GRANDMA'S WILTED LETTUCE WITH HOT BACON DRESSING

Grandma's Wilted Lettuce with Hot Bacon Dressing image

When my Grandma Hallie passed in 1984, I mourned MANY things about this wonderful woman. But it wasn't until the next spring, when leaf lettuce came up, that I realized I had never asked her how to make Wilted Lettuce. Over the next 30 years, I would try one recipe after another, but none of them were quite right until a lovely...

Categories     Salads

Time 45m

Number Of Ingredients 12

FOR HOT BACON DRESSING:
3 slice bacon
1/4 c sugar
1 Tbsp flour
1/2 tsp salt
dash black pepper
1/3 c apple cider vinegar
3 Tbsp water
FOR WILTED LETTUCE
large bowlful of leaf lettuce
some chopped onion
2 hardboiled eggs, optional

Steps:

  • 1. If you are making Wilted Lettuce, put the eggs on to cook, then wash the leaf lettuce carefully. I remove all hard parts, like the spine, of the leaves. Put the leaves in a salad spinner to remove the excess water, or allow the leaves to drain in a colander lined with paper towels. Chop some onion and set aside. When the eggs have cooked about 15 minutes in boiling water, drain the water, and refill the pan with cool water to allow the eggs to cool. Assemble the lettuce leaves and chopped onion in a large salad bowl. Chop the eggs and set aside. THEN prepare the Hot Bacon Dressing.
  • 2. Fry the diced bacon until crispy, then remove the bacon to a paper towel to drain. Reserve about 1 1/2 Tablespoons of bacon grease in the skillet and remove the rest.
  • 3. While the diced bacon is frying, stir together the sugar, flour, salt, and pepper in a small bowl.
  • 4. Add the sugar mixture to the 1 1/2 Tablespoons of hot bacon grease, cooking over medium heat and stirring.
  • 5. Add the vinegar and water and stir constantly, bringing it to a boil. Boil about 2 minutes, until slightly thickened. (If too thick, add a little water.)
  • 6. Remove from heat and cool until warm. Pour over lettuce & onion, tossing the salad until coated and wilted. (The hotter the dressing, the more it will wilt. Your call.) Top with the chopped hardboiled eggs and crispy diced bacon. Dinner is served! =^..^=

PA DUTCH HOT BACON DRESSING

PA Dutch Hot Bacon Dressing image

This was an old standby in our house when I was growing up in Pennsylvania Dutch Country. My mother would always make this for out-of-state visitors. It's a perfect example of the "sweet/sour" recipes that the PA Dutch are known for. This dressing can be used on iceberg lettuce or as a dressing to make German style potato...

Provided by Susan Bickta

Categories     Lettuce Salads

Time 50m

Number Of Ingredients 10

1 large head iceberg lettuce, torn into bite size pieces or
3-4 lb cooked, diced potatoes (if making potato salad)
1/2 lb bacon, cooked and crumbled
1 egg, beaten
2/3 c sugar
2 Tbsp flour
2/3 c water
2/3 c apple cider vinegar
1/4 tsp salt
1/4 tsp fresh ground black pepper

Steps:

  • 1. In a large serving bowl, tear lettuce into bite size pieces. Set aside.
  • 2. Cook the bacon in a 10-inch non-stick skillet. Remove bacon from skillet when cooked and set aside. Do not discard bacon fat. You will be using it to complete the cooked dressing.
  • 3. In a medium bowl, combine the egg, sugar, flour, water, vinegar, salt and pepper. Mix well and add to skillet with bacon fat. Cook, stirring constantly, for about 4-5 minutes or until dressing thickens and is hot and bubbly. Crumble bacon and add to skillet. Mix well.
  • 4. Pour hot dressing over lettuce and toss to coat.
  • 5. Please note: this dressing can be used to make German Potato Salad as well. Just substitute 3 pounds of cooked, diced potatoes for the lettuce. Add 1 stalk of celery, diced and 1 small onion, diced and you have another PA Dutch style salad!!
