Lime, Paprika and Honey Glazed Chicken image

This delicious sweet aromatic chicken has a hint of citrus sharpness and is served with rice and Asian greens.

2 tablespoons plain flour
2 teaspoons paprika
8 chicken legs
2 red onions, cut into wedges
2 tablespoons olive oil
2 teaspoons gingerroot, grated, fresh
1 garlic clove, finely chopped
2 tablespoons honey
1/2 cup chicken stock
1 lime, cut into thin wedges
steamed rice
asian steamed baby greens
cilantro leaf

Steps:

  • Preheat the oven to 425°F
  • Mix the flour and paprika and season with salt and pepper. Dust the chicken legs in the flour and then put in a large roasting tin with the onions.
  • Drizzle with the olive oil and roast for 20 minutes, turning the chicken once during this time.
  • Mix together the ginger, garlic, honey and chicken stock. Pour over the chicken and add the lime wedges to the tin. Roast for another 10 minutes, or until the chicken is golden and glazed.
  • Serve with steamed rice, greens and lots of cilantro leaves.

SPICY HONEY-LIME CHICKEN



Spicy Honey-Lime Chicken image

1/2 cup honey
4 limes, 2 zested and 4 juiced (about 1/2 cup juice)
4 teaspoons sambal oelek (an Asian chili paste)
2 tablespoons soy sauce
4 teaspoons toasted sesame oil
8 chicken thighs, bone-in and skin-on
Kosher salt and freshly ground pepper
4 baby bok choy, halved or quartered lengthwise

Steps:

  • 1. Prepare a grill with a medium fire on one side of the grill for direct and indirect grilling.
  • 2. Combine the honey, lime zest, lime juice, sambal oelek, soy sauce, and sesame oil in a small pot. Bring to a boil, and then simmer until it just starts to thicken, about 10 minutes.
  • 3. Sprinkle the chicken thighs on both sides with salt and pepper. Place the chicken on the grill skin-side down. Grill on both sides until golden, about 3 minutes each side. Transfer the chicken to indirect heat and cook covered, basting and turning with the sauce every 5 minutes, until an instant-read thermometer registers 160 degrees F, about 20 minutes.
  • 4. Pour 1 inch or more of water into a skillet or wok and bring to a boil over medium-high heat. Place the bok choy in a bamboo or collapsible steamer. Sprinkle the bok choy with salt and pepper. Set the steamer over the boiling water, cover, and cook until the bok choy is cooked but still has a little resistance when pierced with a paring knife, about 5 minutes.

A cinch to preprare, this is truly a honey of a dish. The sweet-sour sauce glazes the chicken beautifully.

3 lbs chicken parts
1/3 cup honey
2 tablespoons fresh lime juice
1 1/2 tablespoons low sodium soy sauce
3 cups noodles, cooked

Steps:

  • Heat oven to 375°F Arrange chicken, skin side-up, in cingle layer in shallow casserole dish or 11x7-inch baking dish.
  • Combine remaining ingredients except noodles in small bowl; mix well. Brush 1/3 of honey mixture over chicken; bake 15 minutes.
  • Brush remaining honey mixture over chicken; bake 10 - 15 minutes more, or until juices run clear. Transfer to serving platter. Serve with noodles.
