CHILE LIME SAUCE



Chile Lime Sauce image

This chili lime sauce is a great side sauce for dipping everything from pork kebabs and chicken tenders, to topping fajitas.

Number Of Ingredients 9

2 small green serrano chiles , seeded, finely chopped
1/2 cup freshly squeezed lime juice
2 tablespoons lime zest , from 2 limes
1/3 cup chicken stock
1/4 cup fresh cilantro
2 to 3 cloves garlic, quartered
1 teaspoon sugar
1 teaspoon salt
A pinch freshly ground black pepper

Steps:

  • Gather the ingredients.
  • Place all ingredients into a food processor blender. Blend mixture well.
  • Bring sauce to a simmer over medium-high heat for 1 to 2 minutes. Reduce heat to low and let simmer for 5 more minutes. Stir occasionally. Remove from heat and let cool 5 to 10 minutes before serving.
  • Follow the above directions, if using as a marinade, but let the sauce cool for 30 minutes before using. Marinade beef for 6 to 12 hours, chicken and pork for 4 to 6 hours, fish, seafood, and vegetables for 30 minutes.
  • Make this sauce ahead of time and store in an airtight container in the refrigerator for up to one week after preparation.

2 tablespoons lime juice
1/4 cup low-sodium soy sauce
1 tablespoon rice vinegar
1 tablespoon thinly shredded ginger
1 green onion, green part, minced
2 teaspoons black sesame seeds, toasted
1 1/2 teaspoons sesame oil

  • Combine ingredients in bowl. Cover and chill. Keeps up to a week.

This condiment, called nam pla prik, is found on virtually every home and restaurant table in Thailand.

1/4 cup (60 ml) fresh lime juice
2 tablespoons fish sauce
1 large garlic clove, minced
1/4 red or green jalapeño, unseeded and thinly sliced crosswise, or more to taste
1 packed tablespoon light brown sugar

Steps:

  • In a small bowl, whisk together the lime juice, fish sauce, garlic, jalapeños, and brown sugar. (Or, in a 12-ounce/180-ml or larger jar with a lid, combine the ingredients, cover, then shake vigorously.) Dip a piece of lettuce in the dressing and check the seasonings; add more jalapeños, if you like. The sauce should have a balance of hot, sweet, sour, and salty, which is typical of Thai foods. Keep, covered, in the refrigerator for up to 2 weeks.

1/4 cup canola oil
2 tablespoons garlic, minced
2 limes, juice and zest of
salt, to taste (kosher or sea)
pepper, to taste (freshly ground)

Steps:

  • Heat the oil in a small saucepan until very hot.
  • Add the garlic and cook, swirling the pan, until just golden.
  • Remove from heat and whisk in the lime zest and juice.
  • Season with salt and pepper.
  • Drizzle over cooked fish.

3 cloves garlic, thinly sliced
1⁄2 cup fish sauce
1⁄4 cup fresh lime juice (about 2 limes)
1 tablespoon light brown sugar

Steps:

  • In a small jar add the Thai chilies and garlic. Then add the fish sauce, lime juice, 1 to 2 tablespoons of water and brown sugar. Mix until the sugar is dissolved. Secure an airtight lid. For the best flavor, refrigerate for 2 hours before using.

1 clove garlic
2 fresh Thai bird chilies
2 1/2 tablespoons sugar
1/3 cup soy sauce, preferably Chinese style
2 1/2 tablespoons fresh lime juice with pulp
1/4 cup water, or to taste

Steps:

  • 1. Place the garlic, chilies and sugar in a mortar and pound into a paste. (You can also chop the garlic and chilies by hand.) Transfer to a small bowl and add the soy sauce, lime juice and water. Stir until well blended. This sauce will keep up to 3 weeks if stored in the refrigerator in a tight-lidded jar.

  • It's the balance of sour lime juice, candy-like coconut sugar, salty fish sauce, and spicy hot chilies with lots of garlic and cilantro that give this sauce an authentic Thai flavor.
  • Make a sugar syrup by dissolving the sugar in one tablespoon of water. Heat in the microwave for about 15 seconds. Do not boil, just get it hot.
  • Slice the cilantro gently so it doesn't bruise and squeeze out all of the juices. Avoid chopping it up. It needs to be pieces about 1/2 inch long.
  • Peel the garlic cloves, and chop it or press it to get about 3 tablespoons of finely chopped garlic.
