BLUE RIBBON SUGAR COOKIES

A light, crispy but tender sugar cookie loaded with flavor. These cookies are especially requested at Christmas. They're easy and definitely a crowd-pleaser.

¾ cup butter, softened
1 cup vegetable oil
1 cup confectioners' sugar
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 ½ teaspoons lemon extract
4 cups all-purpose flour
1 teaspoon cream of tartar
1 teaspoon baking soda
1 teaspoon salt
½ cup white sugar for decoration

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Sift together the flour, cream of tartar, baking soda and salt; set aside.
  • In a large bowl, cream together the butter, oil, confectioners' sugar and white sugar until well blended. Stir in the eggs, vanilla and lemon extracts. Gradually mix in the dry ingredients until well blended. Roll the dough into walnut sized balls. Place the cookies 2 inches apart onto the cookie sheet. Flatten cookies to 1/8 inch thickness using the bottom of a glass dipped in sugar. Colored sugar may be used if you do not plan to frost cookies later.
  • Bake for 9 to 12 minutes in the preheated oven, or until the edges are golden brown. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

1 cup slightly softened unsalted butter (227 grams)
1 1/2 cups granulated sugar (300 grams)
2 large eggs (100 grams)
1 teaspoon vanilla (5 grams)
1 teaspoon almond extract (5 grams)
3/4 teaspoon salt (4 grams)
3/4 teaspoon baking powder (3 grams)
4 (or 4 1/2 cups) flour (560 - 630 grams)

Steps:

  • Preheat oven to 375 F. Line baking sheets with silicone baking mats or parchment paper.
  • Cream butter and sugar together.
  • Add eggs, vanilla, and almond extract. Mix well.
  • Add baking powder and salt and mix again.
  • Add flour 1 cup at a time.
  • IF YOU ARE GOING TO MAKE THESE COOKIES RIGHT AWAY, add 4 1/2 cups flour and go for it. No need to chill the dough. If you are not going to use the dough within 4-6 hours -- stop at 4 cups of flour.
  • Bake at 375 F. If you roll to 1/4" thick, bake for about 7 minutes. If you roll to 3/8" thick, bake for about 9-11 minutes.

1 cup slightly softened unsalted butter (227 grams)
1 cup firmly packed dark brown sugar (240 grams)
1/4 cup honey (76 grams)
2 large eggs (100 grams)
2 teaspoons vanilla (10 grams)
1 teaspoon cinnamon (2 grams)
3/4 teaspoon salt (4 grams)
1/2 teaspoon baking powder (2 grams)
1 1/2 cups graham flour (or whole wheat flour) (240 grams)
3 - 3 1/2 cups all-purpose flour (420 - 490 grams)

Steps:

  • Preheat oven to 375° F. Line baking sheets with silicone baking mats or parchment paper.
  • Cream the butter and sugar together. If you have any brown sugar lumps, you should crush them up or pull them out. If your brown sugar is especially lumpy or hard, you can microwave it in 10 second bursts until it softens.
  • Add the honey and mix until blended.
  • Add the eggs, vanilla, cinnamon, salt, and baking powder. Mix thoroughly.
  • Add the graham flour and all-purpose flour all at once and mix on low until the dough comes together and forms a ball. (If you are going to roll out right away - use 3 1/2 cups of all-purpose flour. If you plan to let the dough chill in the refrigerator or freezer for more than 4-6 hours, use only 3 cups of all-purpose flour.)
  • Bake at 375°F. If you roll your dough to 1/4" - Bake for 7-8 minutes. If you roll your dough to 3/8" - Bake for 10-12 minutes.

The butter will be light and fluffy with just a little grain from the sugar. Add the lemon zest and mix for a minute or two to combine. Things should be smelling really delicious right about now. Crack eggs into a small bowl and add them to the mixer one at a time, making sure each egg mixes thoroughly. Add salt and baking powder and mix until just combined.
  • Add the flour one cup at a time (up to 3 cups). Make sure to mix the flour completely. After the third cup, add flour in ½ cup increments (up to 4½ cups). As Georganne explains on Lila Loa, the amount of flour you add varies depending on a lot of factors. Check out her advice here.
  • I used 4 cups of flour and the dough looked like playdough. The dough should not be sticky and should hold together. Lightly flour your counter and roll the dough out very thin--about ⅛ to ¼ inch thick. Cut the cookies out and put on a parchment or silicon lined baking sheet. Bake for 7 to 8 minutes. Be careful not to over bake. These cookies are light and do not really get golden brown, even at the edges. Frost with royal icing (recipe below). Makes about four dozen cookies.
  • If you have not made royal icing before, do yourself a favor and read Sweet Sugar Belle's Royal Icing 101 post. She provides amazing and thorough step by step photo directions.
