SUPREME DREAM LIME MOLD!

This is undoubtedly the best lime mold salad/dessert I've ever had, and my family has come to expect it for part of our Xmas dinner. You may use jelly from Australia or flavored gelatin from other countries as a substitution for American jello, adjusting the sugar to taste.

Number Of Ingredients 9

1 (3 ounce) box lime Jell-O gelatin
3 ounces cream cheese
4 ounces pineapple, diced (If using canned, be sure to drain well)
4 ounces maraschino cherries, diced
1/2 cup mayonnaise
1/2 pint whipping cream
1/2 cup pecans, diced into very small pieces
8 -10 drops green food coloring, more for a darker green color
butter (to butter the mold)

Steps:

  • Whip the cream with a hand mixer until peaks form.
  • Set aside.
  • Dissolve the jello in 1 cup very hot water.
  • Add the cream cheese and mash with a fork until smooth.
  • Add pineapple and cherries and mix.
  • Add the mayonnaise and whipped cream and mix.
  • Add nuts and green food coloring.
  • Mix until all ingredients are evenly distributed.
  • Butter a ring mold or Tupperware mold.
  • When mixture begins to set, then pour it all into the mold or into small, individual dessert bowls.
  • Cover and refrigerate until firmly set.

This is my Grandmother's recipe. I haven't thought about it much over the past few years, but remember always having it in the summer when I was growing up! This "salad" is great for BBQ's, Family Reunions and just because you want some on those warm days!!

1 pkg lime jell-o
1 c boiling water
1 can(s) crushed pineapple, juice reserved
1 c creamy cottage cheese
1 tsp horse radish
1/2 c mayonnaise or 1/2 cup whipping cream, whipped
1/4 c chopped walnuts

Steps:

  • 1. Dissolve Jell-o in 1 cup boiling water. Add reserved juice from crushed pineapple. Chill until slightly thickened.
  • 2. Beat until frothy, fold in pineapple, cottage cheese, horse radish. Add mayonnaise or whipping cream (whipped) and chopped walnuts.
  • 3. Chill until firm. Double for a large mould.

Number Of Ingredients 6

1 (6 ounce) box lime Jell-O gelatin
1 (20 ounce) can crushed pineapple, juice reserved
2 cups boiling water
1 cup of reserved pineapple juice (you may have a little less)
1/2 cup cold water
8 ounces sour cream

Steps:

  • Drain pineapple and reserve liquid.
  • Spray Jello mold or bowl with PAM cooking spray.
  • Dissolve Jell-o in 2 cups of boiling water, stirring for a few minutes.
  • Add enough cold water to the reserved pineapple juice to equal 1.5 cups, and add to Jell-o mixture.
  • Whisk in about 8 oz. sour cream (mom used a little less).
  • Dump pineapple inches.
  • Chill until set.
  • If you want to unmold the dish, set bowl into warm water for 30 seconds, and place plate on top of bowl.
  • Invert the bowl onto the plate and let the jell-o slide out.
  • Enjoy!

1 (3 ounce) package lime gelatin
1 cup hot water
1 cup cold water
1 (8 ounce) package cream cheese, softened
1 tablespoon lemon juice
1 2/3 cups crushed pineapple, drained
1 1/2 cups miniature marshmallows
1/2 cup pecans
1/2 cup chopped cherries (optional)

Steps:

  • Melt gelatin in hot water.
  • Add cold water and lemon juice.
  • Chill until slightly firm.
  • Add pineapple, marshmallows, cherries, and pecans, mix well.
  • Pour into ring mold and chill until firm.
  • Dip mold in hot water for a few seconds.
  • Unmold onto a platter decorated with a bed of lettuce, if desired.
  • Or, just spoon into dessert dishes and enjoy!

1 (20-ounce) can crushed pineapple in juice
1 (6-ounce) package lime jello
1 teaspoon lime rind grated or lemon rind
1/2 teaspoon dill weed dried weed, crushed
1/4 teaspoon salt
2 cups sour cream
1/2 cup vermouth
Green food color (optional)
1/4 cup Romaine lettuce leaves
1 (8-ounce) can pineapple slice drained and halved

Steps:

  • 1. Drain pineapple juice into a large measuring cup. Add water to make 1 1/2 cups liquid.2. In a medium saucepan mix liquid, gelatin, rind, dill weed and salt. Stir over medium heat until gelatin is dissolved remove from heat. Cool for 5 minutes.3. Blend in sour cream, vermouth and optional food color. Chill until mixture mounds when dropped from a spoon. Stir in pineapple and pour into a 5-cup mold. Cover and chill until firm.4. Unmold onto a chilled plate. Garnish with lettuce and pineapple.

This is my own version of our family's Holiday Lime Jell-O Wreath which is always a hit, I hope you enjoy it too!

Number Of Ingredients 9

1 (6 ounce) box lime Jell-O gelatin
2 cups boiling water
1 cup cold water, with ice to fill measuring cup up to 1-3/4 cup
8 maraschino cherries, halved
1 (8 ounce) package cream cheese (room temperature)
1/2 cup walnuts, chopped
1 (8 ounce) can crushed pineapple in juice
2 1/2 cups mini marshmallows
1 cup shredded coconut (optional)

Steps:

  • Empty Lime Jell-O into large bowl, add 1 cup boiling water; stir until Jell-O dissolved. Add second cup of boiling water and stir. Add cold water & ice, stir until ice dissolved. Put in refrigerator until loosely jelled, about 1-1/2 hour.
  • Cut Maraschino cherries in half and place, cut side up, into a Jell-O ring mold. Bunt Cake pan works great too!
  • Cut cream cheese into small squares and drop into cooled Jell-O then add pineapple, with hand mixer blend on medium until cheese gets creamy with lots of small chunks remaining (approx. 1 minute).
  • Add walnuts and marshmallows, fold in with wooden spoon or spatula until completely coated with Jell-O mixture.
  • Poor into Jell-O mold. Sprinkle top with coconut (hint, it looks like holiday snow and keeps the Jell-O from sliding on the platter). Cover and chill for 6 hours, or overnight!
  • To remove from mold: Fill sink with HOT water. Hold mold in water for about 15 seconds. Place platter on top and Turn Over! Let mold slide out! WA LA! Place back in the refrigerator until ready to serve. Looks like a Christmas Wreath with red Berries! Great addition to your holiday table!
