LIME FOOL WITH STRAWBERRIES AND KIWI



Lime Fool with Strawberries and Kiwi image

1/4 cup whipping cream
1/4 cup fresh lime juice
1 teaspoon grated lime peel
6 ounces imported white chocolate (such as Lindt), chopped
3/4 cup chilled whipping cream
3 tablespoons sugar
2 cups sliced hulled strawberries
2 kiwi fruit, peeled, thinly sliced
4 whole strawberries
4 lime slices

Steps:

  • Bring first 3 ingredients to simmer in heavy small saucepan. Reduce heat to low. Add chocolate and stir until melted and smooth. Pour into medium bowl. Refrigerate until cool but not set, stirring occasionally, about 25 minutes.
  • Beat 3/4 cup chilled cream in another medium bowl to soft peaks. Add sugar and beat until stiff. Fold cream into white chocolate mixture.
  • Place scant 1/4 cup sliced berries in each of four 8- to 10-ounce wineglasses. Press 3 kiwi slices against sides of each glass. Spoon 1/3 cup cream mixture into each glass. Spoon scant 1/4 cup sliced berries in center of each, pressing into center so berries do not show at sides of glasses. Spoon remaining cream over; smooth tops. Cover and chill at least 2 and up to 6 hours.
  • To serve, using small knife, make lengthwise cuts in whole strawberries without cutting through stem ends. Fan 1 strawberry atop each dessert. Attach lime slice to rim of each glass.

1 cup labne (thick Greek-style) yogurt or sour cream
1/2 cup heavy cream
3 tablespoons sugar, preferably organic washed cane sugar, or to taste
2 ripe mangoes, peeled and coarsely chopped
2 teaspoons fresh lime juice
4 pitted dates, thinly sliced
2 tablespoons chopped toasted pistachios, optional

Steps:

  • In a medium bowl, whisk the yogurt to loosen it. In another medium bowl, beat the cream with 1 1/2 tablespoons of the sugar until it thickens slightly (it should not be thick enough to hold peaks). Fold the whipped cream into the yogurt.
  • In a blender or food processor, puree the mangoes, lime juice, and the remaining 1 1/2 tablespoons sugar. Add more sugar to taste, if desired. Fold the mango puree into the yogurt and cream mixture until they are partially combined.
  • Spoon the fool into 4 glasses and chill until ready to serve. Garnish with the dates and pistachios, if desired.

1 large (2 1/2- to 3-lb) firm-ripe papaya (preferably Caribbean or Mexican), peeled, seeded, and coarsely chopped (2 cups)
5 to 8 tablespoons vanilla granulated sugar (see cooks' note, below)
2 to 3 tablespoons fresh lime juice
1 1/4 cups chilled heavy cream

Steps:

  • Mash papaya flesh with a fork until smooth or pulse in a food processor until coarsely puréed. Add 5 tablespoons sugar and 2 tablespoons lime juice and stir or pulse to combine. Add more sugar and lime juice to taste (papayas vary in sweetness and acidity).
  • Beat cream in a large bowl until it holds soft peaks, then fold in papaya mixture gently but thoroughly.
  • Divide among 8 (6-ounce) glasses and chill at least 1 hour to allow flavors to develop.
