- Halve avocados lengthwise. Twist halves to separate them, and remove pits. Run a large spoon between the flesh and skin, scooping out the flesh in one piece; discard skins. Slice into wedges, and place avocados on a serving platter. Drizzle with oil and lemon juice. Season with salt and pepper. Serve at room temperature.

LIMA MASH WITH LEMON AND OLIVE OIL
Steps:
- Combine lima beans, garlic, and 1/2 cup salted water in a medium saucepan. Bring to a boil over medium-high heat. Cover, reduce heat to low, and simmer until beans are very soft, about 15 minutes
- Coarsely puree beans and garlic in a food processor. Transfer to a small bowl and gradually beat in olive oil. Remove zest from lemon with a zester (or use a vegetable peeler, then finely julienne zest). Add lemon juice to taste, then season with salt and pepper. Serve in a small bowl with country-style bread on the side -- or toast the bread and top with lima mash, drizzle with a little olive oil and top with additional lemon zest.

- Cover the potatoes with cold water by 1 inch in a stockpot. Add salt and bring to a boil. Partially cover and simmer until very tender, about 15 minutes depending on their size. Reserve 1 cup of cooking water and drain.
- Meanwhile in a small pot on very low heat, cook the olive oil with the garlic cloves. Cook for 20 minutes keeping an eye to make sure the garlic does not burn. The garlic cloves should gradually turn a deep gold. Remove and discard the garlic.
- Return the drained potatoes to the pot, add the garlicky olive oil, pinch of sea salt and fresh black pepper. Mash with a potato masher or fork. Add the reserved cooking water as needed, a tablespoon at a time, to loosen the mash. Beat in the parsley if using. Serve.

- Place rutabaga, garlic, thyme, bay leaves and lemon zest in a large pot. Cover with about 1 inch of water, then bring to a boil and reduce to a gentle simmer. Season generously with salt and freshly ground black pepper and cook until rutabaga is very tender, 35- 45 minutes.
