LIME CREMA
This recipe for lime crema is so easy to make and can be used as a sauce for tacos, tortilla soup, & Mexican-style baked potatoes. You can add cilantro too!

Steps:
- Empty sour cream into a small bowl and set aside.
- Roll the limes on the counter for about a minute each to loosen up the juices.
- Zest both limes, ensuring you are ONLY getting the green part of the peel and not the white part.
- Cut the limes through the middle (horizontal) and using a juicer, get all the juice out.
- Add all the zest, juice, granulated garlic and salt to the sour cream and whisk well to combine. Place in the refrigerator until it's time to serve. Note that letting the lime crema sit for at least 4 hours helps the flavors to meld together better, but you can enjoy it right away too.
- Store leftover lime crema in the original sour cream container and label it!
LIME CREMA
Here's an easy recipe for a zippy version of Lime Crema. If you use yogurt as the base it's worth adding in a bit of fat (mayo or cream) as it will vastly improve the flavor. So good!

- Add all the ingredients to a blender or food processor and combine well. Add a splash of water if it isn't combining well.
- Taste for seasoning and heat. I added another pinch of salt and another squeeze of lime to this batch.

- Stir together sour cream, chopped fresh cilantro, mayonnaise, lime zest and fresh juice, and salt in a medium bowl. Cover and chill at least 15 minutes or until ready to serve. Store in an airtight container in refrigerator up to 2 days.
MEXICAN LIME CREMA

- In a medium bowl mix sour cream and garlic powder
- Add juice of 1 lime and mix well until all lime juice is absorbed or mixed into the sour cream mixture.
- Serve over tacos, soups, rice or any way you would use sour cream.
- Store in original sour cream container in fridge and use before expiry date on container.
