Lime and Beer Pork With Easy Chunky Guacamole image

A different way to serve pork that's easy and tasty. Preparation time does not include 3 to 4 hour marinading time. This is from some forgotten magazine clipping from 1998.

1 1/4 lbs pork tenderloin
1 cup salsa
1/2 cup lime juice
1/2 cup beer
1 teaspoon garlic, minced
1 tablespoon cilantro, finely snipped
1 1/2 teaspoons ground cumin
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon ground black pepper
12 flour tortillas
1 1/2 cups quick-cooking rice
nonstick cooking spray
2 avocados
3 tablespoons lemon juice
3 tablespoons salsa

Steps:

  • Partially freeze pork; thinly slice across grain into bite sized strips. Place pork in a plastic bag set into a bowl.
  • Combine salsa, lime juice, beer, garlic, cilantro, cumin, red pepper and black pepper. Pour over pork; seal bag. Marinate in refrigerator for 3 to 4 hours.
  • Prepare Easy Chunky Guacamole: Halve, seed, peel and cube 2 avocados. Combine avocados, lemon juice and salsa in a bowl. Cover and chill. (can be kept up to 24 hours in fridge).
  • Wrap tortillas in foil. Heat in a 350°F oven for ten minutes to soften.
  • Drain pork and set aside, reserving marinade.
  • Add enough water to marinade to equal 1 1/2 cups. Place in a saucepan and bring to a boil. Add rice. Remove from heat and let stand, covered, for 5 minutes.
  • Meanwhile, spray a skillet with nonstick coating; heat over medium heat. Add half of the pork. Stir-fry 4 minutes or until no longer pink. Remove from skillet using a slotted spoon; drain liquid if necessary. Repeat with remaining pork.
  • Spread pork and Easy Chunky Guacamole on tortillas. Roll up and serve with rice.

1/2 orange
1/4 cup plus 2 tablespoons minced red onion
1 to 2 pickled or fresh jalapenos, stemmed, seeded and minced
1 1/2 teaspoons ground cumin
1 1/2 teaspoons ground coriander
1 1/2 teaspoons garlic powder
Kosher salt and freshly ground black pepper
1 1/4 pounds ground pork
2 ripe Hass avocados
1/4 cup chopped cilantro
2 tablespoons fresh lime juice
4 large burger buns, split

Steps:

  • Working over a large bowl, finely grate the zest from the 1/2 orange and then squeeze in about 2 tablespoons of juice. Stir in the 1/4 cup minced onion, the jalapenos, cumin, coriander, garlic powder, 1 1/2 teaspoons salt and 1 teaspoon pepper. Add the pork and mix well. Form the mixture into 4 patties; transfer to a plate or baking sheet.
  • Preheat a grill, grill pan or large cast-iron skillet over medium-high heat. Cook the patties, turning once or twice, until an instant-read thermometer inserted in the thickest part of a patty registers 160 degrees F, about 10 minutes.
  • Meanwhile, cut the avocados in half lengthwise and discard the pits. Scoop the flesh into a medium bowl and, using a fork, lightly mash into a chunky paste. Fold in the cilantro, lime juice and the remaining 2 tablespoons red onion; season with salt and pepper.
  • Transfer the patties to a clean plate or baking sheet and tent with foil; let rest for 5 minutes. On the grill, grill pan or in the skillet, toast the buns over medium-high heat until golden, 1 to 2 minutes. Put the patties on the bottom buns and top with the guacamole. Close the burgers and serve.

2 large avocados (about 1 lb), pitted, peeled and cubed
1 tablespoon fresh lime juice
1/2 teaspoon salt
Dash ground red pepper (cayenne)
1 medium tomato, seeded, chopped
1 clove garlic, finely chopped
2 tablespoons finely chopped white onion
1 teaspoon chopped fresh cilantro, if desired
Tortilla chips, as desired

Steps:

  • In large bowl, coarsely mash avocados, lime juice, salt and ground red pepper using pastry blender or fork.
  • Reserve 2 tablespoons chopped tomato for garnish. Stir remaining tomato, garlic and onion into avocado mixture. Spoon into serving bowl. Sprinkle top with reserved 2 tablespoons tomato and the cilantro. Serve with tortilla chips.

Pork Tenderloin With Lime-Beer Marinade image

I tried this recipe as I have never done pork tenderloin on the barbeque grill. It came out absolutely wonderful. I served it with boiled new potatoes and corn on the cob. If you have any leftovers, they can be easily reheated in the microwave with no loss of flavour. Please note that marinating time is included in the cooking time.

1/2 cup beer
1/3 cup lime juice
2 garlic cloves, minced
2 tablespoons fresh parsley
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon ground coriander
1/4 teaspoon salt
1/4 teaspoon black pepper
24 ounces pork tenderloin

Steps:

  • In a large bowl, whisk together the beer, lime juice, garlic, parsley, chili powder, cumin, coriander, salt and pepper.
  • Add the pork; turn to coat.
  • Cover and marinate in the refrigerator for 4 hours.
  • Place the pork on a greased grill over medium-high heat; brush with any remaining marinade.
  • Close the lid and grill, turning occasionally, until just a hint of pink remains inside, about 18 minutes.
  • Transfer to a cutting board; tent with foil and let stand for 5 minutes.
  • Slice and serve.
