BABY BACK RIB RECIPE: SEARED, BRAISED & GRILLED
This is an awesome baby back rib recipe... first we sear in the flavor, then braise to the perfect tenderness and lastly fire them off on the grill to caramelized perfection. Yumm!

- Take the ribs out of the refrigerator now. We want them to start warming up as we are getting everything else ready.
- First, mix all the dry rub ingredients into a bowl. Although I've put in exact quantities, you can use more of some and less of others. Like more heat? Toss in more cayenne. This is a guideline, so be creative!
- Preheat the oven to 325 degrees
- Get a 9X13 baking dish out and coat with non-stick cooking spray. Layer the sliced onions on the bottom and add in the stock. Set aside.
- Remove the ribs from the package. Pat dry with paper towels and remove the membrane from the back side of the ribs (the easiest way is to peel about ½ inch away with a knife, then grab with a dry paper towel and pull. It should come right off!)
- Slice the rib rack in half. Coat all surfaces with the dry rub. If you run out of rub, make some more.
- Heat the skillet over medium-high heat and add the oil. When the pan is nice and hot, begin searing the ribs, meat side down. They should cook for about two to three minutes in the pan. Get them nice and brown! You do not need to sear the bone side. As they get browned, remove from the pan and layer in the prepared baking dish.
- While the pan is still hot, deglaze with ½ cup cold tap water. Stir constantly to get the brown bits off the pan. Pour the water from the pan directly into the 9X13 baking dish.
- Cover the baking dish with foil and make sure the foil has a good seal. Put the dish in the oven and cook for 2 hours.

- We are looking for the ribs to be about 200 degrees. When your ribs are done, pull from the oven, remove the foil and let sit for about 15 minutes. This is a great time to start up the grill.

THE BEST BABY BACK RIBS
This is the very best recipe for ribs that I have ever had. The sauce is a very wonderful compliment to these tender, fall off the bone ribs. Everyone that has them wants the recipe. Don't let all the ingredients fool you. It is very easy to make. These are sure to be a big hit!

- Place ribs bone side down in a large roasting pan on a rack (if you have one, you don't have to use rack)
- Combine garlic powder, seasoning salt, and pepper. Sprinkle over the ribs. Top with sliced onions. Cover tightly and bake at 350 for 2 1/2 hours.
- In a bowl, combine the remaining ingredients and this is your sauce.
- Remove ribs from pan, remove onions and discard, and drain fat. Put ribs back in pan and brush ribs liberally with sauce. Cover and bake 25 minutes longer. Uncover and cook 5 more minutes. Serve with remaining sauce.
- You can reduce the amount of ribs if you are cooking for a smaller group. I usually use 2 racks to serve 4.
BAKED BABY BACK RIBS
Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

- In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
- Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
- In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
- Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
- Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
- While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
- Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

- Preheat pellet smoker to 225 degrees fahrenheit.
- In a medium bowl, combine the sugar, salt, pepper, minced onion, garlic powder, cayenne, and paprika. Whisk together.
- Place your ribs, with the bottom facing up, on your baking sheet. Remove the membrane from the back of the ribs.
- Drizzle a bit of vegetable oil (around 2 tablespoons, but you don't have to be exact) on the back of the ribs and rub it all over.
- Sprinkle about ⅙ of the spice mixture on the back of each rack of ribs and rub it in thoroughly.
- Flip the ribs and repeat the oil and spice process, just divide the remaining seasoning mixture between the two racks
- Place your 8x8 pan of water to the back of your smoker and then place your racks of ribs in the smoker.
- Cook for 3 hours at 225 degrees, spraying every half an hour with the apple cider vinegar. Spray them just enough to make them shiny, you don't have to be exact here.
- Place foil on your baking sheet, making sure that the foil is about 5 inches longer than the ribs on each side.
- Place your ribs on the foil, generously squirt with apple cider vinegar, seal it tightly, and continue to bake at 225 degrees for 2 more hours.
- Remove the ribs from the foil, smother with BBQ sauce, and place them back in the smoker, without the foil, and smoke for 1 more hour. Enjoy!
- Add all the wet ingredients to a medium boiling pot. Using an immersion blender, blend the ingredients until smooth. You can also use a normal blender if you have one large enough, or do it in batches.
- Add the rest of the ingredients, stir, and simmer for 30-45 minutes. The longer you simmer, the thicker it will get.

- Preheat the oven to 350°.
- Cut the rib slabs in half, leaving 6 to 8 ribs per section. In a large roasting pan, arrange the ribs evenly, then add the water. Cover the pan tightly with a lid or foil to prevent steam from escaping. Bake for 3 hours.
- About 2 hours into the baking time, make the sauce. In a large saucepan, combine all the sauce ingredients. Simmer over low heat for 1 hour, stirring occasionally.
- Prepare the coals in a barbecue. Remove the ribs from the roasting pan. Discard the water.
- Cover the ribs with the sauce, saving about 1 1/2 cups of the sauce for later use at the table. Grill the ribs on the barbecue for about 5 minutes per side, or until slightly charred.
- Serve with the remaining sauce and lots of paper towels or moist towelettes.

- 1. FOR THE SAUCE: Put ketchup , lilikoi juice consentrate, sugar, honey, corn syrup, oyster sauce, vinegar, worcestershire, Tabasco, and garlic into a medium pot and bring to a boil over medium heat, Reduce heat to medium-low and simme , stirring often, until very thick, about one hour. 2.FOR THE RIBS: Meanwhile, put 8 quarts of water into a large pot and bring to a boil over high heat. Add vinegar, garlic, ginger, salt,and pepper, reduce heat to medium, and simmer for 5 minutes. Add ribs and continue to simmer , partially covered , until tender, about 1 hour. Draib ribs , pat dry, and arrange in a single layer on a sheet pan fitted with a rack. 3. Arrange oven rack 3-4 inches from broiler element and preheat broiler.Generously baste one side of ribs with some of the sauce and broil until sauce dries slightly and begins to bubble , about 2 minutes.
