Chicken and broccoli may sound like a ho-hum dish, but you can make it finger-licking with the right marinade and dipping sauce.

Marinade/dipping sauce:
1 tablespoon freshly squeezed lime juice
½ cup packed cilantro leaves
1 cup unsalted cashews, dry-roasted, raw, or toasted
¼ cup avocado oil
4 garlic cloves, roughly chopped
1 tablespoon tamari
1 tablespoon coconut aminos
1 jalapeño pepper, stemmed, seeded, and roughly chopped
Chicken and broccoli:
2 boneless, skinless chicken breasts, pounded thin (see tip below)
1 large broccoli head, cut into florets
2 tablespoons avocado oil

Steps:

  • Preheat the oven to 475°F.
  • In a food processor, pulse all the marinade/dipping sauce ingredients to a pesto consistency. Reserve half to serve as a dipping sauce.
  • Place the chicken on a parchment-lined baking sheet and coat it with the remaining marinade. Coat the broccoli with avocado oil, then spread it on the baking sheet with the chicken. Bake for 7 minutes, flip the chicken breasts and broccoli florets, and bake for 7 more minutes, until the chicken is cooked through and the broccoli is lightly browned.
  • Serve immediately with the dipping sauce.

1 1/2 lbs boneless skinless chicken breasts
1/3 cup light olive oil
1/4 cup fresh lime juice
1 teaspoon garlic powder
1 teaspoon dried cilantro
1/4 teaspoon ground cumin
1/4 teaspoon ground red pepper
1/4 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Mix seasoning with fresh lime juice and oil together in a bowl.
  • Place chicken in a reseable plastic bag and pour marinade to coat chicken breast well.
  • Refrigerate 30 minutes or more. (I usually put this together in the morning and let it merry all day).
  • Spray cooking oil on grill. Remove chicken from marinade, and discard.
  • Grillchicken 10 minutes or until cooked through.

2 tablespoons olive oil
1 lb chicken breast (, sliced)
salt and pepper
3 garlic cloves (, minced)
2 tablespoons lime juice (, freshly squeezed, use less if bottled juice)
1/4 cup chicken broth
1 tablespoon cilantro (fresh, chopped)
2/3 cups heavy cream
2/3 cups milk
1/2 cup mozzarella cheese (or parmesan cheese, shredded)
8 oz spaghetti pasta ((for gluten free, use gluten free brown rice spaghetti))
reserved cooked pasta water
1 tablespoon cilantro (fresh, chopped)

Steps:

  • Heat olive oil in a large skillet on medium-hot heat. Generously season sliced chicken with salt and pepper, add to the hot skillet and cook for about 5 minutes until done. Remove sliced chicken from the skillet.
  • To the same skillet, add minced garlic, lime juice and chicken broth. Cook for 1-2 minutes on high heat, deglazing and scraping the skillet until the liquid is reduced and making sure garlic does not burn and brown too much. Mix in chopped cilantro.
  • Add heavy cream and milk. Bring to boil, the immediately add cheese and mix in until melted, while boiling. Then, remove from heat.
  • Cook pasta according to package instructions, drain, reserving some cooked pasta water.
  • Add pasta to the sauce, along with the half of the chicken. Mix everything in and season pasta with more salt, if needed.
  • Top with the remaining half of the chicken and more chopped cilantro.

1/4 cup fresh squeezed lime juice ((Juice of 2 limes))
1/4 cup fresh chopped cilantro
1 teaspoon red chili ((or pepper) flakes)
4 cloves garlic (minced)
2 teaspoons brown sugar
3/4 teaspoon ground cumin
6 bone-in skin-on ((or off) chicken thighs)
Salt and pepper (to taste)
Fresh cilantro leaves (to serve)

Steps:

  • Preheat oven to 425°F (220°C).
  • In a medium-sized shallow bowl, whisk together 2 tablespoons olive oil together with the lime juice, chopped cilantro, chili flakes, garlic, sugar and cumin. Add the chicken thighs to the marinade and toss to evenly coat. Cover and refrigerate thighs for 15 minutes.
  • Heat the remaining one tablespoon of oil in a non stick pan or cast iron skillet over medium-high heat. Add in the thighs along with any marinade left over in the bowl, and sear chicken -- skin-side down -- for 4 minutes on each side until golden and crispy (chicken will not be fully cooked).
  • Transfer to preheated oven and bake until the chicken is cooked through (about 15-20 minutes).
  • Garnish with fresh cilantro leaves and lime slices or wedges.
  • Serve over steamed rice or cauliflower rice, and drizzle with the pan juices.

¼ cup lime juice
⅛ teaspoon garlic powder
⅛ teaspoon ground cumin

2 skinless, boneless chicken breast halves
1 (8 ounce) package linguine
2 tablespoons olive oil
¼ cup grated Parmesan cheese
8 cherry tomatoes, quartered
1 tablespoon olive oil
1 large zucchini, quartered lengthwise
1 tablespoon olive oil
3 tablespoons butter
½ cup chopped fresh cilantro
3 cloves garlic, minced
¼ cup white wine
¼ cup chicken broth
2 tablespoons lime juice
½ cup heavy cream
1 bunch green onions, thinly sliced

Steps:

  • Whisk together 1/4 cup lime juice, garlic powder, cumin, salt, and pepper in a large bowl; add the chicken breasts. Cover and refrigerate 1 to 2 hours, turning the chicken occasionally.
  • Preheat an oven to 425 degrees F (220 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 11 minutes. Drain well in a colander set in the sink. Transfer linguine to a large mixing bowl; add 2 tablespoons olive oil, the Parmesan cheese, and the quartered cherry tomatoes; toss until the pasta is evenly coated in oil.
  • Heat 1 tablespoon olive oil in a skillet over medium heat. Cook the chicken breasts, turning once, until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Meanwhile, arrange zucchini pieces on a baking sheet. Coat the zucchini with 1 tablespoon olive oil with a pastry brush. Place zucchini on middle rack in the oven, and bake, turning every 5 minutes, until nicely browned, 15 to 20 minutes.
  • Melt the butter in a saucepan over medium heat. Add the cilantro and garlic, cook and stir 1 minute. Pour in the wine, chicken broth, and 2 tablespoons lime juice, and return to a simmer. Transfer the mixture to a blender and blend until smooth. Return the mixture to the sauce pan and stir in the cream and green onions; bring to a boil and remove from heat.
  • Lay the zucchini pieces side by side on a serving platter and place the chicken breasts on the zucchini. Pour the cilantro cream sauce over the chicken. Serve with the pasta on the side.

⅔ cup olive oil
½ cup chopped fresh cilantro
¼ cup chopped fresh parsley
2 limes, juiced
1 teaspoon garlic salt
½ teaspoon Cajun seasoning (such as Slap Ya Mama®)

Steps:

  • Combine olive oil, cilantro, parsley, lime juice, garlic salt, and Cajun seasoning in a large bowl. Add chicken breasts and toss to coat. Marinate in the refrigerate for at least 2 hours, preferably overnight.
