LILY TWIG SALAD
I have no idea where the name of this salad came from but it is delicious. This recipe is from my sister and is a hit every time I serve it. I have never had leftovers and usually find myself foraging in the kitchen to make more no matter how much I made. I am usually not a fan of sweet dressings, but this one complements the saltiness of the bacon and the tang of the cheese beautifully. **The amounts for the salad are approximate. Use as much or as little as you want to suit your taste. Prep time includes the time it takes to cook the bacon**

- In a non stick frying pan, place the sliced mushrooms and spray with Pam cooking spray. Saute until lightly cooked, add the spinach and let it wilt a bit and then set aside.
- Heat the roasted veggies in the skillet if they are not hot and then layer the roasted vegetables on top of the spinach and mushrooms. The heat of the cooked chicken and roasted veggies will help to wilt the spinach a bit more.

- Remove the stems from the kale and chop the leaves into thin strips. Place the strips of kale in a large bowl and massage with the oil, about 30 seconds, until the leaves grow deep green, reduce in volume, and take on a mellow sheen.
- Slice each sugar snap pea in half diagonally across its midsection to reveal some of the peas (or do the same for green beans). Add the sliced peas, fennel, and radishes to the bowl with the massaged kale.
- On a cutting board, give the parsley, mint leaves, and the reserved fennel fronds a coarse chop. Add to the bowl of kale and veggies. Add 1 tablespoon of the lemon juice and the salt, and toss vigorously to combine. Add the feta and toss gently to integrate. Taste and adjust the salt and lemon juice as desired. Serve immediately. The salad will keep in an airtight container in the fridge for up to 3 days.

- Mix the crushed pretzels, melted butter, and sugar together. Press the mixture onto the bottom of a 9×13″ glass baking dish. Bake for 10 minutes and let cool completely.
- Beat together the cream cheese and sugar until smooth. Fold in the Cool Whip until combined. Carefully spread on top of the baked pretzels. Make sure to seal all the edges so the jello doesn’t seep to the bottom and make the pretzels soggy. Chill for 30 minutes.
- Dissolve the jello powder in the hot water. Stir in the cold water and pour over the sliced strawberries. Gently stir the strawberries to coat. Carefully spoon the strawberry mixture on top of the cream filling. Refrigerate for 2-4 hours or until the jello is set.
