LIMA BEAN SPREAD / DIP

Lima Bean Spread / Dip image

This is from the Culinary Institute of America book, "Breakfast and Brunch". I have not made this yet, but the picture in the book looked delicious! A healthy alternative to some of the dips out there, with a beautiful vibrant green color. I would serve this with crostini or some crusty bread. The book also states that you could use this also as a pasta sauce, thinned down with a bit of pasta water. Prep time does not include 30 min. chill time.

Categories     appetizer

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 7

1 10-ounce box frozen lima beans
2 cloves garlic
1/4 cup loosely packed fresh parsley
Grated zest and juice of 1/2 lemon
1/4 cup extra-virgin olive oil
2 slices bacon, cooked and crumbled
Pita chips and/or vegetable sticks, for serving

Steps:

  • Bring a saucepan of salted water to a boil. Add the lima beans and garlic and simmer until tender, 18 to 20 minutes. Drain and rinse under cold water to cool slightly (the beans should be warm but not hot).
  • Pulse the lima beans, garlic, parsley, lemon zest, lemon juice and 1 1/2 teaspoons salt in a food processor until just combined. With the motor running, pour in the olive oil and process until incorporated but still slightly chunky. Transfer to a bowl and top with the bacon. Serve warm or at room temperature with pita chips and/or vegetable sticks.
  • Buy lima beans frozen: They're bright green and buttery tasting. The olive-colored, mushy lima beans you remember from childhood were probably canned.

BAKED LIMA BEAN RECIPE (GIGANTES PLAKI)

Baked Lima Bean Recipe (Gigantes Plaki) image

This traditional Greek baked lima bean recipe with added veggies is a one stop meal. Gigantes plaki is loaded with protein, perfect for all ages and so flavorful!

Provided by Sophia DeSantis

Categories     Main Course     Side Dish

Time 1h40m

Number Of Ingredients 11

2 cups lima beans (, dried)
1 sweet onion (, diced (about 3 inch diameter))
2 cloves garlic (, finely chopped)
1-2 tablespoons olive oil for sautéing (, optional or use 1/3 cup broth for oil free)
2 carrots (, chopped (about 5 inches long))
2 stalks celery (, chopped (about 8 inches long))
1 pound fresh spinach (, chopped (or Swiss chard or both))
1 pound fresh tomatoes (, diced)
1/2 cup fresh parsley (, chopped )
3/4 teaspoon sea salt
1/2 teaspoon ground black pepper

Steps:

  • Wash and soak the beans in a pot overnight.
  • The next day, drain the beans and add enough fresh water to cover them. Cook over low heat until half tender, about 30 minutes, drain, and save the broth.
  • Preheat oven to 350°F/180°C
  • In a large pot sauté the onions in veggie broth or olive oil for 2-3 minutes until they begins to get translucent.
  • Add the garlic, carrots, celery, spinach and/or Swiss chard and sauté for a couple more minutes.
  • Add beans and mix well.
  • Add tomatoes, salt and pepper and sauté for another minute. Then add parsley and mix well.
  • Add enough reserved broth from the beans to barely cover them. If you don't have enough reserved broth, then use water for the rest (you can also use extra veggie broth).
  • Cook over medium heat for 15 minutes stirring, occasionally. Add more broth if needed. You don't want it to get too dry.
  • Transfer to a 9 x 12 glass baking dish, cover with tin foil and bake for 30 minutes, or until beans are tender and liquid has evaporated.
  • Uncover and bake for an additional 10 minutes.
  • Serve hot!

  • In a medium casserole dish or glass baking dish (this beat-up stoneware dish is just perfect) dump the package of frozen limas (it's okay if a little bit of water or ice crystals stick to the beans). And yes, go ahead and use them straight out of the freezer.
  • Toss in the garlic cloves and drizzle everything with the olive oil. Toss it up good so that everything feels like it has been coated with a bit of the oil then spread out in an even layer. Pop the whole thing in the hot oven and bake 30-45 minutes or until the limas are done to your liking. I like mine crispy so I leave them for a full 45 minutes.
  • To serve, fish out the garlic and slice open the cloves to get at the sweet and creamy goodness inside. Squeeze the soft garlic over the lima beans, give the dish a generous pinch of salt and pepper and toss it up.
