⅓ cup lime juice
2 cups chicken broth
1 clove garlic, minced
½ teaspoon dried thyme leaves
¼ teaspoon ground black pepper
2 tablespoons butter
2 cups uncooked instant rice

Steps:

  • Place the chicken breasts into a slow cooker; pour in the lime juice and chicken stock. Add the garlic, thyme, pepper, and butter.
  • Cover, and cook on Low until the chicken is very tender, 8 to 10. Stir in the rice during the last 15 minutes of cooking time.

1 lime, juiced
3 tablespoons chopped fresh cilantro

Steps:

  • Place the salsa, taco seasoning, lime juice, and cilantro into a slow cooker, and stir to combine. Add the chicken breasts, and stir to coat with the salsa mixture. Cover the cooker, set to High, and cook until the chicken is very tender, about 4 hours. If desired, set cooker to Low and cook 6 to 8 hours. Shred chicken with 2 forks to serve.

1/4 teaspoon pepper
2 tablespoons butter or margarine
1 cup uncooked instant rice
Chopped fresh parsley, if desired

Steps:

  • Place chicken in 3- to 4-quart slow cooker. Add remaining ingredients except rice and parsley.
  • Cover and cook on Low heat setting 8 to 10 hours. During last 15 minutes of cooking, stir in rice.
  • Remove chicken from cooker. Place cooked rice on each serving plate. Top with chicken. Spoon any remaining juices over chicken. Garnish with parsley.

4 large carrots (, cut into a few big pieces (optional))
1/4 cup lime juice ((about 2 to 3 whole limes))
3 tablespoons soy sauce or liquid aminos
1 tablespoon light worcestershire sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
2 to 3 garlic cloves (, minced)
2 tablespoons cornstarch
toasted sesame seeds (, for garnish (optional))
fresh cilantro (, for garnish (optional))
4 cups steamed broccoli florets ((optional))

Steps:

  • Season chicken breasts with salt and pepper and arrange on the bottom of your slow cooker insert.
  • Arrange carrots over the chicken. Set aside.
  • In a small mixing bowl combine lime juice, soy sauce, worcestershire sauce, rice vinegar, sesame oil, and garlic; whisk until thoroughly combined.
  • Pour over chicken and veggies; close with a lid.
  • Cook on HIGH for 3 to 4 hours or on LOW for 6 to 7 hours.
  • Spoon 2 tablespoons liquid from the slow cooker into a bowl and whisk cornstarch into the liquid until well combined.
  • Stir the cornstarch mixture back into the slow cooker.
  • Continue to cook on high until the sauce thickens, about 20 to 30 minutes.
  • Garnish chicken with toasted sesame seeds and cilantro.
  • Serve over rice with a side of steamed broccoli.

1 cup lime juice
2 tablespoons honey
2 tablespoons dried cilantro
2 tablespoons onion powder
1 tablespoon garlic powder
3 teaspoons chili powder

1 teaspoon cayenne pepper
1 teaspoon salt
6 skinless, boneless chicken breasts, or more to taste

Steps:

3 -4 lbs broiler chickens
1 teaspoon salt
1 teaspoon pepper
1 lime
1/2 cup fresh cilantro stem
2 garlic cloves, peeled

Steps:

  • Wash and dry the chicken.
  • Reserve the giblets and neck for another use.
  • Season the chicken inside and out with salt and pepper.
  • Place in the slow cooker breast side up.
  • Squeeze the juice of the lime over the chicken.
  • Put the remains of the lime, cilantro and garlic inside the cavity.
  • Cover and cook on the low setting for 6-7 hours or until an instant read thermometer reads 180 degrees Fahrenheit in the thickest part of the thigh.
  • Transfer the chicken to a platter.
  • Pour the liquid from the cooker into a separate container and refrigerate for another use.

1 cup apple juice
2 tbsp cornstarch
juice of one lemon
juice of one lime
2 tbsp liquid honey
1 tbsp cumin, ground
or
1 tbsp tarragon
or
1 tbsp fines herbes
½ tsp salt
italian parsley, for garnish
or
cilantro, for garnish
or
basil, for garnish

Steps:

  • Remove all excess fat from chicken. If using large chicken breasts, slice each into two pieces. Turn slow cooker to high and pour in the apple juice. Sprinkle with cornstarch and stir until dissolved.
  • Add the juice from the lemon and the lime, honey and seasonings. Stir to blend. Add chicken, turning to evenly coat, then place chicken bone-side up. Cover and cook on high for 3 ½ to 4 hours or on low for 5 to 6 hours.
  • Place chicken on plates and spoon some of the sauce over top. If serving with rice or orzo, liberally pour sauce over them as well. Serve remaining sauce in a pitcher. Garnish with Italian parsley, fresh coriander or torn basil leaves.
