CHOPPED COBB SALAD WITH CREAMY GARLIC DRESSING



Chopped Cobb Salad with Creamy Garlic Dressing image

In place of bacon, this satisfying salad uses store-bought crispy chickpeas for lower saturated fat and less prep time. Using fresh herbs, bright citrus and a creamy base of yogurt and mayonnaise for the dressing gives it a flavorful finish.

½ cup low-fat plain yogurt
¼ cup mayonnaise
2 tablespoons lemon juice
2 tablespoons grated Parmesan cheese
1 tablespoon finely chopped fresh parsley
1 tablespoon snipped fresh chives
2 teaspoons reduced-sodium tamari or soy sauce (see Tip)
1 medium garlic clove, minced
¼ teaspoon ground pepper
8 cups chopped romaine lettuce (about 2 medium romaine hearts)
2 mini cucumbers, diced
2 medium tomatoes, diced
⅔ cup crispy chickpeas (see Tip, above)
4 hard-boiled eggs, diced
1 avocado, pitted and diced
3 tablespoons crumbled blue cheese (optional)

Steps:

  • To prepare dressing: Whisk yogurt, mayonnaise, lemon juice, Parmesan, parsley, chives, tamari (or soy sauce), garlic, and pepper in a small bowl.
  • To prepare salad: Combine lettuce, cucumbers, tomatoes and chickpeas in a large bowl. Add eggs and avocado and gently toss to combine. Add ¾ cup of the dressing and toss to coat well. Add 1 or 2 more tablespoons dressing if desired. Reserve additional dressing for another use (cover and refrigerate for up to 2 days). Divide the salad among 4 bowls; sprinkle with blue cheese, if desired.

Number Of Ingredients 7

3 cups cubed pineapple
3 cups cubed watermelon
2 kiwis, peeled, quartered, and sliced
Half a papaya, seeds and skin removed, cut into bite-sized pieces
6 ounces blueberries
1 tablespoon lime zest and 2 tablespoons lime juice (from 1 to 2 limes)
1/2 teaspoon chili powder

Steps:

  • Add all the cut fruit to a large serving bowl. Add the lime zest, juice, and chili powder to a small bowl and whisk to combine. Pour the chili-lime mixture over the fruit and toss to combine. Serve immediately or refrigerate until ready to serve.

I got this recipe from a lady who always serves it with a grilled salmon and leafy greens salad, using feta crumbles, red onions, and carrots. If you don't want it as spicy, you can cut back on the red pepper flakes but we love it just the way it is.

3 ¾ cups lime juice
1 ¾ cups soy sauce
1 cup packed brown sugar
¾ cup olive oil
¼ cup minced garlic
¼ cup red pepper flakes

  • Whisk lime juice, soy sauce, brown sugar, olive oil, garlic, and red pepper flakes together in a bowl until creamy and smooth. Cover bowl with plastic wrap and refrigerate overnight to 8 hours.

You can make lemon dressing by substituting fresh lemon juice for lime juice and omitting the chili powder. If you can't find brown rice vinegar, use the regular variety. Dressing will keep for up to two weeks in the refrigerator.

  • Store in a glass jar in the refrigerator.

2 tablespoons rice-wine vinegar

2 fresh red hot chiles, finely chopped
2 garlic cloves, minced
2 shallots, thinly sliced
2 tablespoons finely chopped fresh cilantro

Steps:

  • Stir together all ingredients except the cilantro, and let stand at least 15 minutes (and up to a day in the refrigerator). When ready to serve, stir in the cilantro.
