1 tablespoon Cooking Oil
1 pound Pork Tenderloin
1 teaspoon Garlic Powder
1 teaspoon Onion Powder
3 teaspoon Dried Oregano
1 3/4 teaspoon Salt
to taste Ground Black Pepper
1 teaspoon Dried Parsley
1/2 teaspoon Dried Thyme
1 Lime
1 Orange
1 cup Fresh Parsley
2 clove Garlic
2 tablespoon Red Wine Vinegar
1/4 teaspoon Crushed Red Pepper Flakes
1/2 cup Extra-Virgin Olive Oil

Steps:

  • With a fork, poke some holes into the Garlic Powder (1 teaspoon). In a bowl, place the pork and add the Dried Parsley (1 teaspoon), Dried Thyme (1/2 teaspoon), Ground Black Pepper (to taste), Salt (1 teaspoon), Pork Tenderloin (1 pound), Dried Oregano (1 teaspoon), Lime (1), the juice from the Orange (1) and Onion Powder (1 teaspoon). Cover and let marinate in the fridge for at least 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Grease a cast iron skillet with Cooking Oil (1 tablespoon). Sear the meat for 3 minutes on each side.
  • Put the entire skillet in the oven and cook the meat for 12-15 minutes at 400 degrees F (200 degrees C), flipping halfway through. Let sit for after removing for several minutes.
  • Meanwhile, make the chimichurri. In a food processor, add Fresh Parsley (1 cup), Garlic (2 clove), Dried Oregano (2 teaspoon) Red Wine Vinegar (2 tablespoon), Crushed Red Pepper Flakes (1/4 teaspoon), Salt (1/4 teaspoon), and Ground Black Pepper (0 to taste), and blend. Add in Extra-Virgin Olive Oil (1/2 cup).
  • Drizzle the chimichurri over the tenderloin.

6 large garlic, peeled and minced
2 jalapenos, seeded and minced
¼ cup red wine vinegar
Abou ½ cup finely chopped fresh flat-leaf parsley
About ½ cup finely chopped fresh oregano leaves
3 limes, juiced
1 cup extra-virgin olive oil
1 tsp kosher salt
1 tsp whole black peppercorns
2 pork tenderloins (about 1 lb each), trimmed of excess fat, patted fry
Kosher salt and freshly ground black pepper
Extra-virgin olive oil
Lime juice, for drizzling
Parsley sprigs, for garnish

Steps:

  • Combine the garlic, jalapeno and vinegar in a bowl. Stir in the parsley, oregano, and lime juice. Whisk in the olive oil and season with salt and pepper. Mix well and set aside at room temperature to allow the flavors to marry.
  • Reserve 1/2 cup of the chimichurri to serve and marinate the pork in the rest. Put the pork and marinade in a sealable plastic bag and set aside in the refrigerator for 30 minutes.
  • Preheat an outdoor charcoal grill or oven broiler to high.
  • Remove the pork from the marinade, wiping off any excess. Season both sides with a generous amount of salt and pepper. Drizzle with olive oil and place on the grill. Grill the pork on the hottest part of the barbecue for 4 minutes per side, until well charred. Allow the tenderloin to rest for about 5 minutes prior to slicing. Spoon some chimichurri over the meat, drizzle with lime juice, garnish with parsley, and serve with the remaining sauce at the table.

  • 1. Cut prok lengthwise almost through to other side. Open and flatten to butterfly. 2. Combine all ingredientsa to marinade. 3. Preheat broiler. Broil 4 in from heat about 5-8 mins per side. Let rest 5 mins.

1 1/2 lbs pork tenderloin (2 total)
1/4 cup frozen limeade concentrate, thawed
1 tablespoon oil
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Butterfly each pork tenderloin by cutting lengthwise 3/4 of the way through tenderloin, being careful not to cut through completely.
  • Open tenderloins; place in ziplock bag.
  • In a small bowl, combine remaining ingredients and mix well.
  • Pour over tenderloins and turn to coat.
  • Seal bag and let marinate at room temperature 10 minutes.
  • Cook on grill 12-15 minutes, turning once.
  • Cut into serving-sized pieces.

If you like lime, parsley and garlic you'll love this tangy sauce for any type of meat, fish or chicken - I even tried it on pork and it was yummy. I use Via Nueva brand lemon salt (Sal Con Limon) and just love it on almost everything. You can order it online at vianueva.com using paypal. I save the Chimichurri sauce in a jar with a tight fitting lid for up to 2 weeks, thats all its ever lasted before being eaten. Fresh squeezed limes add alot to the flavor. You can use less olive oil too.

1 bunch fresh flat leaf parsley, chopped
1 cup olive oil
1/3 cup fresh lime juice
2 tablespoons white vinegar
6 garlic cloves, chopped
1 shallot, chopped
1 teaspoon salt (I use lemon salt, Sal Con Limon)
1/2 teaspoon black pepper or 1/2 teaspoon white pepper
1/2 teaspoon crushed red pepper flakes (optional)

Steps:

  • Parsley should be chopped up pretty small and should equal about 1 cup. You can chop the garlic and shallots in a little food processor if you have one but I would hand chop the parsley.
  • Combine and mix all the ingredients. Reserve half of the marinade for dipping. Marinade your steak (or whatever your grilling) in the other half for as little as 1 hour but overnight is best for beef.
  • Grill your steak (or whatever your grilling) and serve the reserved marinade for dipping or topping.
