MOJITO JELLY - LIME AND MINT JELLY



Mojito Jelly - Lime and Mint Jelly image

Came up with this when making Dandelion Jam and drinking a mojito. Try some on a fresh grilled tuna steak, lamb or pork chops, melt and mix into a fruit salad, add to home made salad dressing or add to a salsa... Great for gift giving.

Number Of Ingredients 7

1 cup of fresh mint (1 cup packed and bruised)
3 1/2 cups water
5 cups sugar
2 teaspoons lemon zest, finely grated
2 cups lime juice
6 ounces liquid pectin (1 pouch Ball Fruit Jell)
green food coloring (optional)

Steps:

  • Prepare boiling water canner. Heat 5(8 oz) half pint glass preserving jars with lids and bands in simmering water until ready for use. Do not boil. Set bands aside.
  • Combine mint and water in a large pot. Simmer covered, about 20 minutes. Strain.
  • Return mint infused water to a large pot; boil until reduced to 3 cups. Add sugar, stirring to dissolve. Stir in lemon zest and lime juice. Bring to a boil. Stir in liquid pectin. Bring to a rolling boil. Boil hard for 1 minute.
  • Remove from heat. Skim foam if necessary. Stir in a few drops of food coloring, if desired.
  • Carefully ladle hot jelly into hot jars, leaving 1/4-inch headspace. Wipe rim and threads of jar with a clean damp cloth. Place lid on jars and then screw band down evenly and firmly just until a point of resistance is met-fingertip tight.
  • Process 10 minutes in a boiling-water canner adjusting for altitude. Remove jars and cool. Check lids for seal after 24 hours. Lid should not flex up and down when center is pressed. Label.

This festive-looking jelly from Naomi Giddis of Two Buttes, Colorado, can be served with lamb or used as a dessert topping. With its bright-green color, the jelly makes a great gift, too.

Yield 11 half-pints.

Number Of Ingredients 6

4-1/2 cups water
3 cups packed fresh mint, crushed
7 cups sugar
1/4 cup lemon juice
2 to 4 drops green food coloring
2 pouches (3 ounces each) liquid pectin

Steps:

  • In a large saucepan, bring water and mint to a boil. Remove from heat; cover and let stand 15 minutes. Strain, reserving 3-1/3 cups liquid (discard remaining liquid)., In a Dutch oven, combine sugar, lemon juice, food coloring and reserved liquid. Bring to a boil; cook and stir 1 minute. Add pectin; return to a boil. Cook and stir 1 minute. Remove from heat; let stand 5 minutes., Skim off foam. Ladle hot liquid into hot half-pint jars, leaving 1/4-in. headspace. Wipe rims. Center lids on jars; screw on bands until fingertip tight. Place jars in canner with simmering water ensuring that they are completely covered with water. Bring to a boil; process 10 minutes. Remove jars and cool.

This lime jelly is sweet with bursting lime flavor. I only make this when I can get the limes on sale. Don't use too much food coloring as it will look artificially green. Found this recipe on-line.

Number Of Ingredients 5

2 1/2 cups prepared lime juice (6 to 8 limes)
1 3/4 cups water
4 cups sugar
1 drop green food coloring
1 (3 ounce) envelope liquid pectin

Steps:

  • Grate the peel of 5 of the limes; set aside.
  • Squeeze enough juice from 6 to 8 of the limes to measure 3/4 cup; pour juice into medium bowl.
  • Add lime peel and water; mix well. Place three layers of damp cheesecloth over a medium bowl. Pour juice mixture into cheesecloth. Tie it closed and let drip into bowl until dripping stops, about 10-15 minutes. Press gently. Measure exactly 2-1/2 cups prepared juice into a 6-quart pan.
  • Stir sugar into the juice in the pan.
  • Add food coloring if desired.
  • Bring mixture to full rolling boil on high heat, stirring constantly.
  • Stir in pectin. Return to full rolling boil and boil exactly 1 minute.
  • Skim off any foam.
  • Ladle into jars, seal and process 8 minutes.

Mint jelly is a classic accompaniment to lamb and is particularly well suited to the simple flavors of Roasted Leg of Lamb.

Yield Makes about 2 cups

Number Of Ingredients 6

2 cups fresh mint, firmly packed
2 cups water
3 tablespoons freshly squeezed lemon juice
3 1/2 cups sugar
3 ounces liquid pectin
2 drops green food coloring

Steps:

  • Blend mint and the water in the jar of a blender until mint is finely chopped. Transfer to a saucepan; bring to a boil. Remove from heat; let steep 45 minutes. Strain mixture through a fine mesh sieve into bowl; reserve liquid (1 3/4 to 2 cups). Discard mint.
  • Return liquid to saucepan; add lemon juice and sugar. Bring to a boil; cook 1 minute. Add pectin, and return to a boil; cook 1 minute. Remove from heat; stir in food coloring. Skim surface. Transfer to a large container; let cool completely. Cover; let chill overnight. Transfer to a serving dish, or store in refrigerator for up to 5 days.

Found this recipe at recipegoldmine while looking for a mint jelly that does not require apples or apple juice. Made this up and my DH who so loves mint jelly with his lamb (I don't) loves this. This is an easy recipe, and I will never have to run to the Market to buy Mint Jelly again when we have lamb. Yipee!!!

1 1/2 cups of fresh mint, washed and packed
3 1/4 cups water
2 -3 drops green food coloring
1/2 teaspoon lemon juice
1 (1 3/4 ounce) box pectin
4 cups granulated sugar

Steps:

  • Crush mint leaves (I did a rough chop). Add water. Bring to a boil.
  • Remove from heat, cover and let stand 10 minutes. Strain and measure 3 cups of mint infusion.
  • Add food coloring and lemon juice. Add Sure-Jell, dissolve and bring to a rapid boil.
  • Add sugar. Cook fast, stirring occasionally until it comes to a rapid boil that cannot be stirred down, then cook 1 minute more.
  • Pour into sterilized jelly glasses and seal. I processed in the steam canner for 10 minutes to insure a good seal.

2 cups sugar
2 cups vinegar (1/2 Brown 1/2 White Vinegar)
3 teaspoons gelatin
finely chopped mint

Steps:

  • Disolve sugar in the vinegar. Use a small amount of this mixture to disolve the gelatine. Add the disolved gelatine back into the vinegar sugar mixture. Add finely chopped mint and green food colouring if needed.
  • Pour into steralised jars and store in the fridge.

  • Pick through your mint to be sure that it’s clean, and rinse it if necessary. Measure out 2 well-packed cups of mint leaves and stems. Transfer the mint to a heat-proof bowl and pour the hot water over the mint. Make sure that the mint is fully submerged in the water, and allow the mixture to steep for 20 minutes.
  • Pour the mixture through a fine-mesh strainer or cheesecloth into another container, reserving the mint-infused liquid, and discarding the mint leaves and stems.
