VANILLA FROZEN YOGURT



Vanilla Frozen Yogurt image

This frozen yogurt is so much easier than homemade ice cream! Just so you know, this freezes a lot quicker than ice cream. Also, if you want tart frozen yogurt, feel free to decrease the sugar!

3 cups nonfat Greek yogurt
⅔ cup white sugar
1 teaspoon vanilla extract

Steps:

  • Stir the yogurt, sugar, and vanilla extract together until the sugar has dissolved. Cover. Refrigerate 1 hour.
  • Pour the chilled mixture into an ice cream maker and freeze according to manufacturer's directions until it reaches "soft-serve" consistency. Transfer to a one- or two-quart plastic container with a lid; cover surface with plastic wrap and seal. For best results, frozen yogurt should ripen in the freezer for at least 2 hours or overnight.

4 firm bananas, peeled and halved lengthwise
¼ cup maple syrup
1 tablespoon ground cinnamon
1 (1 inch) piece fresh ginger, grated
1 ½ teaspoons ground nutmeg

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with cooking spray.
  • Arrange banana halves in the prepared baking dish. Drizzle maple syrup over bananas and top with cinnamon, ginger, and nutmeg. Cover dish with aluminum foil.
  • Bake in the preheated oven until heated through, 10 to 15 minutes.

LIME GRANITA AND CANDIED LIME ZEST

1 cup of freshly squeezed lime juice
1 cup sugar
2 cups of water
Candied lime zest, recipe follows
5 limes zested
1 cups water
1/2 cup sugar

Steps:

  • Put all ingredients except lime zest in a pot and bring to a boil. Strain and pour into shallow pan. Place in freezer and every twenty minutes stir with a fork until ice crystals form and it is nice and fluffy. Candied lime zest: Cover the zest with cold water and bring to a boil. Strain zest and repeat process 3 times. After the fourth time add 1 cup water and 1/2 cup sugar and cook slowly until zest is soft. Remove zest to parchment paper and cool. Use as a garnish for the granita.

1 pint orange sherbet
3 oranges
3 egg whites
6 tablespoons white sugar
¼ teaspoon cream of tartar

Steps:

  • Scoop the orange sherbet into 6 balls and place them on a plate. Freeze until very firm, at least 4 hours.
  • Slice the oranges in half across the center and cut around the edges with a small knife. Remove the fruit and membrane, reserving the fruit and peel shells. Chop the orange sections and place them in the bottoms of the shells.
  • Preheat the oven to 450 degrees F (220 degrees C). In a clean glass or metal bowl, whip egg whites with an electric mixer until foamy. Mix in cream of tartar and gradually beat in the sugar while continuing to whip until stiff and glossy.
  • Place the orange shells on a baking sheet and place a ball of sherbet into each one. Cover the sherbet with meringue, sealing to the edges of the orange peel.
  • Bake for 5 minutes in the preheated oven, until browned. Remove and serve immediately.
