My family and I have been enjoying this lime vinaigrette recipe for so long, I don't even remember where I got it from. Sometimes I add dried basil and anchovy paste to add a little variation to the dressing. -Marian Brown, Mississauga, Ontario

1/4 cup lime juice
2 garlic cloves
1/4 teaspoon Dijon mustard
1 teaspoon honey
1/4 teaspoon salt
Dash pepper
1/4 cup olive oil

Steps:

  • Place first 6 ingredients in blender. While processing, gradually add oil in a steady stream.

4 cups torn salad greens
1 small tomato, cut into wedges
1/2 cup sliced cucumber
1/4 cup vegetable oil
1/4 cup lime juice
2 teaspoons sugar
1 teaspoon grated onion
1/2 teaspoon grated lime zest
1/4 teaspoon salt

Steps:

  • In a salad bowl, toss the greens, tomato and cucumber. In a jar with a tight-fitting lid, combine the oil, lime juice, sugar, onion, lime zest and salt; shake well. Pour over salad and toss to coat.

This is a delicious, tangy vinaigrette. It's so versatile, it can be used for mixed greens or taco salads. Enjoy! Serve immediately or keep in the fridge for 4 to 5 days. I prefer white wine vinegar in this recipe, as opposed to regular white vinegar. You can also use Dijon mustard if you prefer to spicy brown.

2 tablespoons white vinegar
½ bunch cilantro, chopped
1 tablespoon brown sugar
1 clove garlic, minced
¼ teaspoon salt
¾ teaspoon spicy brown mustard

  • Blend the lime juice, vinegar, and cilantro together in a blender until smooth. Add the brown sugar, garlic, and salt; blend again until smooth. Spoon the mustard into the mixture. 1/4 cup lime juice
1/4 cup fresh orange juice
1 1/2 teaspoons honey
1/4 cup orange zest
1/8 cup sugar
Salt
Pinch white pepper
1 cup plus 2 tablespoons light extra-virgin olive oil
1 pound mixed greens

Steps:

  • Place lime juice, orange juice, honey, orange zest, and sugar in a large bowl. With a whisk in 1 hand and the oil in another, slowly begin to add the oil until it's all gone. Season with salt and white pepper, to taste. The finished product should look like it has significant body, taste semi-sweet and with a touch of tartness. Toss desired amount with mixed greens, and serve.
