Time 1h30m

Number Of Ingredients 12

2 red bell peppers, quartered lengthwise, ribs and seeds removed
2 teaspoons olive oil
1 medium onion, chopped
4 carrots, chopped
3 garlic cloves, chopped
4 cups canned reduced-sodium vegetable broth
1/2 teaspoon dried thyme
2 packages (10 ounces each) frozen baby lima beans
1/4 cup fresh basil leaves
1 tablespoon fresh lemon juice
1 1/2 cups cooked small pasta, such as ditalini or tiny elbows
Coarse salt and ground pepper

Steps:

  • Heat broiler. Place peppers, skin sides up, on a baking sheet. Broil 4 inches from heat until charred, 18 to 20 minutes. Let cool slightly; using a paper towel, rub off blackened skins. Coarsely chop peppers; set aside.
  • Heat oil in a large saucepan over medium heat. Cook onion and carrots until beginning to soften, about 5 minutes. Add garlic, and cook until fragrant, about 1 minute.
  • Add broth, thyme, lima beans, and 2 cups water. Bring to boil; reduce heat to medium-low. Cover; simmer 15 minutes. Stir in basil and lemon juice.
  • Working in batches (do not fill container more than halfway), puree soup in a blender or food processor until smooth. Return soup to pan; bring to a boil, and add pasta and reserved peppers. Season with salt and pepper. Serve hot.

Yield Makes 6 servings

Number Of Ingredients 10

2 tablespoons olive oil
1 large onion, thinly sliced
4 garlic cloves, minced
1 tablespoon chopped fresh thyme or 1 teaspoon dried
1/4 teaspoon dried crushed red pepper
3 1/2 cups 1/2-inch pieces seeded peeled butternut squash (from about one 2-pound squash)
1 10-ounce package frozen baby lima beans, thawed
2 cups (or more) canned vegetable broth
10 ounces penne pasta (3 cups)
1/4 cup grated Parmesan cheese

Steps:

  • Heat oil in large nonstick skillet over medium heat. Add onion and sauté until tender and golden, about 10 minutes. Add garlic, thyme and crushed red pepper and stir 1 minute. Add squash and lima beans and sauté 3 minutes. Add 2 cups broth and bring to boil. Reduce heat, cover and simmer until vegetables are tender, about 6 minutes. Season to taste with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain. Return to pot. Add squash mixture to pasta. Toss to blend, adding more broth by 1/4 cupfuls to moisten if necessary. Season with salt and pepper. Transfer to bowl. Sprinkle with Parmesan cheese.

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 16

3 quarts water
3 tablespoons olive oil
6 garlic cloves, thickly sliced
1/4 teaspoon red pepper flakes
2 tablespoons fresh Italian parsley, chopped
1/2 onion, chopped
1 1/2 cups frozen lima beans, thawed
3/4 cup prosciutto or 3/4 cup ham, chopped
1/4 cup dry white wine
1 1/2 cups chicken stock
1/3 cup whipping cream
3/4 teaspoon salt
1/4 teaspoon black pepper
3 cups swiss chard or 3 cups spinach, thinly sliced
1 lb penne or 1 lb spaghetti
1/4 cup parmigiano-reggiano cheese, freshly grated

Steps:

  • Bring the water to a boil in a large pot.
  • Heat the olive oil in a large saute pan set on high heat until sizzling, about 2 minutes.
  • Add the garlic, red pepper flakes, parsley, onion, lima beans and prosciutto or ham.
  • Reduce the heat to medium and cook until the garlic begins to brown and the onion is soft, about 5-6 minutes.
  • Stir in the wine and boil until reduced by half, about 2 minutes.
  • Add the chicken stock, cream, salt and pepper and simmer for 10-15 minutes, until the sauce is slightly thickened.
  • Add the Swiss chard or spinach leaves to the sauce about 2 minutes before it's done, stirring well.
  • While the sauce is simmering, add the pasta to the boiling water and cook until just tender.
  • Drain the pasta well and return it to the pot.
  • Pour the sauce over the pasta and cook over medium heat, stirring constantly, for 3 minutes.
  • Remove the pan from the heat, stir in cheese and serve.

HEART HEALTHY LIMA BEAN PESTO & PASTA

Heart Healthy Lima Bean Pesto & Pasta image

Pesto lovers check this out! A cholesterol-lowering fiber and protein filled pesto. Arugula gives this pesto a nice bite if you want more of a kick go ahead and add the optional sriracha sauce. The Lima beans, cheeses and olive oil gives this a butter texture and protein. The lima beans replace the nuts in pesto's. You can do 1/2 arugula and 1/2 basil for more of a bite! BUT be sure to use tender baby arugula for it is raw in this recipe. The older the tougher and stronger it gets. The cook time is for the pasta. Mine was 8 minutes but cook according to package directions.
