We love this margarita martini recipe because it's not too sweet and has the surprise of a yummy tequila-lime gelatin shot at the bottom of the glass. So good and very pretty!

1 (3 ounce) package lime-flavored gelatin mix (such as Jell-O®)
1 cup boiling water
1 cup tequila
coarse salt, as needed
1 cup ice cubes, or as needed
1 cup margarita mix
½ cup tequila
1 (12 fluid ounce) can or bottle beer
1 lime, sliced

Steps:

  • Combine lime-flavored gelatin mix and boiling water in a bowl; stir until gelatin is dissolved. Stir 1 cup tequila into gelatin mixture. Pour into about 24 shot glasses and place in refrigerator to set, at least 1 hour.
  • Salt the rims of 4 to 6 martini glasses.
  • Combine ice, margarita mix, and 1/2 cup tequila in a cocktail shaker; shake until well mixed. Place a lime-flavored gelatin shot in the bottom of each prepared martini glass. Pour margarita mixture over the shot, leaving enough room to top with beer. Top each margarita-martini with beer. Garnish with a lime slice.

MEZCAL PALOMA



Mezcal Paloma image

A paloma is traditionally made with tequila, grapefruit juice, and lime, but this version uses mezcal instead of tequila for a nice smoky twist! The smoke flavor is due to the underground ovens filled with volcanic rock, coal and wood that are used to cook the agave to produce the mezcal. I like to rim the glass with coarse smoked salt or black salt, but feel free to use regular kosher salt.

2 wedges fresh lime
1 teaspoon kosher salt, or as needed
1 cup ice cubes
2 ounces mezcal
3 ounces grapefruit soda

Steps:

  • Rub the cut side of a lime wedge around the edge of the glass. Place salt on a plate and invert glass into salt to rim the glass. Fill glass with ice. Squeeze juice from the same lime wedge into the glass. Pour mezcal over ice, then top with grapefruit soda. Garnish with remaining lime wedge.

Most mimosas start with a splash of orange juice, but this mimosa takes advantage of the tart bite of lime and blackberries, lending for a vibrant red mimosa perfect for a Christmas brunch or Valentine breakfast.

1 cup blackberries
1 cup water
½ cup white sugar
1 medium lime, zested and juiced
1 pinch saffron
2 tablespoons white sugar
2 tablespoons lime juice
1 (750 milliliter) bottle chilled sparkling wine
6 blackberries for garnish
6 lime wedges

Steps:

  • Combine 1 cup blackberries, water, 1/2 cup sugar, zest and juice of 1 lime, and saffron in a saucepan over medium heat. Bring to a boil and stir until sugar is dissolved, about 3 minutes. Remove from heat and allow syrup to cool completely, about 1 hour.
  • Pour 2 tablespoons sugar on a saucer. Dip rim of champagne glasses in lime juice and dip in sugar to create a sugar-rimmed glass.
  • Pour 1 tablespoon syrup into each champagne glass and top with about 4 ounces sparkling wine. Garnish with a blackberry and lime wedge.
