This easy carrot brownies recipe starts off with a box mix and requires simple ingredients. It's super fudgy and moist and packed with chocolate and shredded carrots.

2 Eggs (Large)
1/2 cup Oil
1/4 cup Water
1 cup Carrots (Shredded)
1 box Brownie mix (Any brand is fine)
1 tsp Cinnamon powder
1/2 cup Chocolate chips (Semisweet)

Steps:

  • In a mixing bowl, add eggs, oil, water, shredded carrots and mix everything together until smooth.
  • Add brownie mix powder, cinnamon powder, chocolate chips and mix until just combined. Don't over-mix! The mixture will be thick.
  • Pour the batter into a square pan (Dimensions: 9x9), lined with aluminum foil and sprayed with oil. Spread batter with a spatula.
  • Bake at 350 degrees for 30-35 minutes or until an inserted toothpick comes out with a few sticky crumbs.
  • Let it cool down. Then, cut slices and enjoy!

½ cup vegetable oil
1 cup (200g) granulated sugar
2 tablespoons packed brown sugar
2 large eggs
⅓ cup (28g) unsweetened cocoa powder
1 teaspoon vanilla
½ teaspoon salt
1 teaspoon cinnamon
¼ teaspoon ground ginger
½ cup (62g) all-purpose flour
½ cup (55g) shredded carrots ((heaping cup, don't pack them))
4 ounces cream cheese (, room temperature )
½ cup (57g) powdered sugar
1 teaspoon vanilla
1-2 tablespoons milk

Steps:

  • Preheat oven to 350°F. Line a 9x9" pan with foil and spray with cooking spray.
  • Stir together oil, sugars, and eggs. Stir in cocoa, vanilla, cinnamon, salt and ground ginger. Slowly stir in flour. Stir in grated carrots.
  • Pour into prepared pan and bake 25-28 minutes. Cool before frosting.
  • To make frosting: Mix cream cheese and powdered sugar with a hand mixer. Add vanilla then add 1 tablespoon milk and mix until smooth adding up to 1 more tablespoon milk for desired consistency (whether you want to frost them vs drizzle as I did).

I found this recipe on myrecipe.com and saw that it had the most and the highest rated reviews. I was glad I gave it a shot, the cake was the best carrot cake I've made. It was flavorful and moist. I threw raisins into the mix as well and used my Favorite Cream Cheese frosting recipe. Which I will put on a separate post.

1 1/2 cups all-purpose flour (about 6 3/4 ounces)
1 1/3 cups granulated sugar
1/2 cup sweetened flaked coconut
1/3 cup chopped pecans
2 teaspoons baking soda
1 teaspoon salt
2 teaspoons ground cinnamon
3 tablespoons canola oil
2 large eggs
2 cups grated carrots
1 1/2 cups canned crushed pineapple, drained

Steps:

  • Preheat oven to 350°.
  • To prepare cake, lightly spoon flour into dry measuring cups; level with a knife. Combine flour, sugar, coconut, pecans, baking soda, salt, and cinnamon in a large bowl; stir well with a whisk. Combine oil and eggs; stir well. Stir egg mixture, grated carrot, and pineapple into flour mixture. Spoon batter into a 13 x 9-inch baking pan coated with cooking spray. Bake at 350° for 35 minutes or until a wooden pick inserted in the center comes out clean. Cool completely on a wire rack.
  • To prepare frosting, combine butter and cream cheese in a large bowl. Beat with a mixer at medium speed until smooth. Beat in powdered sugar and vanilla just until smooth. Spread frosting over top of cake. Garnish each serving with grated carrot, if desired.

Steps:

  • Preheat the oven to 350°F (180°C).
  • For the brownie, in a bowl, mix butter, sugar, cocoa and eggs until creamy. Add flour, baking soda and mix well. Reserve.
  • Transfer batter to a greased and floured 9-inch (22 cm) bundt pan and spread evenly.
  • Bake for 25 minutes. Set aside.
  • For the carrot cake, in a blender mix carrots, oil, eggs, sugar until well combined. Add flour, baking powder and blend to combine and smooth.
  • Pour the carrot cake batter over the pre-baked brownie.
  • Bake for 45-50 minutes, or until a toothpick comes out clean. Set aside for 10 minutes to cool before turning out.
  • For the chocolate sauce, mix chocolate and cream in a small bowl and microwave on medium power for 1 minute and 30 seconds, stirring at each 30 seconds.
  • Pour the chocolate sauce over the cake.
  • Serve with more sauce.

185g unsalted butter
185g best dark chocolate
85g plain flour
40g cocoa powder
50g white chocolate
50g milk chocolate
3 large eggs
275g golden caster sugar

Steps:

  • Cut 185g unsalted butter into small cubes and tip into a medium bowl. Break 185g dark chocolate into small pieces and drop into the bowl.
  • Fill a small saucepan about a quarter full with hot water, then sit the bowl on top so it rests on the rim of the pan, not touching the water. Put over a low heat until the butter and chocolate have melted, stirring occasionally to mix them.
  • Remove the bowl from the pan. Alternatively, cover the bowl loosely with cling film and put in the microwave for 2 minutes on High. Leave the melted mixture to cool to room temperature.
  • While you wait for the chocolate to cool, position a shelf in the middle of your oven and turn the oven on to 180C/160C fan/gas 4.
  • Using a shallow 20cm square tin, cut out a square of non-stick baking parchment to line the base. Tip 85g plain flour and 40g cocoa powder into a sieve held over a medium bowl. Tap and shake the sieve so they run through together and you get rid of any lumps.
  • Chop 50g white chocolate and 50g milk chocolate into chunks on a board.
  • Break 3 large eggs into a large bowl and tip in 275g golden caster sugar. With an electric mixer on maximum speed, whisk the eggs and sugar. They will look thick and creamy, like a milk shake. This can take 3-8 minutes, depending on how powerful your mixer is. You'll know it's ready when the mixture becomes really pale and about double its original volume. Another check is to turn off the mixer, lift out the beaters and wiggle them from side to side. If the mixture that runs off the beaters leaves a trail on the surface of the mixture in the bowl for a second or two, you're there.
  • Pour the cooled chocolate mixture over the eggy mousse, then gently fold together with a rubber spatula. Plunge the spatula in at one side, take it underneath and bring it up the opposite side and in again at the middle. Continue going under and over in a figure of eight, moving the bowl round after each folding so you can get at it from all sides, until the two mixtures are one and the colour is a mottled dark brown. The idea is to marry them without knocking out the air, so be as gentle and slow as you like.
  • Hold the sieve over the bowl of eggy chocolate mixture and resift the cocoa and flour mixture, shaking the sieve from side to side, to cover the top evenly.
  • Gently fold in this powder using the same figure of eight action as before. The mixture will look dry and dusty at first, and a bit unpromising, but if you keep going very gently and patiently, it will end up looking gungy and fudgy. Stop just before you feel you should, as you don't want to overdo this mixing.
  • Finally, stir in the white and milk chocolate chunks until they're dotted throughout.
  • Pour the mixture into the prepared tin, scraping every bit out of the bowl with the spatula. Gently ease the mixture into the corners of the tin and paddle the spatula from side to side across the top to level it.
  • Put in the oven and set your timer for 25 mins. When the buzzer goes, open the oven, pull the shelf out a bit and gently shake the tin. If the brownie wobbles in the middle, it's not quite done, so slide it back in and bake for another 5 minutes until the top has a shiny, papery crust and the sides are just beginning to come away from the tin. Take out of the oven.
  • Leave the whole thing in the tin until completely cold, then, if you're using the brownie tin, lift up the protruding rim slightly and slide the uncut brownie out on its base. If you're using a normal tin, lift out the brownie with the foil. Cut into quarters, then cut each quarter into four squares and finally into triangles.
  • They'll keep in an airtight container for a good two weeks and in the freezer for up to a month.

Steps:
