Steps:
- Preheat oven to 325F, add a circle of parchment paper to the base of a 9-inch springform pan, and spray the parchment paper and the sides of the pan very well with cooking spray; set aside. Do not make this cake in a regular 9-inch cake pan. Most are only about 1 1/2 to 2 inches deep and this cake rises to about 2 1/2 to 3 inches on the sides and nearly 4 inches in the center. It will overflow in a regular 9-inch pan.
- To a large bowl, add the olive oil, eggs, and whisk well to emulsify and incorporate.
- Add the milk, lemon zest, lemon juice (I was able to get sufficient zest and juice from one very large ripe lemon), Limoncello, lemon extract, and whisk to incorporate.
- Add the sugar and whisk to incorporate.
- Add the flour, salt, baking powder, baking soda, and whisk until just incorporated; don't overmix. The batter in on the thin side; this is normal.
- Turn batter out into prepared pan, place pan on a baking sheet as insurance against a leaky springform pan, and bake for about 68 to 75 minutes. Start checking after 60 minutes since all ovens vary. Cake will be golden browned and domed in the center when done, and a toothpick inserted in the center will come out clean or with a few moist crumbs.
- Allow cake to cool in the springform pan for about 1 hour before releasing it and allowing the cake to finish cooling on a wire rack.
- Dust with confectioners' sugar prior to serving. Cake will keep airtight at room temp for 1 week and although I haven't tried it, I think this cake would freeze very well for up to 3 months.

LIME OLIVE OIL CAKE
Steps:
- Position a rack in the center of the oven and preheat to 350 degrees F. Grease an 8-inch round cake pan with olive oil, and then line with parchment paper. Grease the parchment paper.
- Add the milk, lime zest and lime juice to a small bowl and let stand for 5 minutes; the acid from the lime will curdle the milk and create "buttermilk."
- Meanwhile, whisk the flour, baking powder and salt in a medium bowl. Beat 1 cup plus 2 tablespoons of the granulated sugar, the olive oil, eggs and vanilla in a large bowl with an electric hand mixer on medium-high speed until well combined and creamy, 2 to 3 minutes. Reduce the speed to low and beat in the flour mixture in three batches, alternating with the milk mixture. Use a rubber spatula to scrape down the sides of the bowl and give the batter a good stir to make sure everything is well-combined.
- Transfer the batter to the prepared pan and arrange the mandarin oranges in a single layer on top in whatever pattern you like. Sprinkle the top evenly with the remaining 1 tablespoon granulated sugar. Bake until the cake is light golden brown and a toothpick inserted right off the center of the cake comes out clean, about 1 hour. (If you try testing with a toothpick in the very center of the cake, you might get a bit of moist batter on your toothpick, but the cake will continue to cook as it cools.) Transfer to a wire cooling rack and immediately run a small offset spatula or butter knife around the edges of the cake to release it from the pan. Let cool for 30 minutes in the pan, and then carefully invert directly onto the cooling rack. Don't worry if some of the crackly top comes off, any imperfections will be covered up with confectioners' sugar.
- Once the cake is cooled completely, transfer to a serving plate and dust all over with confectioners' sugar.

- PREP: Position a rack in the center of the oven and preheat the oven to 350ºF. Spray a 9x5 loaf pan with cooking spray (you can also line it with a piece of parchment paper and leave an overhang to act as a handle to help remove the cake from the pan if you’re worried about the cake sticking.)
- STIR: In a large mixing bowl, whisk the olive oil, sugar, eggs, vanilla, lemon juice and milk. When combined, stir in the lemon zest, baking powder, salt, nutmeg, and cinnamon. Fold in the flour until *just* combined. If you overmix, the pound cake will come out tough.
- BAKE: Pour the prepared batter into your loaf pan and bake for 55-65 minutes or until a toothpick comes out mostly clean. Cool the pound cake for roughly 30 minutes on a wire rack. Remove from the pan, and let cool to room temperature (about another 30 minutes.) Sometimes, I like to serve this dusted with a light coating of powdered sugar before slicing and serving!
