FLUFFY LIME SALAD



Fluffy Lime Salad image

Crunchy walnuts, plump marshmallows and tangy pineapple dot this creamy lime salad. It's a refreshing side dish for a family meal or a yummy addition to a potluck dinner. -Susan Ormond, Jamestown, North Carolina

Number Of Ingredients 7

1 can (8 ounces) crushed pineapple
1 package (3 ounces) lime gelatin
3 tablespoons water
2 packages (3 ounces each) cream cheese, softened
1 cup chopped walnuts
1 cup miniature marshmallows
1 cup heavy whipping cream, whipped

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. In a saucepan, combine gelatin, water and reserved juice. Cook and stir over low heat until gelatin is dissolved. Refrigerate until syrupy, about 30 minutes., In a small bowl, beat cream cheese until fluffy. Stir in gelatin mixture, walnuts, marshmallows and reserved pineapple. Fold in the whipped cream. , Transfer to a 1-qt. serving bowl. Cover and refrigerate for 2 hours or until set.

LIME JELL-O MARSHMALLOW HOLIDAY MOLD

This is my own version of our family's Holiday Lime Jell-O Wreath which is always a hit, I hope you enjoy it too!

Number Of Ingredients 9

1 (6 ounce) box lime Jell-O gelatin
2 cups boiling water
1 cup cold water, with ice to fill measuring cup up to 1-3/4 cup
8 maraschino cherries, halved
1 (8 ounce) package cream cheese (room temperature)
1/2 cup walnuts, chopped
1 (8 ounce) can crushed pineapple in juice
2 1/2 cups mini marshmallows
1 cup shredded coconut (optional)

Steps:

  • Empty Lime Jell-O into large bowl, add 1 cup boiling water; stir until Jell-O dissolved. Add second cup of boiling water and stir. Add cold water & ice, stir until ice dissolved. Put in refrigerator until loosely jelled, about 1-1/2 hour.
  • Cut Maraschino cherries in half and place, cut side up, into a Jell-O ring mold. Bunt Cake pan works great too!
  • Cut cream cheese into small squares and drop into cooled Jell-O then add pineapple, with hand mixer blend on medium until cheese gets creamy with lots of small chunks remaining (approx. 1 minute).
  • Add walnuts and marshmallows, fold in with wooden spoon or spatula until completely coated with Jell-O mixture.
  • Poor into Jell-O mold. Sprinkle top with coconut (hint, it looks like holiday snow and keeps the Jell-O from sliding on the platter). Cover and chill for 6 hours, or overnight!
  • To remove from mold: Fill sink with HOT water. Hold mold in water for about 15 seconds. Place platter on top and Turn Over! Let mold slide out! WA LA! Place back in the refrigerator until ready to serve. Looks like a Christmas Wreath with red Berries! Great addition to your holiday table!

HOLIDAY GELATIN MOLD

No matter where I take this attractive salad, I'm asked to share the recipe. With its red and green layers, it dresses up any holiday buffet. I'm a retired teacher who loves to cook-especially dishes I can make ahead, like this one.

1 can (8 ounces) sliced pineapple
1 package (3 ounces) lime gelatin
4 cups boiling water,divided
2 tablespoons lemon juice
1 package (3 ounces) lemon gelatin
6 ounces cream cheese, softened
1/3 cup mayonnaise
1 package (3 ounces) raspberry gelatin
2 medium firm bananas

Steps:

  • Drain pineapple, reserving juice. In a bowl, dissolve lime gelatin in 1 cup boiling water. Combine the pineapple juice, lemon juice and enough cold water to measure 1 cup; add to dissolved gelatin. Cut pineapple slices in half; arrange on the bottom of a 12-cup ring mold coated with cooking spray., Pour a small amount of lime gelatin over the pineapple; refrigerate until set. Add remaining lime gelatin; refrigerate until firm. In a small bowl, dissolve lemon gelatin in 1 cup boiling water. Refrigerate until partially set. Beat until light and fluffy., In another small bowl, beat cream cheese until fluffy. Stir in the mayonnaise. Fold in whipped gelatin; pour over lime layer. Refrigerate until firm., Dissolve raspberry gelatin in remaining boiling water. Slice bananas; place over lemon layer. Carefully spoon the raspberry gelatin over bananas. Refrigerate until firm or overnight.

This is a light Jello salad that works well in a Jello mould or just in a bowl. We have served this every Thanksgiving and Christmas for as long as I can remember. I suppose you could try other Jello Flavors, but we like the Lime so much, I never have.

16 marshmallows
1 cup milk
1 (3 ounce) package lime Jell-O gelatin
6 ounces cream cheese (softened)
15 -20 ounces canned crushed pineapple (drained)
1 cup heavy whipping cream
2/3 cup mayonnaise

Steps:

  • Melt the marshmallow in the milk, over low heat, stirring frequently.
  • Put lime Jello mix into a large bowl.
  • Pour the melted marshmallow mixture over the Jello and mix well.
  • Break cream cheese into small pieces in to the Jello mixture and stir until well blended.
  • Add drained pineapple and mix.
  • Cool.
  • Whip the cream and fold in to the Jello mixture with the mayonnaise.
  • Pour into Jello mold (or bowl) and chill until firm.
  • (You can substitute Cool Whip for the whipped cream if so desired, I just used the 2/3 cup measuring cup, and filled it up twice, it turned out good!).

This is a festive and flavorful salad that is perfect for the holidays and easy to assemble. Serve with your favorite dressing(s) on the side so that it can be made ahead of time without wilting. Lemon-thyme vinaigrette goes really well with this.

½ (10 ounce) package fresh spinach, or more to taste
½ (5 ounce) package arugula leaves, or more to taste
2 canned beets, cut into 1/4-inch pieces, or more to taste
1 (4 ounce) log soft goat cheese, or to taste
3 tablespoons unsalted shelled pistachios
kosher salt and ground black pepper to taste

Steps:

  • Neatly arrange spinach in a 10- to 12-inch circle with leaf tips facing outward. Arrange arugula on top of spinach, leaving the outer tips of the spinach exposed. Scatter beets over the arugula. Arrange pieces of goat cheese around the wreath. Sprinkle pistachios on top. Season salad lightly with salt and pepper.

Quick and easy to make.This make ahead salad graced my grandmas dining table every time we ate at her house. That was about twice a month and holidays. Sometimes we went to my Aunt's house- where we had fried chicken and mashed potatoes every time. When they came to our house we had meatloaf or spaghetti.

2 1/2 cup(s) crushed pineapple, drained
1/2 cup(s) grated american cheese
1/2 cup(s) chopped celery
1/4 teaspoon(s) salt
3 ounce(s) pkg. lime jello
1/2 cup(s) chopped pimento
1/2 cup(s) chopped walnuts
1 cup(s) cool whip
- sliced in half pimento stuffed olives

Steps:

  • Drain pineapple; heat pineapple juice to boiling. Add to lime jello; stir till jello is dissolved. Chill till partially set; add pineapple. cheese. pimento, celery, nuts and salt. Fold in cool whip. Place a row of sliced olives in bottom of 9-inch ring mold. Pour Jello mixture into mold; chill until firm, turn out onto plate when set.
