TANGY CILANTRO-LIME QUINOA SALAD

Tangy Cilantro-Lime Quinoa Salad image

This black bean quinoa salad is so fresh and tangy! It's delicious paired with creamy avocado and fresh pita bread or crackers. If you're not as big of a fan as I am of tangy/acidic dressings, feel free to reduce the amount of lime juice called for.

Provided by Angela Liddon

Categories     Vegan     Salad

Time 35m

Yield 4 servings

Number Of Ingredients 15

1 cup uncooked quinoa (or 3 cups cooked)
1 (14-ounce/398 mL) can black beans (or 1 1/2 cups cooked), drained and rinsed
1 1/2 cups fresh cilantro, finely chopped
3 medium carrots, julienned (about 1 1/2 cups) or 1 large chopped and roasted sweet potato
4 green onions, thinly sliced
Fine grain sea salt and black pepper, to taste
Lemon-Tahini Dressing (optional)
Sliced avocado (optional)
Endurance Crackers, pita bread, or crackers of choice (optional)
5 to 5 1/2 tablespoons (75 to 82.5 mL) fresh lime juice, to taste
4 tablespoons (60 mL) extra-virgin olive oil
2 large garlic cloves, minced
2 teaspoons ground cumin
2 teaspoons (10 mL) pure maple syrup, or to taste
3/4 teaspoon fine grain sea salt, or to taste

Steps:

  • To prepare the quinoa: Rinse quinoa in a fine mesh sieve. Add into pot along with 1.5 cups (375 mL) water or veggie broth. Bring to a boil, reduce heat to low-medium, and then cover with a tight-fitting lid. Simmer for 14 to 17 minutes until the water is absorbed and the quinoa is fluffy. Remove from heat and steam with the lid on for 5 additional minutes. Fluff with fork and chill in the fridge for at least 15 minutes.
  • In a large bowl, toss the quinoa, drained and rinsed black beans, cilantro, carrots (or roasted sweet potato), and green onions.
  • Whisk together the dressing in a small bowl or jar. Adjust to taste if desired. Pour onto salad and toss to combine. Season with salt and pepper to taste until everything pops.
  • Spoon into bowl and drizzle on some Lemon-Tahini Dressing. Top with sliced avocado and serve with Endurance Crackers, if desired.

CUBAN BLACK BEANS WITH CILANTRO AND LIME

Cuban Black Beans with Cilantro and Lime image

A quick and easy version of the Cuban Black beans! I'm sautéing up jalapeños, onions, and garlic and then simmering the beans until they are tender and topping them with cilantro and lime! So, so delicious!

Provided by Marzia

Categories     30 Minute Meals

Time 30m

Number Of Ingredients 11

1 tablespoon oil
1 medium red onion, diced
1-2 jalapeños, seeded + ribs removed then diced
4-5 cloves garlic, minced
2 (15 ounce cans) black beans, rinsed and drained
1 cup warm water
1 teaspoon salt
1 teaspoon ground cumin
½-1 teaspoon chipotle chili powder (optional)
2-3 tablespoons cilantro
3 tablespoons lime juice (or more!)

Steps:

  • Heat the oil in a stockpot or dutch oven over medium-high heat. Sauté the onions and jalapeños for 4-5 minutes or until they turn translucent. Add the garlic and continue to cook for 30 seconds.
  • Add the black beans, warm water, salt, cumin, and chili powder and bring to a boil. When boiling, reduce the heat so that it simmers. Allow to cook for 10-15 minutes or until most of the water evaporates leaving a thick sort of broth. At this point, if you'd like to thicken the beans a bit more you can remove about ½ - 1 cup of beans and mash them (using a potato masher or a wooden spoon) to make a thick sort of paste but this is optional. Add the beans back into the pot and stir. Top with fresh cilantro and lime juice stir to combine.

BLACK BEANS WITH CUMIN AND GARLIC

Black Beans with Cumin and Garlic image

This is a quick and delicious way to make black beans with a little zing. I served them for a dinner party and it was so easy to make them up in the afternoon and then let them heat in the crock pot on low until we were ready for dinner.

  • Add black beans, broth and salt.
  • Reduce heat to medium-low, stirring frequently until beans are heated through.

LIME CILANTRO SHRIMP AND BLACK BEAN SALAD

Lime Cilantro Shrimp and Black Bean Salad image

Lime Cilantro Shrimp and Black Bean Salad - Tender juicy shrimp, black beans, avocado, cilantro, and more coated in a lime sauce that's a FIESTA in your mouth!! An EASY and HEALTHY Mexican-inspired salad that's ready in 10 minutes!!

Provided by Averie Sunshine

Categories     Sides, Salads & Vegetables

Time 15m

Number Of Ingredients 13

one 15-ounce can black beans, drained and rinsed (I use no salt added)
1 medium ripe avocado, diced into bite-sized pieces
1 medium jalapeno pepper, sliced into thin rounds
1 small serrano chile pepper, finely minced (remove seeds for less heat); optional
1/2 medium cucumber, diced into bite-sized pieces
1/3 cup fresh cilantro finely minced, or to taste
3 tablespoons olive oil
1 pound shrimp, cleaned and deveined (I used 12-15 count large shrimp)
1 to 2 teaspoons cumin, or to taste
1 teaspoon kosher salt, or to taste
1 teaspoon freshly ground black pepper, or to taste
1/4 to 1/3 cup freshly squeezed lime juice
2 to 4 tablespoons honey, or to taste

Steps:

  • To a large bowl, add the black beans, avocado, jalapeno, optional serrano chile, cucumber, cilantro; set aside
  • To a medium skillet, add the olive oil, shrimp, evenly sprinkle with cumin, salt, pepper, and cook over medium-high heat for about 2 minutes.
  • Flip shrimp over, turn the heat to medium-low, add the lime juice, honey, stir to combine, and cook until shrimp are done, about 2 minutes. Taste the sauce. If desired, add additional lime juice, honey, salt, pepper, or cumin.
  • Transfer the shrimp and all the sauce to the bowl with the lettuce and vegetables. Stir to combine. Taste and make any other seasoning adjustments if necessary (I sprinkled with another 1/2 teaspoon cumin) and serve immediately. Salad is best fresh but will keep airtight in the fridge for up to 2 days, noting the avocado will oxidize and the vegetables will soften and release their natural juices as time passes.

LIME CUMIN BLACK BEANS

Lime Cumin Black Beans image

This can be a main meal over rice or a unique side dish. Canned beans may be used but are not as good as cooked dried beans in my opinion. A bit of hot pepper may be used to add some spice to the dish. Prep time does not include time to cook the beans.

1 cup green/brown lentils* (uncooked)
15 oz. can black beans
1 red bell pepper
1/3 cup red onion, finely diced (or 2-3 green onions for milder flavor)
6 oz. grape/cherry tomatoes (or 2 roma tomatoes)
2/3 cup fresh cilantro (large stems removed)
Avocado for serving (optional)
