LIGHT CARROT COCOA SNACK CAKE --(BROWNIES)
A very light, low calorie snack cake. I agree with the reviewers, not a browie at all, but that was the name on the recipe, so I stuck with it. Super easy, and a healthy way to get some carrots into a dessert!

Steps:
- Preheat oven to 350° and spray a 9 inch square pan with sprayable oil.
- Mix cocoa, flour and baking powder in a bowl.
- Mix in shredded carrots and sugar.
- In another small bowl, mix egg whites, milk, apple sauce and vanilla.
- Lightly beat with fork and add to dry ingredients.
- Mix just until blended.
- Pour batter into pan and bake for 20-25 minutes.
- Cool and cut into squares.

Steps:
- Set oven to 325 degrees.
- Set oven rack to second lowest position.
- Grease a 9-in square pan.
- For cake; combine first 8 ingredients.
- Beat on med speed 3 mins, scaping down sides of bowl.
- Stir in last 3 ingredients; mix well.
- Spread evenly in pan.
- Bake for 50-60 mins, or until cake tests done.
- Cool.
- FOR ICING; Cream the cream cheese with butter until fluffy.
- Add the icing sugar, beat until well mixed and smooth; about 1 minute.
- Add all remaining ingredients, beat until well mixed and fluffy.
- Spread over cooled cake.

CHOCOLATE CAKE BROWNIES
A rich cake-like brownie topped with a decadent frosting. You can substitute the whole milk in the frosting with whatever you have on hand; it just won't be as rich (but still delicious!). This recipe came down from my grandmother. It makes a 9 x 13" pan full of brownies!

- For the brownies, preheat oven to 350°F.
- Cream butter and sugar.
- Beat in eggs.
- Add chocolate, flour, and nuts.
- Pour into a 9" x 13" greased pan and bake for 30 minutes.
- While brownies are baking, prepare the frosting by boiling milk, sugar, and butter for 30 seconds.
- Remove from burner and add chocolate chips.
- Beat and spread on hot brownies.

- Preheat oven to 350°F Butter a 9 inch square pan.
- In a small bowl, combine flour, salt, baking powder, baking soda and spices; set aside.
- In a medium-sized saucepan, melt butter over low heat. Remove from heat and beat in sugar, then egg and vanilla. Stir in carrots and flour mixture thoroughly. Fold in pineapple, coconut, raisins and walnuts. Combine gently. Pour into pan.
- Bake 30 minutes or until golden and toothpick inserted in center comes out clean. Let cool completely in pan.
- Frost with Orange Cream Cheese Frosting and let set until firm.
- Mark into bars. Chill, then cut through bars with a sharp knife.
- Orange Cream Cheese Frosting:.
- Blend cream cheese with orange juice and vanilla.
- Gradually add powdered sugar, beating until creamy. Blen in orange rind.

- Melt butter in a large saucepan. Whisk in cocoa and oil until smooth. Cook and stir over low heat until cocoa is blender. Remove from the heat; stir in sugar. Add eggs, one at a time, stirring well after each addition. Stir in vanilla.
- Combine flour, baking powder and salt; add to cocoa mixture. Stir in chocolate chips and nuts. Spread into a greased 13 x 9 x 2 inch baking pan.
- Bake at 350 for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool. Dust with confectioners' sugar. Garnish with pecan halves if desired.

- Stir in carrot.
