4 pound ground beef
1 small onion
2 cloves garlic
1/8 teaspoon cayenne pepper
1 teaspoon dried basil (or 1 tablespoon fresh)
1/2 teaspoon dried oregano
2 cups water
1 1/2 cups marinara sauce (or your favorite commercial spaghetti sauce )
3 tablespoons tomato paste
12 ounces thin spaghetti (dry, uncooked, broken into thirds)
Kosher salt and ground black pepper (to taste)
1 cup grated Parmesan cheese

Steps:

  • Gather the ingredients.
  • Heat the olive oil in a large saucepan or Dutch oven over medium heat. Crumble the ground beef into the pot and cook for 2 to 3 minutes, stirring frequently.
  • Peel the onion and garlic. Chop the onion finely and mince the garlic.
  • Add the onion and garlic to the ground beef. Continue to cook until the onion is transparent and the beef is no longer pink. Drain and discard excess fat. Add the cayenne pepper, basil, and oregano; stir to blend.
  • To the beef mixture, add 2 cups water, the spaghetti sauce or marinara, tomato paste, and the uncooked spaghetti; bring to a boil, stirring frequently. Reduce heat to medium-low and simmer for about 12 to 15 minutes, or until the spaghetti is just tender and most of the liquid has been absorbed.
  • Turn off the heat and cover the pan; let the spaghetti stand for 5 minutes.
  • Taste the spaghetti and season with salt and pepper to taste.
  • Serve the spaghetti sprinkled with Parmesan cheese and provide extra Parmesan cheese at the table.
  • Enjoy!

1 lb spaghetti, cooked
4 cups of your own homemade spaghetti sauce or 1 (32 ounce) jar of your favorite spaghetti sauce
1 lb ground beef
1 large onion, diced (add only if you are using a jar or can of spaghetti sauce)
1 teaspoon italian seasoning (add only if you are using a jar or can of spaghetti sauce)
1/2 teaspoon basil (add only if you are using a jar or can of spaghetti sauce)
salt and pepper, to taste
4 eggs
1/2 cup parmesan cheese
16 ounces ricotta cheese
parsley
mozzarella cheese, to sprinkle on top of each pie

Steps:

  • 2 (9-inch) deep dish pie pans.
  • Preheat oven to 350.
  • Boil spaghetti according to pkg directions. Drain, and set aside.
  • Brown the meat, and IF you are using canned or jarred spaghetti sauce, add onion, Italian seasoning, and basil to the beef mixture.
  • If you are using your own homemade sauce, it will already have enough spices in it to your taste.
  • Add salt and pepper, to taste. Set aside.
  • Beat 2 eggs, and mix in with spaghetti.
  • Add Parmesan cheese, and mix well. Set aside.
  • Spray pie pans with non-stick cooking spray.
  • Layer each pie pan, making a well in the middle, with a thin layer of spaghetti on the bottom, and bringing spaghetti up the sides to make a pie crust.
  • You may, or may not have spaghetti left over, depending on how big your pie plates are. Set aside.
  • Beat 2 eggs, add Ricotta and parsley. Mix well.
  • Layer a layer of spaghetti, a layer of ricotta, a layer of meat, and a layer of sauce.
  • Cover with Mozzarella cheese.
  • Bake for 25-30 mins., or until cheese is bubbly, and all is nice and hot.
  • Serve with garlic bread or sticks, and a salad, and you have a delicious meal!

I serve this with Toasted Garlic Bread and a salad. For us (2), we LOVE pasta, so this recipe is enough for dinner, and 1 leftover serving for lunch the next day.

1 lb spaghetti (I use Dreamfields, and cook about 11 mins. after it starts boiling)
2 cups breadcrumbs
1 tablespoon italian seasoning
1/2 teaspoon salt
1/2 teaspoon fresh ground pepper
1 cup vegetable oil
4 thin veal fillets
2 egg whites
1/2 cup kraft mozzarella cheese, I use fat-free
3 -4 cups spaghetti sauce, I use my own without the sausage (Linda's Meaty Spaghetti Sauce)
parmigiano-reggiano cheese, shredded (optional)

Steps:

  • Boil water for spaghetti, and cook as directed on box. When done, drain, and set aside with cover on pan, to keep hot.
  • Meanwhile put the bread crumbs on a lg. dish. Add the Italian seasoning, salt, and pepper. Mix well. Set aside.
  • Beat the egg whites in a bowl.
  • Dip veal fillets first in the egg whites, then in the bread crumb mix.
  • Turn heat on high, and place a lg. frying pan on burner. Add oil, and let get nice and hot.
  • Add veal fillets, and cook on both sides until golden brown. Drain on paper towels. Set aside.
  • In a 9x13" pan spread out enough spaghetti sauce to cover where you will be placing the fillets.
  • Place the fillets on the sauce mixture. Cover with cheese.
  • Top with spaghetti sauce, and bake in a 350 oven, for 20-25 minutes or until cheese is bubbly.
  • Add about 1 cups of sauce into drained spaghetti. Mix in well.
  • Serve spaghetti onto plates.
  • Add more spaghetti sauce on top.
  • Place fillets onto plate.
  • Note:.
  • You can sprinkle Parmesano Reggiano cheese on top of each serving.
