SALAD WITH EGG DRESSING
Egg sparks the taste of this pleasantly sweet cooked dressing from Mary Bloom of Titusville, Pennsylvania. She serves it warm over greens tossed with bacon bits, tomato and more. "Besides lettuce, it's also good over fresh spinach or cabbage," she adds.

It's a salad that tastes like deviled eggs. My family loves it. This is a recipe for a large family, as I have 5 kids. Another experiment that really turned out great.

LETTUCE SALAD WITH EGG SALAD " DRESSING"
This meal sized salad has a BEAUTIFUL presentation. Egg and cottage cheese provide protein, while the lettuce and many vegetables create a light, yet filling, meal. The amounts of lettuce and vegetables is an estimate. Just use as much as you want. Also, use the vegetables you prefer.

- Carrot-Ginger Dressing. This classic Japanese dressing just requires 30 seconds in a blender before you can douse your greens (or rice, or fish, or chicken...)
- Balsamic Dressing. Here's the thing about balsamic dressings: many of them taste too harsh—the vinegar isn't balanced out enough by the other ingredients.
- Caesar Dressing. There's no way around it: You've got to use anchovies if you want to make a proper Caesar dressing. They provide that tangy, salty, rich flavor that makes a Caesar so good.

- Eggs: bring the water up to a boil, then lower it to a vivid simmer. Using a tablespoon gently lower the eggs to the pot, and then switch the timer: cook 7-8 minutes for a firmly set, but still soft, yolk.
- Salad: Wash the lettuce leaves, dry well, and chop or tear into pieces. Wash and cut the pepper in half vertically, remove the seed and slice it crosswise. Roughly chop the sun-dried tomatoes.
- Dressing: while the eggs are cooking make the dressing whisking the ingredients in a small jug or just put everything in a jam jar and shake. (The recipe calls only 1/4 tsp of salt, but you can adjust the seasoning later according to your taste).
- Place the vegetables in a large salad bowl, pour the dressing and toss to combine. Taste and make sure you're happy with the seasoning.

- Hard-boil, peel and slice eggs. Place 2 eggs in a sauce pan. Completely cover with water. Place on high heat and bring to a boil. Let them boil for 10 minutes. Remove eggs from sauce pan with a slotted spoon. Place in a bowl filled with ice and cool water and let them sit in the water for 5 minutes. Remove the eggs and wipe with a kitchen cloth. Peel the eggs and slice them into quarters.
- Rinse, spin and chop the lettuce. Cut off the core of the lettuce (the white part at the end) then discard. Carefully separate the lettuce leaves then thoroughly rinse them. Place in a salad spinner and spin until dry. (If you do not have a salad spinner, dry the leaves with a clean kitchen towel or good quality paper towel.) Stack a quarter of the lettuce leaves on a chopping board. Slice in the middle across the core then chop the leaves. (Please see step by step photos in the post to see what I mean.Arrange the lettuce leaves on a large platter.
- Arrange the salad. Arrange the other vegetables over the lettuce leaves: the cucumber, avocado, carrots, and red onions. Also add the hard-boiled eggs.Cover the salad with plastic wrap and place in the fridge until ready to serve!
- Make the dressing: Combine all the ingredients for the dressing in a small mixing bowl or a liquid measuring cup. Whisk well to combine. The dressing will thicken up.
