1 pound ground beef
1 small onion, chopped
1 garlic clove, minced
1 can (10-1/2 ounces) condensed beef broth, undiluted
1 can (8 ounces) tomato sauce
1 can (6 ounces) tomato paste
1 can (16 ounces) hot chili beans, undrained
1 can (15 ounces) black beans, rinsed and drained
2 tablespoons sugar
1 tablespoon butter
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon ground cumin
1/8 teaspoon crushed red pepper flakes
Dash cayenne pepper
2 cups frozen lima beans, thawed
Cherry tomatoes, fresh oregano and small chili peppers, optional

Steps:

  • In a large saucepan, cook beef and onion over medium heat until meat is no longer pink. Add garlic; cook 1 minute longer. Drain. Stir in the broth, tomato sauce and paste until blended. Add the next 10 ingredients. Bring to a boil. Reduce heat; cover and simmer for 30 minutes., Add lima beans; cook 5-10 minutes longer or until beans are tender. Garnish with tomatoes, oregano and peppers if desired.

1 (28-ounce) can diced tomatoes
4 cups reduced-sodium vegetable broth
1 (15-ounce) can black beans, rinsed and drained
1 (15-ounce) can white (cannellini) beans, rinsed and drained
1 (15-ounce) can red kidney beans, rinsed and drained
1 cup frozen baby lima beans or regular lima beans
1 cup chopped onion
1 green bell pepper, seeded and chopped
2 cloves garlic, minced
1 tablespoon minced pickled jalapeno (from can or jar)
2 tablespoons chili powder
2 tablespoons dried Mexican oregano or regular oregano
2 teaspoons ground cumin
1 teaspoon ground coriander
1 to 2 teaspoons hot sauce
1/3 cup couscous
1/2 cup shredded Monterey jack cheese
1/3 cup chopped fresh cilantro leaves
Salt and freshly ground black pepper

Steps:

  • In a slow cooker, combine all ingredients but the couscous, shredded cheese, cilantro and salt and pepper. Cover and cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours.
  • Five to 10 minutes before serving (depending on temperature of slow cooker) add couscous, cover and cook, until couscous is tender. Season, to taste, with salt and black pepper.
  • Just before serving, top each serving with shredded cheese and cilantro.

1 (15 ounce) can whole kernel corn, drained
1 onion, chopped

Steps:

  • In a slow cooker, combine black bean soup, kidney beans, garbanzo beans, baked beans, tomatoes, corn, onion, bell pepper and celery. Season with garlic, chili powder, parsley, oregano and basil. Cook for at least two hours on High.

2 tablespoons olive oil
1 large onion, chopped
3 ribs celery, chopped
4 cloves garlic, minced
1 1/2 cups corn kernels (frozen and thawed or canned and drained)
1 (4-ounce) can green chile peppers, chopped
2 teaspoons ground cumin
2 teaspoons chili powder
2 teaspoons dried oregano
1/2 teaspoon cayenne pepper, optional
5 1/2 cups vegetable broth
5 (14.5-ounce) cans great Northern beans, undrained

Steps:

  • In a large pot, heat the olive oil over medium heat. Add the chopped onions, celery and garlic, and heat for 5 to 7 minutes, until the onions and celery are soft.
  • Add the green chili peppers, corn kernels, cumin, chili powder, oregano, and cayenne pepper.
  • Heat for just a minute or two, then add vegetable broth and beans. Bring to a boil, then reduce the heat to a low simmer.
  • Allow to cook, partially covered and stirring occasionally, for 20 to 30 minutes.
  • Serve your chili topped with a bit of shredded cheese, if you're not eating vegan.

1 lb dried baby lima beans or 1 lb regular size lima beans
1 (28 ounce) jar tomatoes
3 large onions, cut to size of 25 cent piece
1 (1 ounce) package onion soup mix
4 stalks celery, cut up
1 -2 bell pepper, cut up
sliced mushrooms (optional)
salt and pepper
chili pepper, to taste and may be omitted (optional)

Steps:

  • Wash beans. Add tomatoes, onion soup mix and enough water to cover beans if necessary.
  • Simmer until beans are tender.
  • Add the rest of ingredients and simmer or cook in pressure cooker until all is soft and tender.
  • You may add ham, or smoked sausage or any other meat you like as an option.

1 pound dried baby lima beans sorted and rinsed
1 medium onion chopped
3 cloves garlic minced
1 stalk celery chopped
1/2 medium red bell pepper diced
2 sprigs thyme or 1/2 teaspoon dried
1 teaspoon smoked paprika
1/4 teaspoon Cayenne pepper
6 cups water or vegetable broth
2 vegan bouillon cubes
1 tablespoon Bragg's liquid aminos
1/4 teaspoon hickory liquid smoke (optional)

Steps:

  • Place butter beans in the Instant Pot, add onion, garlic, celery, red bell pepper, thyme, smoked paprika, cayenne pepper.
  • Add water or vegetable broth, vegan bouillon cube, Bragg's Liquid Aminos, and hickory liquid smoke.
  • Turn your Instant Pot on. Place lid on the Instant Pot and close the lid. Turn the knob to the sealing position.
  • Press Manual setting and cook on High Pressure for 25 minutes.
  • Allow to naturally release pressure for about 20 minutes.
  • Remove the lid, if your butter beans have too much liquid.
  • Turn off the Instant Pot and turn it on again, press the Saute mode, and allow to cook until it has reached the desired thickness. Mash some of the beans.
