LIME BARS



Lime Bars image

A different take on the lemon bars we all love. I actually prefer them to lemon. This is my favorite bar cookie and I'm asked to bring it when going to a potluck or picnic. The recipe says it serves 36, but you can't eat just one of these delicious, tangy lime bars. You can omit the glaze and sprinkle with powdered sugar if that's your preference.

2 cups all-purpose flour
½ cup confectioners' sugar
½ teaspoon salt
1 cup butter
4 eggs
⅓ cup lime juice
¼ cup all-purpose flour
2 cups white sugar
2 teaspoons grated lime peel, or more to taste
½ teaspoon baking powder
1 drop green food coloring, or as desired
1 ½ cups confectioners' sugar
1 tablespoon lime juice
1 teaspoon grated lime peel

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 12x15-inch baking dish.
  • Mix 2 cups flour, 1/2 cup confectioners' sugar, and salt in a bowl; cut in butter with a pastry cutter until crust mixture resembles crumbs. Pat crust evenly into bottom of the prepared baking dish.
  • Bake crust in the preheated oven for 10 minutes.
  • Whisk eggs, 1/3 cup lime juice, 1/4 cup flour, white sugar, 2 teaspoons lime peel, baking powder, and food coloring in a bowl; pour over the crust.
  • Return baking dish to oven; bake until filling is set, about 25 minutes. Cool thoroughly.
  • Whisk 1 1/2 cup confectioners' sugar, 1 tablespoon lime juice, and 1 teaspoon grated lime peel to make a smooth glaze; spread evenly over cooled lime bars. Let glaze set before serving.

1 cup flour
1/2 cup cold butter
2 large egg yolks
1 teaspoon water
1 1/2 cups white sugar
1/2 cup cornstarch
1/2 cup water
1/2 cup fresh lime juice
3 large egg yolks (you figure it out)
2 teaspoons butter, at room temperature
1 1/2 cups boiling water
2 teaspoons lime zest
green food coloring (optional)
5 large egg whites, at room temperature
1 1/2 cups berry sugar

Steps:

  • In a large bowl add flour and cut in butter until crumbly.
  • Mix in yolks and enough cold water to make a smooth dough.
  • Wrap in plastic and chill for 15 minutes.
  • Roll out and line a pie plate, pre bake in a 400* oven for 15 to 17 minutes.
  • Use weights or rice or beans.
  • Filling-------------------.
  • Combine sugar, cornstarch, water and lime juice in a medium saucepan.
  • Whisk until smooth.
  • Stir in yolks and butter until well combined.
  • Gradually add boiling water.
  • Bring mixture to a boil.
  • Reduce and simmer for 1 minute.
  • Remove from heat.
  • Add zest and food coloring if using.
  • Mix well.
  • Turn into the cooled pie shell.
  • For Meringue------------------------èÀ.
  • Beat whites until stiff peaks form.
  • Slowly beat in sugar until dissolved.
  • Spoon meringue onto filling.
  • Bake in a 350* oven for 15 minutes or until meringue is light brown.

KEY LIME BARS

This recipe is based on the famous Key lime pie from Joe's Stone Crab restaurant in Miami Beach. If you can't find Key limes, use regular fresh lime juice.

1 cup plus 2 1/2 tablespoons finely ground graham cracker crumbs
1/3 cup sugar
5 tablespoons unsalted butter, melted
3 large egg yolks
1 1/2 teaspoons finely grated lime zest
2/3 cup fresh Key lime juice (about 23 Key limes total)
1 can sweetened condensed milk (14 ounces)
1/4 cup heavy cream
2 Key limes, thinly sliced into half-moons

Steps:

  • Make crust: Preheat oven to 350 degrees. Stir together graham cracker crumbs, sugar, and butter in a small bowl. Press evenly onto bottom of an 8-inch square glass baking dish. Bake until dry and golden brown, about 10 minutes. Let cool completely on a wire rack. (Leave oven on.)
  • Make filling: Put egg yolks and lime zest in the bowl of an electric mixer fitted with the whisk attachment. Mix on high speed until very thick, about 5 minutes. Reduce speed to medium. Add condensed milk in a slow, steady stream, mixing constantly. Raise speed to high; mix until thick, about 3 minutes. Reduce speed to low. Add lime juice; mix until just combined.
  • Spread filling evenly over crust using a spatula. Bake, rotating dish halfway through, until filling is just set, about 10 minutes. Let cool completely on a wire rack. Refrigerate at least 4 hours (or overnight).
  • Cut into 2-by-2-inch bars. Put cream in the clean bowl of an electric mixer fitted with the clean whisk attachment. Mix on medium-high speed until stiff peaks form. Garnish bars with whipped cream and a slice of lime.

4 large egg yolks
2 large eggs
3/4 cup sugar
1/2 cup freshly squeezed lime juice
4 tablespoons unsalted butter, cut into small pieces
Grated zest of 2 limes
1 1/2 recipes Swiss Meringue

Steps:

  • Whisk together egg yolks and eggs. Combine with sugar and lime juice in small saucepan. Cook over medium-low heat, stirring constantly, 8 to 10 minutes, or until mixture is thick enough to coat back of spoon.
  • Stir to cool slightly. Strain into small bowl; add butter, a piece at a time, stirring until smooth. Stir in zest; let cool completely. Cover with plastic; refrigerate until needed.
  • Heat oven to 200 degrees. Trace three 6-inch circles on parchment; place, penciled side down, on 12-inch-by-18-inch baking sheet.
  • Fill clean pastry bag fitted with an Ateco #12 plain tip with meringue, reserving about 1 1/2 cups; pipe out meringue, starting in center of each circle, spiraling out to circleâ??s edge. Create 1-inch-tall wall of meringue peaks by piping along outside of circle using same tip to create smooth peaks, or change tips for a more decorative edge. If making bite-size tarts, follow above spiraling process on sixteen 2-inch circles, creating 3/4-inch wall.
  • Place the baking sheets in the oven, and bake about 20 minutes. Reduce the heat to 175 degrees, and bake 40 to 60 minutes more until meringue is dry and crisp but still white. Let stand to cool completely on baking sheets. The shells can be packed in airtight containers and stored for several weeks in dry weather.
  • Heat oven to 475 degrees. Fill cool meringue tarts with chilled lime curd. Rewhip remaining meringue on high speed until stiff, about 5 minutes. Fill pastry bag fitted with an Ateco #5 star tip; pipe a ring of decorative peaks on top of lime curd. Bake until lightly browned, about 2 minutes. Serve immediately.

Steps:

  • Preheat oven to 350 degrees F. Generously butter 13x9inch baking pan. Combine 2 cups flour, butter, 1/2 cup powdered sugar, ground almonds, lime peel and salt in processor and process until moist clumps form. Press onto bottom of prepared pan. Bake until edges are golden, about 20 minutes. Whisk sugar, eggs, lime juice, baking powder and remaining 1/4 cup flour in large bowl until well blended. Pour over hot crust. Bake until topping is set and lightly golden, about 25 minutes. Cool in pan on rack. Sift additional powdered sugar over top. Cut into squares.

Meringue is easy to make, but there are a few things you can do to increase your success rate. First of all, it's good to know that cold eggs are easier to separate, but room-temperature whites make for better meringue. So be sure to give your whites a little time on the counter before getting to work. Secondly, make sure to keep all bits of egg yolk out of the whites. Fat is the enemy of meringue. And double-check that all of your tools and bowls are clean and fat-free as well.

8 tablespoons (1 stick) unsalted butter, cut into small pieces, plus more for greasing the pan
1 1/4 cups all-purpose flour
1/4 cup confectioners' sugar
1/4 cup packed dark brown sugar
1/2 teaspoon kosher salt
One 14-ounce can sweetened condensed milk
1 teaspoon lime zest plus 3/4 cup lime juice (from 5 to 6 limes)
4 large egg yolks
Pinch kosher salt
3 large egg whites
1 cup granulated sugar

Steps:

  • For the cookie base.
  • Preheat the oven to 350 degrees F. Butter a 9-inch square baking pan and line with parchment paper, leaving a 2-inch overhang on 2 sides. In a large bowl using an electric mixer, beat the flour, confectioners' sugar, brown sugar and salt on medium speed until well combined. Add the butter and beat until the crumbs are evenly moistened. Tip the crumbs into the prepared pan and pat down to make an even base. Bake the base until deep golden and set, 20 to 25 minutes. Transfer to a rack to cool, about 30 minutes. For the filling: In a large bowl, whisk together the sweetened condensed milk, lime zest and juice, egg yolks and salt. Pour the mixture over the baked cookie base and spread it into an even layer. Bake the filling until just set, 8 to 10 minutes. Transfer to a rack to cool, about 30 minutes, then cover with plastic and refrigerate until firm, at least 4 hours. For the topping: Just before serving, make the topping. In a large bowl (or the bowl of a stand mixer fitted with the whisk attachment), add the egg whites. In a small saucepot fitted with a candy thermometer, heat the sugar and 1/4 cup water over medium-high heat without stirring. When the thermometer hits about 220 degrees F, beat the egg whites with an electric mixer on medium speed until just frothy and the yellowish hue has disappeared. When the sugar reaches 238 degrees F, increase the mixer speed to high and, with the mixer running, pour the sugar syrup into the bowl in a thin stream. Continue to beat the mixture until shiny, stiff peaks form and the mixture is cool, about 6 minutes. Scoop the meringue on top of the filling and use an offset spatula to swirl it around into decorative swoops and spikes. Using a mini (kitchen) blowtorch, toast the topping to an even golden brown. Cut into bars and serve.
