KEY LIME BARS
Classic Key lime pie taste in a bar! These easy-bake citrus bars are a refreshing treat for everyday or on any dessert buffet.

Steps:
- Heat oven to 350°F. Grease square pan, 9x9x2 inches.
- Mix cookie crumbs and butter thoroughly with fork. Press evenly in bottom of pan. Refrigerate while preparing cream cheese mixture.
- Beat cream cheese in small bowl with electric mixer on medium speed until light and fluffy. Gradually beat in milk until smooth. Beat in lime juice and lime peel. Spread over layer in pan.
- Bake about 35 minutes or until center is set. Cool 30 minutes. Cover loosely and refrigerate at least 3 hours until chilled. For 36 bars, cut into 6 rows by 6 rows. Garnish with lime peel. Store covered in refrigerator.

- In a large bowl, combine 2 cups flour and confectioners' sugar; cut in butter until mixture resembles coarse crumbs. LIME BARS
Even if your cookie cache is already full,you have to stuff in a batch of lime bars. Shortcake crust is tender and buttery-good. The topping has a delicate lime essence that is much more refined than lemon bars.

Steps:
- In bowl, combine flour and powdered sugar; cut in butter.
- Press into 13x9" pan.
- Bake 350°F for 20-25 minutes.
- Meanwhile, beat eggs on high till pale yellow.
- Gradually add sugar and salt and lime juice.
- Continue beating on high.
- Pour over hot crust.
- Bake another 20-25 minutes until golden brown. Sprinkle with more powdered sugar. Cool and cut into bars.
- Makes 4 1/2 dozen.
- NOTE- You may add 2 drops of green food coloring to egg mixture for that lime green color -- .
LIME BARS
A different take on the lemon bars we all love. I actually prefer them to lemon. This is my favorite bar cookie and I'm asked to bring it when going to a potluck or picnic. The recipe says it serves 36, but you can't eat just one of these delicious, tangy lime bars. You can omit the glaze and sprinkle with powdered sugar if that's your preference.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 12x15-inch baking dish.
- Mix 2 cups flour, 1/2 cup confectioners' sugar, and salt in a bowl; cut in butter with a pastry cutter until crust mixture resembles crumbs. Pat crust evenly into bottom of the prepared baking dish.
- Bake crust in the preheated oven for 10 minutes.
- Whisk eggs, 1/3 cup lime juice, 1/4 cup flour, white sugar, 2 teaspoons lime peel, baking powder, and food coloring in a bowl; pour over the crust.

LIME MELTAWAYS

- In a medium bowl, whisk together flour, cornstarch, and salt. Set aside.
- In the bowl of an electric mixer fitted with the whisk attachment, cream butter and 1/3 cup sugar until fluffy. Add lime zest, juice, and vanilla; beat until fluffy. Add dry ingredients, and mix on low speed until blended.
- Divide the dough in half. Use two 8-by-12-inch pieces of parchment paper to wrap around and shape each half of the dough into 1 1/4-inch-diameter logs. Chill at least 1 hour
- Heat oven to 350 degrees. Line two baking sheets with parchment. Remove parchment from logs; slice dough into 1/4-inch-thick rounds. Place rounds on baking sheets, spaced 1 inch apart. Bake cookies until barely golden, about 15 minutes.
- Transfer cookies to a wire rack to cool slightly, 8 to 10 minutes. Place remaining 2/3 cup powdered sugar in a resealable plastic bag. While still warm, place cookies in the sugar-filled bag; toss to coat. Store baked cookies in an airtight container for up to 2 weeks.

- Preheat oven to 325 degrees and line a baking sheet with parchment paper. In a large bowl mix butter and powdered sugar together until sugar is completely dissolved and no lumps remain. Add vanilla, salt and lime zest then stir until combined.
- Sift flour and baking powder over butter mixture and mix just until dry ingredients are mixed into butter and no dry spots remain-the dough will still look a bit dry and will not yet have formed a cohesive mass.
- Add lime juice and mix only until the dough comes together-don't overwork the dough or cookies will become tough. Scoop approximately 2 tsp of dough and roll into a 1" ball. Place on baking sheet and repeat with all remaining cookie dough-they'll spread in the oven so there's no need to press them down.
- Bake 14-16 minutes or until the cookies become just slightly golden brown around the edges. Remove from oven and carefully transfer to a cooling rack, as they're quite fragile when warm.
- When the cookies have cooled a bit but are still slightly warm, add approximately a cup of powdered sugar to a small bowl. Gently roll the cookies in the sugar to coat then allow them to cool completely on the rack.

- Preheat the oven to 350, and line a small baking sheet with parchment paper.
- Crush the graham crackers to get 1/4 cup of crumbs, and set aside.
- In a small bowl, beat together with an electric mixer the sugar and Key lime zest for about 30 seconds.
- Next, slice the cold butter into about 16 pieces, and then add it to the bowl.
- Beat the butter into the sugar until creamy and fluffy, about 45 seconds. Add the egg and beat just until combined.
- Next, sprinkle the flour, graham crumbs, and salt evenly over the surface, and beat until just combined. The dough will be crumbly, use the warmth of your hands to bring it together.
- Have the powdered sugar ready in a shallow dish.
- Scoop out 12 balls of dough, and roll lightly in powdered sugar before placing on the baking sheet, evenly spaced. Reserve the remaining powdered sugar
- Bake for 15 minutes; the cookies will not turn brown. Do not over bake.
- While the cookies are still warm, roll them each in powdered sugar again.

- Preheat oven to 350 degrees F. Line 2 baking sheets with parchment paper; set aside.
- In a large bowl, cream together the butter and sugar with a handheld electric mixer or a stand mixer until light and fluffy, about 1 minute. Add in the salt, baking powder, lime zest, lime juice, egg, and lime extract (if using), mixing well. Lastly, add in the flour and graham cracker crumbs and mix on low speed until the dough comes together. Dough may be a little crumbly or shaggy; this is normal.
- Using a cookie dough scoop, scoop out 1" size balls of dough and place 1" apart on the baking sheets. Bake for 14-16 minutes, rotating the pans halfway through baking time to ensure even browning and cooking. Remove from the oven and let cool for 5 minutes.

LIME BARS
Steps:
- Preheat oven to 350 degrees F. Generously butter 13x9inch baking pan. Combine 2 cups flour, butter, 1/2 cup powdered sugar, ground almonds, lime peel and salt in processor and process until moist clumps form. Press onto bottom of prepared pan. Bake until edges are golden, about 20 minutes. Whisk sugar, eggs, lime juice, baking powder and remaining 1/4 cup flour in large bowl until well blended. Pour over hot crust. Bake until topping is set and lightly golden, about 25 minutes. Cool in pan on rack. Sift additional powdered sugar over top. Cut into squares.
