A simple one pot meal combining Lima Beans and Rice seasoned with ham hock. Can be made with dry, fresh, or frozen beans.

1 small Ham Hock (12-oz)
1 package Lima Beans (16-oz)
1 cup Rice, uncooked
½ teaspoon Black Pepper
½ teaspoon Sugar

Steps:

  • Sort through the dry beans, removing any discolored beans, rocks or trash.
  • Place the beans in a large bowl, cover with about 3 inches of water.
  • Let the beans soak overnight.
  • Next Day, fill a large stock pot about half full with water.
  • Place the pot over Medium heat on your stove top.
  • Once the water begins to boil, add the ham hock.
  • Let the ham hock cook for about 20 minutes, then skim off any foam that might be on top.
  • Add the drained Lima beans.
  • Let the beans cook uncovered for about an hour, stirring once or twice in the process.
  • Add the black pepper.
  • Add the sugar.
  • Add the rice.
  • Cover the pot and let it simmer for about 10-15 minutes, stirring at least once.
  • Keep an eye on the level of liquid in the pot. Add warm water or broth as needed.
  • Cook until the beans and rice are done.
  • Taste and add salt or pepper as needed.
  • Enjoy!

This classic Southern Lima Bean recipe is a delicious side dish or budget-friendly entrée. The rich, smoky butter beans are flavored with a ham hock and slowly simmered until tender!

1 lb. large dried lima beans
2 tablespoons olive oil
2 medium onions, diced
1 stalk celery, diced
4 cloves garlic, minced
1 smoked ham hock, meat scored (about 12 ounces)
1 bay leaf
8 cups water
½ teaspoon kosher salt, or more to taste
½ teaspoon ground black pepper
Garnish: hot sauce; chopped fresh herbs
Optional, for serving: cornbread

Steps:

  • Rinse and sort the beans. Set aside.
  • In a large Dutch oven, heat olive oil over medium-high heat. Add onion and celery; cook, stirring frequently, until soft, about 5-8 minutes. Add garlic and cook for 1 more minute, stirring constantly.
  • Add the rinsed beans, ham hock, bay leaf, water, salt and pepper. Bring to a boil; reduce heat slightly just so that it's at a low boil, and cook for 20 minutes. Reduce heat again just so that the liquid is simmering. Cover and cook for about 1 ½ hours, or until beans are tender. Check the beans after 1 hour, because they may be soft enough at that point if you like your beans a bit more firm. If you prefer the beans really soft and broken down, you may prefer to extend the cooking time to 2 hours. While the beans are cooking, check to occasionally make sure that the beans are covered with water (adding more water, if necessary). Discard bay leaf, remove ham hock from the pot, and shred or chop the meat. Return chopped meat to the pot with the beans. Taste and season with additional salt and pepper, if necessary. Garnish individual servings with hot sauce and herbs; serve with cornbread.

4 Cups Chicken Broth

Steps:

  • Place beans in your slow cooker.
  • Add ham hocks and onion.
  • Add broth and any water needed to bring the waterline 2 inches above the beans.
  • Stir in seasonings.
  • Cook on HIGH for 2 hours then turn to LOW for 4 more hours or until the beans are tender.

1/3 cup butter
3 cloves garlic (minced)
1 1/2 cup diced ham
2 pounds frozen lima beans
4 cups water
1/2 tsp salt

Steps:

  • Melt butter over medium heat in a pot of dutch oven.
  • Add the garlic and ham. Sauté for 5 minutes.
  • Add the rest of the ingredients. Bring to a boil and then lower the heat to a simmer.
  • Continue to let simmer with it just barley boiling for about 75 minutes or until the beans are soft and most of the water is absorbed into beans or evaporated. There should only be 1-2 cups water left and it should have thickened somewhat.
  • Serve

I was born and raised in the south, and we eat a lot of beans. Here is a easy and basic lima bean recipe. We've been doing it this way for years. You can use ham hocks, hambones, smoked bacon or smoked sausage for the pork flavor in this dish. Also fresh, frozen or even canned beans can be used--they just won't have to cook as long.

1 (1 lb) bag regular lima beans or 1 (1 lb) bag baby lima beans
1 medium onion, chopped
2 ham hocks or 1 leftover ham bone, with some meat still on it
2 garlic cloves
1 teaspoon black pepper
salt
1 tablespoon olive oil or 1 tablespoon vegetable oil

Steps:

  • I know the bag says to soak the beans overnight, but you really don't have to.
  • Wash the beans, and then put them in a large pot. Cover with water and bring to a boil. Boil for 3 to 5 minutes, then turn off the heat, cover and let it sit for 1 hour.
  • After the beans have sat, drain the water and sit the beans to the side.
  • Add the oil to the pot and sauté the ham hocks and onions together, until onion is clear and tender, add garlic and sauté about 2 minutes more. Add the beans and cover with water.
  • Add pepper and salt--only about 1 teaspoon of salt at first.
  • Bring to a boil; stir, reduce heat and cover and simmer for about 2 hours.
  • Keep checking the water level and stirring every once in a while. Add more water if needed, but not too much.
  • Just enough to keep about 1 inch of water above the beans as they cook.
  • Cook until beans are tender, adding more salt if needed. The water will turn into a wonderful gravy. Serve over rice.

1 (16 ounce) package dried lima beans
1 ham bone with some meat
8 cups water, or more as needed
1 tablespoon olive oil
4 stalks celery, diced
1 onion, diced
½ pound diced cooked ham
4 carrots, peeled and sliced
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon dried parsley

Steps:

  • Place beans in a large pot; cover with 2 inches water. Bring to a boil. Remove from heat, cover, and let stand for 1 to 2 hours. Drain and rinse. Transfer beans to another container.
  • Combine ham bone and 8 cups water in a large saucepan. Simmer over medium-low heat until remaining meat falls off the bone, about 2 hours. Remove and discard bone. Use a slotted spoon to transfer meat to a bowl.
  • Heat oil in a skillet over medium heat. Add celery and onion; cook and stir until onion is translucent, 7 to 10 minutes. Add cooked ham bone meat, lima beans, and diced ham. Reduce heat and simmer, adding additional water as needed, until soup is thickened to desired consistency, about 90 minutes.
  • Stir carrots, salt, pepper, and parsley into the soup. Let simmer until carrots are soft, about 30 minutes more.

3 cups water
2 potatoes, diced
1 (15.25 ounce) can whole kernel corn
1 large tomato, diced
½ medium onion, diced
1 stalk celery, diced
2 tablespoons cornstarch
¼ cup milk
6 ounces cooked ham, diced
1 sprig chopped fresh parsley
salt and pepper to taste

Steps:

  • Place the lima beans in a large pot, and pour in the water. Bring to a boil, reduce heat to medium, and cook 15 minutes. Mix the potatoes, corn, tomato, onion, and celery into the pot, and continue cooking 15 minutes.
  • In a small bowl, dissolve the cornstarch in the milk. Stir into the pot, and mix in the ham. Continue cooking until heated through. Season to taste with salt and pepper and sprinkle with parsley before serving.

  • Put the lima beans in a kettle with the water. Bring to a full boil and boil for 2 minutes. Remove from heat and allow them to stand, covered, for 1 1/2 hours. Then add the ham hocks, onions, and celery. Season with brown sugar, mustard, and salt. Cover and simmer for 2 hours. Remove meat from bones, keeping it in large pieces. Skim excess fat from top of sauce. Return meat to kettle.

1 pound dry baby lima beans
4 cups cubed, chopped or shredded fully cooked ham
1-1/2 cups chopped yellow onion (about 1 medium onion)
1 tablespoon freshly minced garlic
3 cups chicken broth
4 cups water
1 teaspoon freshly ground black pepper
1 bay leaf
Optional: fresh chopped parsley, for garnish

Steps:

  • Rinse and sort beans in a colander, removing and discarding any debris.
  • Place beans and remaining ingredients (except parsley) in the insert of your Instant Pot (I used an 8 quart) and stir well to combine.
  • Place the lid on and lock. Steam release knob should be set on "sealing".
  • Cook on manual setting (high pressure) for 25 minutes. Allow the pressure to naturally release for 10 minutes, then quick release remaining pressure.
  • Carefully remove lid and stir. Remove and discard bay leaf. Garnish with fresh chopped parsley, if desired.
