LIME-MARINATED GRILLED SALMON
The fresh lime juice and mustard add a nice tang to this moist and flaky grilled salmon. I came up with this marinade after tasting something similar at a friend's house and it is now one of our favorite ways to do fish. You may also use other firm fish steaks instead of salmon; halibut, tuna and swordfish all work well.

Steps:
- In an 11x7-inch baking dish whisk together olive oil, lime zest, lime juice, garlic and season with salt and pepper to taste (a fair amount of each).
- Place salmon in baking dish, cover and allow to marinate in refrigerator 15 - 30 minutes, then flip salmon to opposite side and allow to marinate 15 - 30 minutes longer. Preheat a grill over medium-high heat during last 10 minutes of marinating.
- Brush grill grates with oil. Place salmon on grill and grill about 3 minutes per side or until just cooked through (turn carefully as the salmon will be fragile).
- While salmon is marinating prepare coconut rice. In a medium saucepan bring coconut water, coconut milk, rice and salt to a full boil.
- Cover and simmer until liquid has been absorbed (there may be just a little bit of excess liquid in center which you can drain off), about 20 minutes. Fluff with a fork, then let rest 5 minutes.
- While the salmon is grilling prepare salsa. In a medium bowl toss together mango, bell pepper, cilantro, red onion, avocado, lime juice, olive oil and coconut water. Season with salt and pepper to taste.
- Serve salmon warm with coconut rice top with avocado mango salsa.

THE EASIEST SPICY LIME GRILLED SALMON
An easy weeknight salmon recipe with just a few ingredients!

Steps:
- Use a microplane to zest the lime and toss the zest into a small mixing bowl.
- Juice the lime, adding the lime juice to the lime zest.
- Add olive oil, minced garlic, soy sauce, crushed red pepper flakes, salt, and pepper to lime juice and whisk to combine.
- Lay salmon in a small baking dish (I like to use a glass container with an airtight lid) and pour the marinade over the fish. Turn the salmon to coat and make sure it's covered in marinade. If you have skin on the salmon, place the filet skin side up so that the marinade can soak in.
- Cover salmon with the airtight lid and store in the fridge for thirty minutes to an hour or until you're ready to eat.
- Heat a grill pan over medium-high heat until it's piping hot (you could also use your outdoor grill). Use a heat-resistant pastry brush to brush olive oil over the grill grates to prevent the fish from sticking.
- Remove fish from marinade and place it on the hot grill pan. Let it cook - without touching it! - for 5-7 minutes (see recipe notes) until salmon has lightened in color. Use a thin spatula to pick up the fish and flip it over on the grill. (If you've oiled your grill, the salmon shouldn't stick too much once those nice grill marks have developed). Cook for another 5-7 minutes until fish is cooked to your desired level of doneness.
- Remove salmon from the grill and serve immediately with extra lime wedges (optional). You could also add an extra sprinkle of flaky salt or red pepper flakes to the fish if you like.

Steps:
- Place fish on plate.
- Combine cilantro, garlic, lime juice, oil and salt in a bowl.
- Set 2 tablespoons aside in a separate bowl.
- Pour the cilantro mixture over the fish (do not use the 2 Tbsp reserved marinade).
- Cover and let it sit 10 minutes.
- Spray broiler rack with nonstick cooking spray.
- Place salmon on rack and brush with 1 tablespoon marinade.
- Broil 6" from heat about 3-4 minutes.
- Turn steaks over and brush with remaining tablespoon of marinade.
- Broil 3 more minutes or until cooked through.
- Note: I have used two very thick salmon steaks instead of the four 3/4 inch thick ones that the recipe calls for, and I have used the same amount of marinade.
- However, since thicker steaks will take longer to cook, the marinade can burn.
- To compensate for this, I add a little bit of marinade at a time.
- For example, if the salmon steaks are 1- 1 1/2 inch thick or more, they can take around 10 minutes to cook.
- So I brush the salmon steaks with less marinade, around 1/2 tablespoon.
- I then remove them from the broiler after 2 1/2- 3 minutes, and add a little more marinade, reserving enough for two more applications.
- Then I broil for another 2 1/2 minutes.
- I then turn the salmon over and add more marinade, still reserving a little.
- I broil another 2 1/2 minutes.
- I then add the remaining marinade and broil the remaining 2 1/2 minutes or until cooked through.
- This may seem tiresome, but it's well worth it.
- The marinade is great and you definitely don't want it to burn!

- Combine the 8 marinade ingredients (plus Old Bay if using) in lrg plastic bag, add salmon fillets & marinate for 6-8 hrs before grilling. Reserve marinade for Steps 2&3.
- While salmon grills, transfer reserved marinade to a sml saucepan by pressing through a sieve. This allows the bulk & flavors of the garlic & chutney to join the sauce w/o making it chunky.
- Over low-med heat only, add cream cheese by the spoonful & incorporate it into the marinade until the sauce reaches your desired consistency. Remember this sauce will thicken further as it cools & is not meant to resemble gravy. It should be a lightly-creamed glaze that still shines w/the flavors of the marinade.
- NOTE FROM ME: For those who might like to try an alcohol-flavored marinade option, I've been using a cognac extract add lately that we adore & guests have esp appreciated. I suppose that a bit of the real thing or other extracts would also work well, but give it a try if the idea appeals to you.

- Prepare the grill: Make sure your grill grates are clean. Have your grilling spatula, tongs and a clean platter or plate by the grill. Set up a two-zone grilling method, with one side of the grill hotter than the other. If using gas, set the burners on one side at medium-high heat, and the other on medium. For charcoal, pile the briquettes higher on one side than the other but make sure you still have about 3 inches of space between the briquettes and the grill grates.
- Prepare the salmon: In a small bowl, combine lime zest and juice from half of the lime, salt, olive oil, and chili pepper. Brush some oil on the skin side of the salmon. Then brush the lime mixture on the flesh side of the salmon. Make sure the zest is evenly distributed. Set it in the fridge while you prepare the salsa.
- Make the salsa: Peel the cucumber, then slice it in half lengthwise. You should have two, long half-moon shaped cucumbers. Use a spoon and drag it from one end of the cucumber to the other to remove the seeds. Place the cucumber flat side down, and cut into thin strips about the width of a pencil, then cross-cut them into small dice. For the mango, peel and slice the halves off from the center seed, cut into thin strips, then cross-cut into small dice. Add the cucumber and mango to a medium bowl, then add the cilantro, red onion, juice from the remaining half lime, minced garlic clove, jalapeño pepper, and salt. Toss to combine.
- Grill the salmon: Use grilling tongs, dip a wad of folded paper towels in vegetable oil. Rub it on the grill grates, both the hot and cooler sides. Place the salmon on the hot side of the grill flesh side down, and skin side to the sky. Close the lid and cook the salmon for 1-3 minutes, depending on how thick your fillets are. Lift the lid, and, using tongs and spatula, carefully slide the spatula under the salmon while holding it with the tongs and place the salmon skin-side down on the cooler side of the grill. Grill for 2 to 5 minutes, depending on how thick your fillets are. Salmon should flake easily and be slightly opaque in the center.
