HOMEMADE PEACH PIE

Homemade Peach Pie image

This Homemade Peach Pie is a bit of summer paradise on your plate! Flakey buttery crust is filled with a luscious sweet peach filling that is perfect with a scoop of vanilla ice cream.

Provided by Alyssa Rivers

Categories     Dessert

Time 1h30m

Number Of Ingredients 16

2 1/2 cups all purpose flour
1 Tablespoon granulated sugar
1 teaspoon salt
1 cup unsalted butter, cold and cubed
6-8 Tablespoons ice water
5 cups 6-8 ripe but firm peaches (peaches, sliced (can be peeled or unpeeled))
1/3 cup granulated sugar
1/3 cup brown sugar
1/3 cup flour
1/2 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
2 Tablespoons lemon juice
1 teaspoon vanilla extract
1 large egg yolk
2 Tablespoons water

Steps:

  • Add flour, sugar, salt and cubed butter to a stand mixer with the paddle attachment. Mix until the butter resembles pea shaped crumbs.
  • Add water to the dough 1 tablespoon at a time until the dough forms a ball.
  • Divide the ball into two balls and shape each into a round flat disk. Place in the refrigerator for 1 hour or overnight to chill.
  • Preheat oven to 425 degrees Fahrenheit.
  • Peel and slice your peaches and all them to a colander to drain the excess juices for about 30 minutes.
  • While your peaches drain, prep your bottom pie crust in your pie pan. Place in the fridge until you're ready to add your filling.
  • In a bowl, whisk together granulated sugar, brown sugar, flour, cinnamon, nutmeg and salt. Pour your peaches into a large bowl and add the dry ingredients on top and toss together. Add the lemon juice and vanilla extract and mix again. Pour filling into prepared pie pan.
  • Layer the top crust over the pie and crimp the edges to seal.
  • In a small bowl, use a fork to mix the egg yolk with the water to make your egg wash. Use a pastry brush to brush it across the top of the pie crust. If you'd like, you can sprinkle granulated sugar over the top of the egg wash.
  • Place the prepped pie on a sheet pan (to catch any run-over juices) and bake for about 40-50 minutes, until the filling is bubbly and the bottom crust is golden brown. If the top crust is getting too dark, you can use aluminum foil on top to prevent it from browning further.
  • Cool at least 20 minutes before cutting so the filling has time to set up. Serve with whipped cream or vanilla ice cream.

STRAWN'S EAT SHOP'S STRAWBERRY ICEBOX PIE

Strawn's Eat Shop's Strawberry Icebox Pie image

Since opening in 1944, Strawn's has received tons of attention for its signature icebox pie, and you probably won't get out of the place without trying one. Reminders are everywhere: Cream-topped, fruit-filled pies are painted on the walls and plastered on the front of the menu, and the staff shirts say #PIE. The recipe itself isn't complicated. In the 1920s and '30s, icebox pies were a practical choice for home cooks, who could prebake the shell and then keep the whipped filling cool in an icebox until it was time for dessert. Lemon versions are common in the South, but Strawn's made a name for itself with this fresh strawberry one.

Provided by Food Network

Categories     dessert

Time 5h20m

Yield 6 to 8 servings

Number Of Ingredients 16

1 1/2 cups all-purpose flour, plus more for dusting
Pinch of salt
1/2 cup cold vegetable shortening
3 tablespoons ice water
2 large eggs
1/2 cup plus 3 tablespoons granulated sugar
3 tablespoons cornstarch
3/4 cup whole milk
1 tablespoon unsalted butter, melted
1 drop red gel food coloring
2 cups sliced strawberries
Confectioners' sugar, for dusting
2 cups cold heavy cream
1/4 cup confectioners' sugar
1 teaspoon pure vanilla extract
1 strawberry half, for topping

Steps:

  • Make the crust: Pulse the flour and salt in a food processor until combined. Add the shortening and pulse until the mixture looks like coarse cornmeal. Add the ice water, then continue to pulse until the mixture becomes a shaggy dough. Form the dough into a disk, wrap in plastic wrap and refrigerate until firm, about 30 minutes.
  • Roll out the dough on a lightly floured surface into an 11-inch round (about 1/8 inch thick), then fit into a 9-inch pie dish. Trim away any excess dough, crimp the edges and prick the bottom all over with a fork. Refrigerate until firm, about 30 minutes.
  • Preheat the oven to 350 degrees F. Line the bottom of the pie with foil or parchment paper and fill with pie weights or dried beans. Bake until the bottom is just starting to set and the edges are just starting to brown, 25 to 30 minutes. Remove the foil and weights and continue to bake until the crust is golden brown and cooked through, about 10 more minutes. Transfer to a rack and let cool completely.
  • Meanwhile, make the glaze: Whisk the eggs with the granulated sugar in a medium bowl until smooth. In a separate bowl, whisk the cornstarch with 2 tablespoons milk until smooth, then whisk into the egg mixture. Warm the remaining 1/2 cup plus 2 tablespoons milk and the melted butter in a medium saucepan over medium-high heat until steaming, 2 minutes. Slowly whisk the warm milk mixture into the egg mixture, whisking constantly, then return the entire mixture to the saucepan. Reduce the heat to medium and cook, whisking constantly, until thickened, about 4 minutes. Whisk in the red food coloring.
  • Spoon the glaze into the pie crust and spread over the bottom and up the sides. Cover with plastic wrap and refrigerate until set, 2 hours.
  • Spread the berries in the glazed crust. Dust with confectioners' sugar.
  • Make the topping: Beat the heavy cream, confectioners' sugar and vanilla in a large bowl with a mixer on medium-high speed until stiff peaks form. Spread over the pie and top with the strawberry half.

  • To prepare crust: Combine whole-wheat flour, all-purpose flour and salt in a large bowl or food processor. Work in butter using a pastry blender or 2 knives or by pulsing in the food processor until it is pebble-sized. Add oil and egg yolk; stir with a fork or pulse until combined. Add ice water, 1 tablespoon at a time, stirring with a fork or pulsing, until the dough is evenly moistened (but not wet) and is just starting to clump together. Be careful not to overmix. Divide the dough into 2 pieces, one slightly larger than the other. Pat each one into a disk. Wrap in plastic wrap and refrigerate for at least 1 hour or for up to 2 days.
  • Position rack in the center of the oven and place a foil-lined baking sheet on the rack below to catch any drips. Preheat oven to 375 degrees F.
  • Remove the dough from the refrigerator and let stand for 10 minutes to warm up slightly (or 20 minutes, if the dough has been refrigerated for more than 1 hour).

  • Brush egg wash on the storebought crust and bake per package instructions or at 375° for 8-12 minutes until golden brown. Set aside to cool.
  • In a medium bowl, whisk together the eggs and granulated sugar until incorporated. In a separate bowl, mix 2 tbsp of the milk with cornstarch and stir until smooth. Pour cornstarch mixture into the egg mixture and combine. Warm the remaining milk (1/2 cup + 2 tbsp) and butter over medium heat until steaming, approx 2 minutes (be careful not to bring it to a simmer). Slowly pour the warm milk into the egg mixture, whisking constantly, to avoid cooking the eggs.* Then place the entire mixture into the saucepan on medium heat. Stir constantly until the glaze thickens, about 5-10 minutes. Remove from heat. Pour the glaze through a fine-mesh strainer into a heat-safe bowl. The strainer ensures a smooth glaze.
  • Whisk in the red food coloring and powdered freeze-dried strawberries to make that rich, red-pink color! Refrigerate the glaze for at least an hour to cool down. Cooling overnight is ideal. You’ll have enough strawberry glaze for about 2 pies, so you will have plenty.
  • With a hand mixer or stand mixer with a whisk attachment, beat together the heavy cream, confectioner’s, sugar, and vanilla until it forms stiff peaks. Be careful not to overbeat it (it will look curdled if it is). Set aside.
