CHILLED TEQUILA SHOTS WITH LIME AND SALT
Tequila shots are always good, but they're even better chilled.

- Shake tequila with ice; strain into two shot glasses. Chase with a lick of salt and a wedge of lime.

TEQUILA LIME JELLO SHOTS
Steps:
- Add the contents of the Jello package to 1 cup of boiling water. Stir until the powder is dissolved.
- Add a half cup of water and a half cup of tequila to your dissolved jello liquid.
- Put the mixture into containers of your choice. You can let the Jello mixture set up in a cake pan, then cut it into rectangles, or you can pour it into individual paper cups.
- Place the shots in the refrigerator. It can take a few hours for the Jello to set, so be sure to prepare the shots well ahead of your party.

This is the most authentic way to do tequila shots on the Baja peninsula! The amount of tequila is, of course, up to you.

- With a citrus reamer or your thumb, push a little cavity into the center of the lime to make room for the tequila (lime juice will squirt out). Pour tequila into the cavity then suck down tequila and lime juice all in one gulp.

- Allow jello mixture to reach room temperature. If you don’t, the heat from the boiled jello can cook out the alcohol in the tequila.
- Add your desired amount of tequila to the jello mixture. You can measure shot by shot or if you are making a large batch, use half of a bottle. Mix well.
- Pour the mixture into the individual shot glasses. I found it’s easier to have the shot glasses on a tray before pouring to make transferring to the fridge easier. Each shot glass takes about 1/8 cup to fill. (Note: If you wish to garnish the tops with salt do this before pouring the mixture into the shot glasses)

- Straight Tequila Shot. Lick, sip, suck... That is how the classic tequila shot goes down. While it's a fun way to take your tequila, there is an actual purpose behind the method: the salt cools the burn and the lime enhances the flavor.
- Sangrita. Sticking with tradition, it's always fun to revisit the double-banger known as the sangrita. It's possible that you've enjoyed the spicy tomato shot, but that is an Americanized version and the original is arguably a little better.
- El Vocho. Inspired by the sangrita, the chaser for el vocho takes a completely different route. It does require a bit more work, but it's worth it. For this shooter, you'll blend up a mix of pineapple juice, cilantro, and mint to create a green chaser that resembles a fresh kale smoothie.
- Lychee Tequila Shot. Tequila shots do have a softer side and the lychee tequila shows this off perfectly. This shooter requires just two ingredients and once you get a taste for the sweet nectar that is lychee and tequila, it's very hard to stop.
- Mexican Samurai. Another seductive shooter, the Mexican Samurai is of the gentler sort. In fact, you might want to slow down and sip this one. To create this shooter, you will want to prepare a fresh sour mix (don't worry, it's easy).
- Wake the Dead. Coffee, coffee, tequila! It is time to wake the dead. This simple shot appeals to your espresso-loving taste buds. Just mix cold espresso with coffee liqueur, and finish it off with tequila.
- Apocalypse Now. If you want to go old-school, try the shooter named after the movie, "Apocalypse Now." It's a mix of tequila, dry vermouth, and Irish cream and you'll be surprised to find how much it actually works.

MANGO TEQUILA SHOOTERS WITH CHILI-LIME SHRIMP | SHAPE

- In a food processor, purée mangoes, 1/2 cup lime juice, and cucumber until smooth. Stir in 1/4 cup cilantro, onion, bell pepper, and 1/2 teaspoon salt. Refrigerate, covered, 2 to 3 hours.
- Meanwhile, in a food processor, purée scallions, chilies, remaining cilantro, 1 teaspoon sea salt, 1/4 cup lime juice and zest, cayenne pepper, and olive oil until smooth. Cover and refrigerate until ready to cook the shrimp.
- When mango mixture is chilled, place each shrimp on a skewer in a flat, non-reactive dish, then pour the marinade over the shrimp, turning to coat. (Do not let the skewers marinate for more than 10 minutes or the lime juice will "cook" the shrimp.) Brush a large nonstick sauté pan with olive oil and heat over medium-high.
- Remove mango puree from refrigerator, add tequila if using, and divide between 24 shot glasses (about 1 1/2 ounces in each glass). Cook the shrimp skewers for 1 minute per side or until the thickest part is no longer translucent. Place a shrimp on top of each shot glass and serve immediately.
