This Lime Aioli is super easy to make and so refreshing with a good dose of lime juice & zest. Done in just 5 minutes it's the perfect pairing for any type of seafood dish (clams! barbecued shrimp! calamari! fish tacos!) and a must-have side for paella.

2 egg yolks
1 garlic clove (minced)
2 tsp French Dijon mustard
1 lime (zest and juice)
¼ tsp salt
1⅓ cup vegetable oil (neutral)

Steps:

  • Place all ingredients except vegetable oil in a food processor or bowl with high sides. Mix together.
  • Start adding the vegetable oil very slowly. Once you've added a bit and the aioli is starting to look creamy, you can add it a bit faster. The sauce is ready once all oil has been mixed in. Taste test, and adjust seasoning as desired.

1 Tbsp Lime Juice
1 tsp Garlic Powder
1 tsp Onion Powder
1 Tbsp Dried or chopped Fresh Cilantro

Steps:

  • In a medium sized mixing bowl, add the mayo alternative, lime juice, garlic, and onion powder and whisk together until blended.
  • If using fresh cilantro, finely chop and add to the mixing bowl and fold into the mayo mixture.
  • But if using the dried cilantro, just add with the other ingredients and blend.
  • Pour the mixture into a pint jar, cover and place into the refrigerator for 1 to 2 hours before using. This way the spices will marinade into the aioli.

  • Add the oil 1 tablespoon at a time, whisking continuously.
  • As the aioli thickens you can add the oil a little more quickly.
  • Add the crushed garlic to the mayonnaise and stir well. Add more or less according to your preference.
  • Add the chillies and lime, again adjusting to taste.
  • Serve cold.

1 Lbs. Raw, Clean, Deveined Shrimp, (if using frozen, thaw and pat dry)
2 Tsp. Seafood Seasoning, (we used Old Bay)
1 Tblsp. Olive Oil
4-5 Damp Bamboo Skewers
1 1/2 Cups Mayonaise, (we used Duke's Mayo)
1/8 Cup Key Lime Juice, (preferably fresh)
1/2 Tsp. Chili Powder
1/2 Tsp. Dill
1/4 Tsp. Dried Oregano
1/4 Tsp. Cumin
1/4 Tsp. Paprika, (we used Hungarian smoked paprika)
1/8 Tsp. Ground Black Pepper

Steps:

  • First, if using frozen shrimp, thaw them out and pat them dry with paper towels.
  • Next, in a medium mixing bowl, toss the shrimp with the olive oil and seafood seasoning.
  • Then, thread 4-5 shrimp on each bamboo skewer and place them on a preheated grill for 2-4 minutes in each side.
  • Last, remove them from the grilled and set them on a plate to rest while you make the aioli.
  • First, in a medium mixing bowl, combine all the key lime aoili ingredients.
  • Next, use a whisk or fork to mix everything together.
  • Last, serve the aoili with your grilled shrimp.
