UNBELIEVABLE FISH BATTER
In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

LIGHT BATTER (FOR FRIED FISH, ONION RINGS OR VEGGIES)
This makes a very light crispy and tasty all purpose batter for fried zucchini, shrimp or whatever. Makes enough for two lbs. of fish filets plus a bunch of veggies. You can use plain soda or lemon/lime flavor.

Steps:
- Mix baking soda, salt, pepper and flour.
- Add melted butter.
- Add egg and lemon juice.
- Add soda. (add more if batter seems too thick.) Batter will be lumpy, but lumps will cook out, so don't over mix.
- Dip fish or vegetables into dry flour first before dipping into batter. This will help batter stick.
- Fry veggies first in hot oil (350 degrees), then fish.
- Drain on paper towels and keep in warm oven while frying.
- Serve with tartar sauce.

- In a large bowl of cold water, soak the onions for 10 to 15 minutes. Let drain on paper towels.
- Meanwhile, in a large, deep pot or skillet, heat 2 inches of oil over medium-high heat until it registers 360F on a deep-fry thermometer.
- Fill a large bowl halfway with ice. In a separate, medium bowl, whisk the flour, cornstarch, baking powder, and salt. Add the 1 1/4 cups ice water and stir, just until a batter forms. (The batter will be thin, with small lumps and bubbles.) Place the batter bowl inside the bowl of ice to keep cold.
- Using tongs, coat the onion rings with the batter, letting the excess drip off. Working in batches, drop the rings into the oil and fry until light golden, 2 1/2 to 3 minutes. Using the tongs, transfer the rings to paper towels to drain; return the oil to 360F between batches.
- Serve with the ketchup and ranch dressing.

Steps:
- Stir together flour, cornstarch and salt.
- Make a well in the center.
- Combine ice water or beer and egg yolk, beating with a fork or whisk until frothy.
- Add all at once to dry ingredients.
- Slowly stir just until moistened; DO NOT over stir,a few lumps should remain.
- Fold in beaten egg whites.
- Use batter immediately.
- Heat oil or shortening to 400°F.
- Add 1 teaspoon salt.
- Dip fish, shrimp or vegetables into batter, swirling to coat.
- Fry a few pieces at a time 2 to 3 minutes or until golden brown.
- Drain on paper towels.
- Note: Make sure your vegetables are very very dry so the batter will stick better.
