This is my mother-in-law's recipe.She was always baking and this is one of my favorite recipes she had.

1 cup creamy peanut butter
1 cup packed brown sugar
1 cup white sugar
1 cup butter or 1 cup margarine, softened
2 eggs
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon vanilla extract
2 1/2 cups flour

Steps:

  • Cream butter, peanut butter and both sugars together.
  • Add eggs, one at a time, beating well.
  • Add baking soda, powder and vanilla.
  • Stir in flour.
  • Roll into balls, roll in sugar. Flatten cookies, using a fork, in a criss-cross pattern.
  • Bake on ungreased cookie sheet at 350 degrees for 6-7 minutes or adjust to suit your oven and size of cookies!

I never liked how peanut butter cookies turned out. They were always too greasy-feeling or too hard and never were soft a few days later. After a lot of trial and error batches, now I get rave reviews from these cookies. They are very rich and soft for those who do not like the typical crunchy style of peanut butter cookies. They do take a bit of time to prepare and cook but very much worth the wait. I used reduced-fat peanut butter in both crunchy and creamy to make for a rich-tasting cookie with more peanut flavor and a less greasy feeling on your hand.

1 ⅓ cups all-purpose flour
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter
½ cup reduced-fat creamy peanut butter (such as Jif®)
½ cup reduced-fat crunchy peanut butter (such as (Jif®)
1 egg white
⅓ cup white sugar
1 egg
⅓ cup brown sugar

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Sift flour, baking soda, and salt together in a bowl.
  • Beat butter, creamy peanut butter, and crunchy peanut butter together in a large bowl until smooth. Beat egg white and white sugar into butter mixture until smooth. Add whole egg and brown sugar; continue to beat until smooth. Gradually stir flour mixture into butter mixture until batter is well mixed.
  • Roll the dough into 1 1/4-inch balls and place 2 inches apart onto ungreased baking sheets. Press balls with a fork creating a crosshatch. Freeze cookie dough on baking sheet until dough is firm, 5 to 8 minutes.
  • Bake in the preheated oven until cookies puff up, about 15 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

These chewy peanut butter cookies are perfectly soft and chewy in the middles with slightly crisp edges. This quick and easy recipe only takes 20 minutes and you only need 9 ingredients!

½ cup butter (vegan or regular, softened)
½ cup creamy/smooth peanut butter (SEE NOTES)
¼ cup brown sugar
½ cup granulated sugar
1 egg
2 tsp vanilla extract
¾ tsp baking soda
½ tsp salt
1 cup + 3 tablespoons all-purpose flour (SEE NOTES)

Steps:

  • NOTE: This recipe has recently been tweaked for improvement! For the old recipe, please see "Notes" section below.Preheat oven to 350°F and line 2 baking sheets with parchment paper.
  • In a medium bowl, whisk together flour, salt, and baking soda then set aside.
  • In the bowl of a standing mixer with the paddle attachment or using a hand mixer, beat peanut butter and butter together until smooth.
  • Add in the granulated and brown sugars and beat until light and fluffy, then mix in the egg and vanilla extract.
  • Pour the dry ingredients into the bowl and mix until just combined. It is important not to over-mix the dough!
  • Use a cookie scoop or your hands to form 1.5 tbsp-sized balls of dough and bake one tray at a time for 8-13 minutes. The middles will look soft and the edges should look set, but not golden brown (if the edges are brown the cookies are already over-done!).
  • When removing the cookies from the oven, gently but firmly bang the pan on the edge of the counter a couple times if they look too puffy. Let the cookies cool on a baking sheet for 10 minutes then transfer to a cooling rack to cool completely.

1 ½ cups flour
1 teaspoon baking soda
¼ teaspoon salt
¾ cup creamy peanut butter
½ cup butter (room temperature)
¾ cup brown sugar
¼ cup granulated sugar ((plus 2 tablespoons for rolling))
1 large egg
1 ½ teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees and very lightly grease a baking sheet or line with a baking mat.
  • In a medium bowl whisk together flour, baking soda, and salt. Set aside.
  • In a large bowl cream together butter, peanut butter, brown sugar, and 1/4 cup granulated sugar for 2-3 minutes until light and fluffy. Mix in egg and vanilla until blended.
  • Add dry ingredients to wet ingredients and mix until combined (do not over mix). Roll dough into balls (two regular size cookie scoops or about 3 tablespoons, the balls should be fairly big - this is the key to a super soft texture!)
  • Roll cookie dough balls in remaining 2 tablespoons sugar, then place on baking sheet 2-3 inches apart. Use a fork to gently press a criss-cross pattern into each cookie dough ball, only pressing ball down about half way.
  • Bake for 8-9 minutes - DO NOT OVER BAKE. The cookies should just begin to crack on top. Allow to cool 1-2 minutes on baking sheet, then transfer to a cooling rack. Store in an airtight container at room temperature up to 5 days (they are softest on day 1 and 2!).

1 cup creamy peanut butter
1 cup packed dark brown sugar
½ cup granulated sugar, plus more for sprinkling
2 eggs
1 tablespoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
1 teaspoon salt

Steps:

  • Gather the ingredients.
  • Position two racks in the upper and lower third of the oven. Preheat the oven to 350 F. Line 2 baking sheets with parchment paper and spray the parchment with cooking spray.
  • Add the butter, peanut butter, brown sugar, and granulated sugar to the bowl of a stand mixer fitted with the paddle attachment. Cream the mixture on high speed until light and fluffy, scraping down the sides of the bowl occasionally, about 5 minutes.
  • Add the eggs one at a time and mix on medium-low to combine before adding the next. Add the vanilla and mix again until combined.
  • Add the flour, salt, baking soda, and baking powder and mix on low until the mixture is just combined, scraping down the bowl occasionally, about 1 minute. Be careful not to overmix.
  • Using a large cookie scoop, place mounds of dough on the prepared baking sheets at least 2 inches apart.
  • Sprinkle the cookie dough mounds with granulated sugar. Chill the baking sheets in the freezer until very firm, about 20 minutes.
  • Bake the chilled cookies until they begin to set on the edges, 12 to 14 minutes. Be careful not to overbake.
  • Let the cookies cool for a few minutes on the baking sheets before moving to a rack to finish cooling.
