This sounds wonderful and looks really fancy without all that much effort. I originally found this recipe in the UK cooking magazine Olive. Cooking time includes the 1hr chilling time.

2 lemons, juice and zest of
2 1/2 fluid ounces limoncello
10 1/2 fluid ounces heavy cream
3 1/2 ounces caster sugar
12 amaretti cookies

Steps:

  • Mix the lemon juice, most of the zest and the limoncello together.
  • Pour the cream into a large bowl and softly whip with the sugar.
  • Drizzle in the lemon mixture and whisk until incorporated.
  • Divide between 6 small glasses and refrigerate for at least an hour.
  • Just before serving, put 6 cookies in a plastic bag. Crush with a rolling pin and sprinkle over each dessert with a little lemon zest.
  • If you like, serve each with a whole cookie on the side.

1/2 cup milk
1/2 cup sugar
2 1/2 cups apple cider (fresh is best)
1 teaspoon vanilla
1 pinch salt
2 cups heavy whipping cream
nutmeg, as garnish

Steps:

  • Whip the cream until stiff.
  • In another bowl mix the milk, sugar, cider, vanilla and salt.
  • Fold whipped cream into cider mixture, then whisk until frothy.
  • This can be stored in the refrigerator and re-whisked before serving.

8 ounces almond paste (canned)
1 cup sugar (superfine)
2 large egg whites
extra sugar, for dusting cookie

Steps:

  • Preheat oven to 375 degrees F.
  • Line two baking sheets with parchment paper.
  • Break the almond paste into small pieces and place in bowl of electric mixer along with the sugar.
  • Mix on low speed until very fine.
  • Add the egg whites in three additions, mix well after each addition.
  • Continue mixing the dough until very smooth, about 3 to 4 minutes.
  • Place a tablespoon of dough on the cookie sheet (space them 1 inch apart).
  • Lightly press the top of each cookie to smooth out the surface.
  • Sprinkle a little sugar on top of each cookie.
  • Bake for 15 minutes, or until the cookies have risen, are a deep golden color and have tiny cracks.
  • Remove from the oven.
  • When cool gently peel cookies from parchment.
  • Note: If they stick to the parchment, turn the paper over, take a damp paper towel and gently wipe the bottom of the parchment paper to loosen the cookie.

Lovey, creamy, tomatoey, mousse with a perfect salmon-pink appearance. Looks really fancy for guests if set in a fish-shaped mould and once unmoulded, garnished with a few prawns and lemon slices. Keeps for at least 3 days in the refrigerator. Preparation time does not include chilling/setting time.

20 ml gelatin
100 ml water
1 (60 g) packet tomato soup mix, dissolved in
450 ml water
125 ml cottage cheese, smooth
250 ml mayonnaise
1 small green pepper, finely diced
1 onion, small, finely diced
3 celery ribs, chopped
2 eggs, hard boiled, chopped
2 (170 g) cans light chunk tuna in water (not oil)
1/2 teaspoon Tabasco sauce (more to taste)
50 ml coffee creamer

Steps:

  • Combine gelatine and 100 ml water in a bowl placed over a container of boiling water and mix until dissolved.
  • In a separate pan bring the soup to a boil and stir until thickened.
  • Add gelatine to soup and allow to cool.
  • Add all other ingredients and pour into an oiled (preferably fish-shaped) mould.
  • Allow to set completely in the fridge.
  • Turn out on a platter and garnish with prawns and lemon slices.
  • Serve with crusty bread or melba toast.
