Lime-Cilantro Marinade for Chicken image

This marinade is low-calorie and low-sodium. It is wonderful for chicken, but you can also use it on pork or fish.-Roz Walton, Auburn, Maine

Number Of Ingredients 9

1/2 cup minced fresh cilantro
1/4 cup lime juice
1/4 cup orange juice
1/4 cup olive oil
1 tablespoon chopped shallot
1 teaspoon dried minced garlic
1 teaspoon pepper
1/8 teaspoon salt
6 boneless skinless chicken breast halves (5 ounces each)

Steps:

  • In a blender, combine the first eight ingredients; cover and process until smooth. Place marinade in a large resealable plastic bag. Add the chicken; seal bag and turn to coat. Refrigerate for at least 2 hours. , Drain and discard marinade. Lightly oil the grill rack. Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 170°.

1/3 cup all-purpose flour
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon ground cumin, divided
4 tilapia fillets (6 ounces each)
1 tablespoon olive oil
1/2 cup reduced-sodium chicken broth
2 tablespoons minced fresh cilantro
1 teaspoon grated lime zest
2 tablespoons lime juice

Steps:

  • In a shallow bowl, mix flour, salt, pepper and 1/4 teaspoon cumin. Dip fillets in flour mixture to coat both sides; shake off excess., In a large nonstick skillet, heat oil over medium heat. Add fillets; cook, uncovered, 3-4 minutes on each side or until fish flakes easily with a fork. Remove and keep warm., To the same pan, add broth, cilantro, lime zest, lime juice and remaining cumin; bring to a boil. Reduce heat; simmer, uncovered, 2-3 minutes or until slightly thickened. Serve with tilapia.

You can substitute a lighter olive oil for the extra-virgin olive oil. Serve over rice.

¾ cup extra-virgin olive oil
1 clove garlic, minced
⅛ teaspoon ground black pepper
½ teaspoon cayenne pepper
1 pinch salt
2 tablespoons lime juice
⅛ teaspoon grated lime zest
2 (4 ounce) mahi mahi fillets
2 twists lime zest

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • Whisk the extra-virgin olive oil, minced garlic, black pepper, cayenne pepper, salt, lime juice, and grated lime zest together in a bowl to make the marinade.
  • Place the mahi mahi fillets in the marinade and turn to coat; allow to marinate at least 15 minutes.
  • Cook on the preheated grill until the fish flakes easily with a fork and is lightly browned, 3 to 4 minutes per side.
  • Garnish with the twists of lime zest to serve.
