This cake uses sour milk that would otherwise be thrown out. You'd never know it, though! It's moist, delicious, and easy to make.

¾ cup white sugar
½ cup unsalted butter, softened
2 eggs
1 tablespoon cocoa powder
1 teaspoon ground cinnamon
1 pinch ground cloves
1 ⅔ cups all-purpose flour
1 cup soured milk
½ cup raisins
1 teaspoon baking soda
1 tablespoon boiling water

Steps:

  • Preheat the oven to 350 degrees F (180 degrees C). Grease a 9x13-inch baking dish.
  • Cream sugar and butter together in a large bowl. Beat in eggs, cocoa powder, cinnamon, and cloves. Add flour alternately with soured milk, stirring batter until smooth. Fold in raisins. Dissolve baking soda in boiling water and add to the batter. Pour batter into the prepared baking dish.
  • Bake in the preheated oven until a skewer inserted into the center comes out clean, 30 to 35 minutes. Cool before slicing.

This is my family recipe. It is a delicious chocolate cake with a twist, it's completely vegan. This cake goes great with some chocolate or vanilla frosting and a scoop of ice cream on top! I get extra fancy with a few mint leaves!

1 cup white sugar
¼ cup unsweetened cocoa powder
1 teaspoon salt
1 teaspoon baking soda
1 cup water
⅓ cup vegetable oil
1 tablespoon distilled white vinegar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch round baking dish.
  • Sift flour, sugar, cocoa powder, salt, and baking soda together in a bowl. Add water, oil, vinegar, and vanilla extract, to flour mixture and beat until smooth, about 1 minute. Pour batter into baking dish.
  • Bake in preheated oven until toothpick inserted in center comes out clean, about 30 minutes. Cool on a wire rack for 1 hour before removing from baking dish.

1 cup vegetable oil

  • Preheat oven to 350 degrees F (175 degrees C), grease and flour a 9x13 inch pan.
  • In a large bowl, sift together flour, cocoa powder, soda and salt. Add sugar and mix together.
  • Add oil, water and vanilla and mix thoroughly.
  • Pour into a 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 1 hour or until toothpick inserted in center comes out clean.

1 cup white sugar
¼ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
⅓ cup cold vegan buttery spread (such as Earth Balance®)
½ cup soy milk
½ cup brewed coffee
1 teaspoon apple cider vinegar
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour an 8-inch round cake pan.
  • Combine flour, sugar, cocoa powder, baking soda, and salt in a large bowl, whisking until smooth. Cut in buttery spread using a pastry cutter or 2 knives until it is the size of small peas and flour mixture is evenly coated.
  • Pour soy milk, coffee, vinegar, and vanilla extract into the bowl. Blend with an electric mixer until smooth; beat for 2 minutes more. Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 35 to 40 minutes. Cool in the pan for at least 10 minutes before inverting onto a wire rack or serving plate.

6 ounces unsweetened chocolate, chopped
3 cups cake flour
2 teaspoons baking soda
½ teaspoon salt
2 cups white sugar
1 ¾ cups water
⅔ cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon balsamic vinegar

Steps:

  • Melt unsweetened chocolate in top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Set aside to cool slightly, about 5 minutes.
  • Preheat oven to 350 degrees F (175 degrees C). Line two 9-inch cake pans with waxed paper.
  • Sift cake flour, baking soda, and salt together in a large bowl.
  • Whisk sugar, water, vegetable oil, vanilla extract, and balsamic vinegar in a large bowl until well-combined. Stir in half of the sifted flour mixture. Fold in melted chocolate. Stir in remaining sifted flour mixture. Beat with an electric mixer on medium speed until batter is smooth, about 2 minutes. Divide batter between cake pans.
  • Bake in the preheated oven until toothpicks inserted in the centers come out clean, about 45 minutes. Cool in the pans, 5 minutes. Invert cakes onto wire rack and let cool completely before frosting, about 1 hour.
