4 medium tart apples, peeled and thinly sliced
1/4 cup sugar
1 tablespoon all-purpose flour
2 teaspoons lemon juice
1/4 teaspoon ground cinnamon
TOPPING:
2/3 cup old-fashioned oats
1/2 cup packed brown sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
3 tablespoons cold butter
Vanilla ice cream, optional

Steps:

  • Toss apples with sugar, flour, lemon juice and cinnamon. Transfer to a greased microwave-safe 9-in. deep-dish pie plate., Mix first four topping ingredients. Cut in butter until crumbly; sprinkle over filling. , Cover with waxed paper. Microwave on high until apples are tender, 5-7 minutes. If desired, serve with ice cream.

Haddock, cod, or tilapia would make good substitutes for the grouper but you can try it with any fish you like or have on hand. Adjust the baking time depending on the thickness of the fish.

1 1/2 lbs grouper or 1 1/2 lbs other white fish fillets
cooking spray
1 tablespoon fresh lime juice
1 tablespoon light mayonnaise
1/8 teaspoon onion powder
1/8 teaspoon black pepper
1/2 cup fresh breadcrumb
1 1/2 tablespoons butter or 1 1/2 tablespoons margarine, melted
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 425°.
  • Place fish in an 11 x 7-inch baking dish coated with cooking spray. Combine lime juice, mayonnaise, onion powder, and pepper in a small bowl, and spread over fish. Sprinkle with breadcrumbs; drizzle with butter. Bake at 425° for 20 minutes or until fish flakes easily when tested with a fork. Sprinkle with parsley.

4 cups thinly sliced peeled cooking apples (5 medium, granny smith are good)
1/3 cup sugar
1/4 teaspoon cinnamon
1/2 cup quick-cooking rolled oats
2 tablespoons sugar
2 tablespoons brown sugar
2 tablespoons flour
1/2 teaspoon cinnamon
2 tablespoons margarine or 2 tablespoons butter

Steps:

  • Heat oven to 350.
  • In a 1-qt. casserole, combine apples with 1/3 cup sugar and 1/4 tsp. cinnamon.
  • In a small bowl, combine all topping ingredients except margarine.
  • Cut in margarine until crumbly.
  • Sprinkle evenly over apples.
  • Bake covered at 350 for 30 minutes.
  • Uncover and bake 15-20 minutes or until apples are tender.
  • Serve warm or cold.
  • Refrigerate remaining dessert.

1/2 cup cold butter, cubed
Vanilla ice cream, optional

Steps:

  • Preheat oven to 375°. Place apples in a large bowl. Combine sugar and 1/2 teaspoon cinnamon; sprinkle over apples and toss to coat. Transfer to a greased 13x9-in. baking dish. ¼ teaspoon baking powder
¼ teaspoon baking soda

1/2 cup butter, softened
