ANTIPASTI SALAD

1/4 medium red onion, minced
1/2 medium fennel bulb, trimmed and cored
1 (15-ounce) can chickpeas, rinsed and drained
4 jarred roasted sweet red peppers, chopped (about 3/4 cup)
1 (6-ounce) jar marinated artichoke hearts, rinsed, drained, and quartered, if whole
2 cups baby arugula
1 cup fresh flat-leaf parsley leaves
1/4 cup kalamata olives, pitted (about 2 ounces)
1/2 to 1 cup freshly shaved Parmigiano-Reggiano
1 small garlic clove, peeled
1 1/2 teaspoons kosher salt
1 teaspoon freshly grated orange zest
2 tablespoons white wine vinegar
Freshly ground black pepper
1/3 cup extra-virgin olive oil

Steps:

  • For the salad: To mellow the minced onion, soak it in cold water for 10 minutes, then drain well, pat dry, and put in a serving bowl.
  • Meanwhile, make the dressing: Smash the garlic clove, sprinkle with 1/2 teaspoon of the salt, and, with the side of a large knife, mash and smear the mixture to a coarse paste. Put the paste in a bowl and add the orange zest, vinegar, remaining 1 teaspoon salt, and black pepper, to taste. Gradually whisk in the olive oil, starting with a few drops and then adding the rest in a steady stream to make a smooth, slightly thick dressing.
  • Using a handheld mandoline or a knife, cut the fennel lengthwise into long, thin slices. Add to the onion and toss with the chickpeas, peppers, artichoke hearts, arugula, parsley, and dressing. Scatter the olives and shave the Parmigiano-Reggiano over the top.

A simple dressing shaken together in a jar gets tossed with all the flavorful elements of the standard antipasti platter - with crisp lettuce, too.

1 teaspoon granulated garlic
⅓ palmful
1 teaspoon granulated onion
⅓ palmful
1 teaspoon dried oregano
⅓ palmful
1 teaspoon dried parsley
⅓ palmful
1 teaspoon superfine sugar
⅓ palmful (or 1 teaspoon honey)
½ teaspoon crushed or ground red pepper
pepperoncini
2 tablespoons wine vinegar
white or red
1 tablespoon Dijon mustard
6 tablespoons extra-virgin olive oil (EVOO)
Salt and pepper
3 gem Romaine
or 1 heart Romaine
chopped
¼ cup chopped marinated artichokes
¼ cup chopped marinated mushrooms
1 roasted red pepper
chopped
¼ pound Genoa salami or finocchiona (fennel) salami
deli sliced
cut into bite-sized pieces
½ red onion
thinly sliced
Italian hot cherry pepper rings in brine
drained and chopped (preferably Cento brand)

Steps:

  • For the dressing, combine granulated garlic and onion, oregano, parsley, sugar and crushed red pepper in a Mason jar or plastic container, add vinegar, Dijon and EVOO, salt and pepper, shake to combine
  • Combine lettuce, marinated artichoke hearts, mushrooms, roasted pepper, salami, onion, cherry peppers
  • Toss the salad with dressing to serve

1-1/2 cups cubed fully cooked ham
1 jar (10 ounces) pimiento-stuffed olives, drained and sliced
1 can (3.8 ounces) sliced ripe olives, drained
1 package (3-1/2 ounces) sliced pepperoni, quartered
8 cups shredded lettuce
10 to 12 cherry tomatoes, quartered
1 cup Italian salad dressing
1-1/2 cups shredded part-skim mozzarella cheese

Steps:

  • In a large bowl, combine the ham, olives and pepperoni. On a platter or individual salad plates, arrange the lettuce, olive mixture and tomatoes. Drizzle with dressing; sprinkle with cheese.
