Key Lime-Coconut Pie image

Provided by Bobby Flay

Time 5h5m

Yield 1 (9-inch pie)

Number Of Ingredients 14

4 large egg yolks
2 teaspoons grated Key lime zest
1 (14-ounce) can sweetened condensed milk
1/4 cup plus 2 tablespoons fresh Key lime juice
1/4 teaspoon pure vanilla extract
8 whole graham crackers, broken into pieces
1/4 cup sweetened coconut
2 tablespoons light brown sugar
6 tablespoons unsalted butter, melted
1 1/2 cups very cold whipping cream
1/4 cup plus 1 tablespoon coconut cream (recommended: Coco Lopez)
2 heaping tablespoons confectioners' sugar
1 vanilla bean, seeds scraped
1/2 cup sweetened coconut, lightly toasted, for garnish

Steps:

  • For the pie: Preheat the oven to 325 degrees F.
  • Whisk together the yolks, zest, condensed milk, lime juice, and vanilla in a bowl until smooth and thickened, about 2 minutes. Cover and set aside at room temperature for 20 minutes.
  • Combine the graham crackers, coconut, and sugar in a food processor and process into fine crumbs. Add the butter and process until the mixture just comes together. Pat onto the bottom and sides of a 9-inch glass pie plate. Place on a baking sheet and bake until lightly golden brown and firm, about 10 minutes.
  • Add the thickened filling to the warm crust, return to the oven, and bake the pie until the center is firm but jiggles slightly when shaken, about 15 minutes. Remove and let cool to room temperature, about 1 hour. Cover the surface and refrigerate until chilled and set, about 3 hours.
  • For the whipped cream: Combine the whipping cream, coconut cream, sugar, and vanilla bean seeds in the bowl of a stand mixer fitted with the whisk attachment and whip until soft peaks form.
  • To serve: Mound the coconut whipped cream on top and sprinkle with toasted coconut.

COCONUT LIME PIE

Coconut lime pie image

Give the American classic key lime pie a twist with ginger biscuits and toasted coconut for a tropical treat to end a special meal

Provided by Cassie Best

Categories     Afternoon tea, Dessert, Treat

Time 40m

Number Of Ingredients 8

225g gingernut biscuits
85g butter , melted
zest and juice 6 fat limes (about 200ml)
405g can condensed milk
2 x 160ml cans coconut cream
300ml pot double cream
2 tbsp icing sugar
handful toasted, shaved coconut or toasted desiccated coconut

Steps:

  • Put the biscuits in a food processor and whizz to fine crumbs. Add the butter and whizz again briefly, then tip the buttery crumbs into a 22cm fluted tart tin. Use the back of a spoon to press the crumbs over the surface and up the sides of the tin until evenly spread and compacted. Make sure that there are no gaps in the crust or the filling will leak. Chill for 10 mins.
  • In a large saucepan, whisk together the lime zest and juice, condensed milk, coconut cream and 100ml double cream. Place on a medium-high heat and bring to a simmer. Bubble quite vigorously for 4 mins, then pour into the tart case - this is easiest if you transfer the liquid to a jug and pour straight into the case while it is still in the fridge. Chill for at least 4 hrs or until completely set.
  • When you are ready to serve, lightly whip together the remaining cream and icing sugar until it is just forming soft peaks. Pile it into the centre of the pie and smooth out towards the edges. Scatter over the toasted coconut and serve. Leftovers will keep in the fridge for 2 days.

LIME & COCONUT CREAM PIE

LIME IN THE COCONUT PIE

Lime in the Coconut Pie image

Provided by Danny Boome

Categories     dessert

Time 55m

Yield 8 servings

Number Of Ingredients 9

1 prepared frozen 9-inch pie crust
1 tablespoon grated lime zest
4 large egg yolks
1 (14-ounce) can sweetened condensed milk
1/2 cup fresh lime juice (about 4 to 5 limes)
3 tablespoons coconut rum
1/2 cup sweetened coconut flakes, divided
1 cup heavy cream
3 thin slices lime, for garnish

Steps:

  • Preheat oven to 350 degrees F. Remove crust from freezer and let thaw for 5 minutes.
  • Meanwhile in a bowl, whisk together lime zest, egg yolks, condensed milk, lime juice and rum. Mix well. It may look like it's starting to separate but mix it well and it will come together. Sprinkle 1/4 cup of the coconut flakes on the bottom of the crust then pour the mixture into the crust and top with the rest of the coconut.
  • Bake until the center is set, but still jiggles a bit when the pan is nudged, about 20 to 25 minutes. When baked, cool the pie completely on a wire rack. (At this point the pie can be chilled up to a day ahead and topped when you're ready to serve.)
  • For the topping, beat cream in a bowl with an electric mixer until it just holds stiff peaks. Spread cream over cooled pie; garnish with lime slices. Serve immediately.

LIME-COCONUT CREAM-PIE JARS

Lime-Coconut Cream-Pie Jars image

These individual cream "pies" get their silkiness from coconut milk and a zesty lift from limes. They're also fun to make, especially if you have kids who love spooning stuff into containers. Bake the graham-cracker crust and divide it into mini jars, add a tier of custard and another of whipped cream, and finish with toasted coconut flakes and more zest.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Pie & Tarts Recipes

Time 2h40m

Number Of Ingredients 14

6 full graham-cracker sheets (3 ounces), broken into small pieces
3 tablespoons unsalted butter, melted
3/4 cup plus 1 tablespoon granulated sugar
Kosher salt (we use Diamond Crystal)
6 tablespoons unsweetened coconut flakes
1/4 cup cornstarch
4 large egg yolks
1 can (14 ounces) coconut milk
1 cup half and half
1 teaspoon finely grated lime zest, plus more for serving, and 1/3 cup fresh juice (from 2 to 3 limes)
1 cup sweetened shredded coconut
2 tablespoons unsalted butter, softened
1/2 cup heavy cream
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 350°F with racks in upper and lower thirds. Pulse graham crackers in a food processor until finely ground. Add butter, 1 tablespoon granulated sugar, and 1/8 teaspoon salt; pulse to combine. Spread mixture in a single layer on a baking sheet. Spread coconut flakes in an even layer on another rimmed baking sheet.
  • Place both sheets in oven; bake until coconut is golden, 8 to 10 minutes; and graham-cracker mixture is darker-golden and fragrant, 10 to 12 minutes. Let coconut cool completely (it can be stored in an airtight container up to 1 week). Divide graham-cracker mixture evenly among six 8-ounce glass jars or glasses; gently press to create an even layer (a metal ice cream scoop is great for this). Transfer to refrigerator.
  • Whisk together cornstarch and remaining 3/4 cup granulated sugar and 1/2 teaspoon salt in a medium saucepan. Add egg yolks; whisk to combine. Whisk in coconut milk and half and half; cook over medium-high heat, stirring constantly, until bubbling and thick, about 4 minutes. Continue to boil, whisking constantly, 2 minutes more. Remove from heat; stir in lime zest and juice and sweetened coconut. Add butter; whisk until melted.
  • Transfer pudding to a large heat-proof liquid measure with a spout; let cool about 10 minutes. Divide pudding among jars, place a piece of plastic wrap directly on the surface of each (to stop skins from forming), and refrigerate until firm, at least 1 1/2 hours and up to 2 days.
  • Whisk cream and confectioners' sugar until soft peaks form. Dollop mixture on top of puddings and refrigerate, uncovered, up to 1 hour, or serve immediately, topped with toasted coconut and more lime zest.

FLORIDA PIE

Florida Pie image

In this Key lime pie, there's a layer of chewy coconut in the bottom of the graham cracker crust, with the classic Key lime filling and coconut meringue.

Categories     Dessert     Pie     Bake     Lime     Milk/Cream     Lime Juice     Coconut     Egg

Yield Makes 6 servings

Number Of Ingredients 7

1 9-inch graham cracker crust, fully baked and cooled, or a store-bought crust
1⅓ cups heavy cream
1½ cups shredded sweetened coconut
4 large eggs, separated
1 14-ounce can sweetened condensed milk
½ cup fresh Key (or regular) lime juice (from about 5 regular limes)
¼ cup sugar

Steps:

  • Getting Ready: Center a rack in the oven and preheat the oven to 350 degrees F. Put the pie plate on a baking sheet lined with parchment or a silicone mat.
  • Put the cream and 1 cup of the coconut in a small saucepan and bring it to a boil over medium-low heat, stirring almost constantly. Continue to cook and stir until the cream is reduced by half and the mixture is slightly thickened. Scrape the coconut cream into a bowl and set it aside while you prepare the lime filling.
  • Working with a stand mixer, preferably fitted with a paddle attachment, or with a hand mixer in a large bowl, beat the egg yolks on high speed until thick and pale. Reduce the mixer speed to low and beat in the condensed milk. Still on low, add half of the lime juice. When it is incorporated, add the remaining juice, again mixing until it is blended. Spread the coconut cream in the bottom of the graham cracker crust, and pour over the lime filling.
  • Bake the pie for 12 minutes. Transfer the pie to a cooling rack and cool for 15 minutes, then freeze the pie for at least 1 hour.
  • To finish the pie with meringue: Preheat the broiler. Put the 4 egg whites and the sugar in a medium heavy-bottomed saucepan and heat over medium-low heat, whisking all the while, until the whites are hot to the touch. Transfer the whites to a stand mixer fitted with the whisk attachment, or use a hand mixer in a large bowl, and beat the whites at high speed until they reach room temperature and hold firm peaks. Using a rubber spatula, fold the remaining ½ cup coconut into the meringue. Spread the meringue over the top of the pie, and run the pie under the broiler until the top of the meringue is golden brown. (Or, if you've got a blowtorch, you can use it to brown the meringue.) Return the pie to the freezer for another 30 minutes or for up to 3 hours before serving.

COCONUT-KEY LIME PIE

Coconut-Key Lime Pie image

I formed this recipe from a combination of many old Key lime pie recipes. It has become a staple at any family gathering, and it is relatively easy to put together.

Provided by Andi

Time 3h40m

Yield 8

Number Of Ingredients 10

3 large eggs, separated, divided
1 tablespoon grated lime zest
1 (14 ounce) can sweetened condensed milk
¾ cup cream of coconut
⅔ cup fresh lime juice
1 teaspoon vanilla extract
¼ teaspoon ground nutmeg
1 (9 inch) prepared graham cracker crust
¼ cup white sugar
¼ teaspoon cream of tartar

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Combine egg yolks and lime zest in a bowl; beat with an electric mixer until fluffy. Gradually mix in condensed milk and cream of coconut, then beat for 3 minutes longer. Lower speed and add lime juice, vanilla, and nutmeg; mix until just combined. Pour into the crust.
  • Bake in the preheated oven until pie is just set in the center, 14 to 18 minutes. Remove from the oven and cool on a wire rack for 1 hour. Refrigerate for at least 2 hours.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Beat egg whites in a glass, metal, or ceramic bowl until frothy. Add cream of tartar and beat until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, until stiff, glossy peaks form. Spread over the pie in decorative swirls.
  • Broil in the preheated oven until meringue is golden brown, 3 to 5 minutes.

  • To make the lime curd, set a fine-mesh sieve over a bowl. In a heavy-bottomed saucepan over medium-high heat, combine the butter, sugar, lime juice, and lime zest, and cook, stirring, until the sugar dissolves and the mixture just comes to a simmer. In another bowl, whisk together the eggs and egg yolks.
  • Slowly whisk the hot lime mixture into the eggs, whisking constantly. Pour the lime-egg mixture back into the same saucepan and cook over medium-low heat, stirring constantly, until the curd thickens (do not boil), about 4 minutes. Immediately pour the curd into the sieve, pushing it through with a rubber spatula. Let cool slightly in the bowl. Cover with plastic wrap, pressing it directly onto the surface of the curd. Refrigerate until chilled, at least 4 hours and up to 2 days.
  • To make the crust, preheat oven to 375°F/190° In a food processor, pulse the toasted coconut, cookies crumbled by hand directly into the processor, brown sugar and salt until the mixture is finely ground. Add the melted butter and process until moist clumps form. Scrape the crumb mixture into a 9-inch (23 cm) glass pie dish and press it evenly into the pan bottom and sides. Bake until the edges begin to brown, about 8 minutes. Transfer the crust to a wire rack. If the crust is puffed in the center, use a small rubber spatula to gently press it down. Let cool completely.
  • To assemble, scrape the cold lime curd into the crust-lined pan. Cover and refrigerate up to 8 hours, if you like.

  • Preheat the oven to 350 degrees Fahrenheit. Line the pie crust with foil and add pie weights, beans, or rice. Bake the crust for 20 minutes, until it is set around the edges. Carefully remove the foil and bake for another 5-8 minutes, until it loses the raw look in the middle and takes on a little bit of a golden color around the edges. Let cool while you prepare the filling, but keep the oven warm.
  • In a large mixing bowl, combine the eggs, yolks, and salt, and beat on medium speed with a whisk for 1 minute. Add the sugar and beat for an additional minute, until the mixture is thick. Now add the coconut, cream, lime zest, lime juice, melted butter, and vanilla extract, and beat until everything is combined.
  • Pour the filling into the par-baked crust, and bake it at 350 for about 40 minutes. When it’s done, it should feel set in the center but still have a little give, and it should be golden brown on top. If the outer edges and crust start to get too dark before the center is set, cover the outer edges with a ring of foil.
  • Let the pie cool to room temperature, then refrigerate it for at least 4 hours to get it firm enough to slice cleanly. Decorate the pie with whipped cream, fresh lime slices, or toasted coconut.
